I hated this salad when I was growing up: It was pink, had too many ingredients in it, and my very Southern family loved it - three good reasons to abstain. During Thanksgiving and Christmas holidays, my mother would always go back for seconds, chiming, "You don't know what you're missing." But I knew, all right - an unappealing mishmash of canned fruit and mayonnaise. No thanks. However, as I've grown older my family's "Southern classics" don't embarrass me as much. I've actually eaten this salad many times as an adult, and though I'm not saying it's my favorite, sometimes I need seconds to be sure.

Yield Serves 8

Number Of Ingredients 10

2 small cans of mandarin oranges, drained
1 16-ounce can crushed pineapple, drained
1 small jar maraschino cherries, drained and chopped
1 cup chopped pecans
1 cup shredded coconut (optional)
3 cups miniature marshmallows
1 container of Cool Whip
1/3 cup of mayonnaise
1 large package cream cheese, softened
1/4 cup confectioner's sugar

Steps:

  • Combine Cool Whip, mayonnaise, cream cheese, and sugar in a large bowl. Beat until thoroughly blended. Stir in other ingredients. Chill at least two hours before serving. Serve on a bed of lettuce with tea biscuits (or some other salty cookie). Or pack in tupperware for a summer picnic.

I make this every year for Thanksgiving and everyone loves it! It is great either with dinner or after.

1 (20 ounce) can pineapple chunks, drained
2 (11 ounce) cans mandarin oranges, drained
1 (10 ounce) jar maraschino cherries, halved
1 (16 ounce) package miniature marshmallows
1 (16 ounce) container sour cream

Steps:

  • In a large bowl, combine the pineapple, oranges, cherries, marshmallows and sour cream together. Chill and serve.

MOM'S FROZEN FRUIT SALAD



Mom's Frozen Fruit Salad image

This fruit salad is a family favorite handed down to me by my mother, Marjorie V. Hutchinson.

Number Of Ingredients 10

1 (8 ounce) package cream cheese, softened
1 cup sour cream
¼ cup white sugar
¼ teaspoon salt
1 (8.5 ounce) can crushed pineapple
1 banana, diced
1 (16.5 ounce) can pitted dark sweet cherries, drained
1 (15 ounce) can mandarin oranges, drained
1 cup miniature marshmallows
cooking spray

Steps:

  • Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
  • Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
  • Add marshmallows to the cream cheese mixture; fold in the fruit mixture. Grease a fluted tube pan with cooking spray and turn the fruit salad out into the pan.
  • Cover and freeze salad for at least 8 hours. Unmold and let stand at room temperature at least 10 minutes before cutting.
