"This cranberry butter is wonderful on warm bread or biscuits," recommends Corky Huffsmith of Indio, California. "Be sure to use real butter and margarine-the low-fat products have a higher water content that doesn't give the same results."

3/4 cup butter, softened
2 tablespoons brown sugar
2 tablespoons honey
1 cup chopped fresh cranberries
2 tablespoons chopped walnuts, toasted

Steps:

  • In a small bowl, beat the butter, brown sugar and honey until fluffy, about 5 minutes. Add cranberries and walnuts; beat 5 minutes longer or until butter turns pink., Transfer to a sheet of plastic wrap; roll into a log. Refrigerate until chilled. Unwrap and slice or place on a butter dish.

3/4 cup milk
1/4 cup water
1/4 cup light corn syrup
2 tablespoons vegetable oil
2 1/3 cups bread flour
1 cup All-Bran® Original
2 teaspoons grated orange peel
3/4 teaspoon salt
1 1/2 teaspoons dry yeast
3/4 cup dried cranberries
1/2 cup chopped walnuts
(optional)

Steps:

  • Add all bread ingredients to bread machine according to manufacturer's directions*. Select basic white bread cycle. Serve with Spiced Orange Butter, if desired.*NOTE: Dried fruits and nuts should be added to your bread machine at the raisin bread cycle, if your machine has one. If not, add them according to the manufacturer's directions or 15 minutes into the kneading cycle.

3 tablespoons butter, softened
1 cup sugar
1/2 cup water
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/2 cup evaporated milk
1 package (12 ounces) fresh or frozen cranberries
1 cup chopped walnuts
SAUCE:
2 cups sugar
1 cup butter, cubed
1/4 cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375°. Grease a 13x9-in. baking pan., In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Gradually beat in water. In another bowl, whisk flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. Fold in cranberries and walnuts (batter will be thick)., Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack., Meanwhile, in a small saucepan, combine sauce ingredients; bring to a boil over medium heat, stirring constantly to dissolve sugar. Serve cake with warm sauce.

4 sweet potatoes
1/4 cup chopped onions
1 tbs. butter
1 cup cranberries
1/3 cup maple syrup
1/4 cup water
1/4 cup cranberry juice
salt
1/2 cup chopped walnuts, toasted
1 tsp. dijon mustard
pepper
2 tbs. minced chives

Steps:

  • scrub and pierce potatoes, bake at 400F for 1 Hr. or until done. in saucepan, saute onion in butter until tender. Addcranberries, syrup, water, cranbeerry juice, and some salt. Bring to a boil. reduce heat, cover and simmer for 10 or 15 minutes or until berries pop, stirring occasionally. stir in walnuts and mustard and heat through. cut potatoes in half long way sprinkle with pepper and some salt, top with mixture and chives.
