Refried Bean Grilled Cheese image

This tasty Refried Bean Grilled Cheese is an easy meal. It's made with refried beans and taco spices.

2 pieces gluten free bread (- I used Northern Bakehouse chia millet bread)
3 tablespoons refried bean mixture
1/4 cup shredded vegan cheddar
2 teaspoons vegan mayo ((for cooking the grilled cheese in))

Steps:

  • Spread refried bean mixture on one slice of bread. Top with shredded vegan cheddar. Top with other slice of bread.
  • Spread 1 teaspoon vegan mayo on the outside of one of the slices of bread. Place face down in a hot pan. While the grilled cheese is cooking over medium heat, spread the other teaspoon of vegan mayo on the other piece of bread (the side facing you). Cook until golden brown on both sides.

British Grilled Cheese With Baked Beans image

2 plum tomatoes, cut into thick slices
Kosher salt and freshly ground pepper
2 thick slices white sandwich bread, toasted
1/2 cup prepared baked beans, warmed and drained
1 teaspoon Worcestershire sauce
1 1/2 cups grated sharp white cheddar cheese (about 6 ounces)
2 scallions, chopped

Steps:

  • Preheat the broiler. Place the tomatoes on a baking sheet, season with salt and pepper and broil until the edges brown slightly, 5 to 10 minutes. Transfer the tomatoes to a plate.
  • Place the toasted bread on the baking sheet and spoon the beans evenly on top. Cover with the tomatoes and drizzle with the Worcestershire sauce, then sprinkle with the cheese and scallions. Broil until golden and bubbly, about 3 minutes.

4 bolillo rolls, sliced in half lengthwise
3 tablespoons butter, room temperature
1 (16 ounce) can refried beans, heated
1 (7 ounce) package BordenĀ® Southwestern Cheddar & Monterey Jack Shredded Cheese
Mexican salsa or pico de gallo, for serving

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
  • Remove some of the bread from the middle of bread halves to accommodate more toppings. Spread about 1 teaspoon butter on each half.
  • Spread 2 to 3 tablespoons warmed refried beans on bread. Sprinkle about 1/4 cup BordenĀ® Cheddar and Monterey Jack shredded cheese on the beans. Place bread halves on prepared baking sheet.
  • Bake in preheated oven until the cheese is melted and bubbly and the bread is crispy, 15 to 20 minutes.
  • Top molletes with Mexican salsa or pico de gallo.
