Cheese and Bacon Mini Arepas with Mayo and Cilantro Dressing image

Mini arepas made with mozzarella cheese and bacon make excellent appetizers. Serve with this creamy mayo-cilantro dressing-and prepare for compliments.

Mayo & Cilantro Dressing
1 cup pre-cooked white cornmeal (arepa flour)
1-1/4 cup water
1/4 teaspoon salt
3 tablespoons KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
3 tablespoons OSCAR MAYER Real Bacon Bits
corn oil for frying
5 tablespoons KRAFT Real Mayo
3 tablespoons KRAFT Classic Ranch Dressing
A handful of fresh cilantro
1 tablespoon vinegar
season as desired with salt and pepper

Steps:

  • Mix cornmeal and salt with the water, knead until there's no lumps and the mixture's consistency is soft and uniform.
  • Add the cheese along with the bacon bits. Keep mixing and then start making and flattening the arepitas with the palms of your hands. Ideal size is 2-3 cm (diameter) and 1 cm thick. Place them in a cookie sheet or tray.
  • Put enough oil in a deep frying pan and when it is hot, start adding the arepitas, little by little, so that all are submerged in the oil. Fry them until they look golden, approximately for 8 minutes.
  • Tip: Don't forget to place them on paper towels to drain them of the oil excess.
  • Mayo & Cilantro Dressing
  • Blend all ingredients in a food processor or blender until a creamy green sauce forms. Serve in a deep dish to accompany the arepitas.
