Traditional Maid-Rites from Marshalltown Iowa were served with only yellow mustard, pickle and onion. Ketchup was taken off the counters because the 'hobos' would take the ketchup to make tomato soup back when the restaurant first started. (A history lesson, who knew.) Here's the copycat version of maid-rites.

1 lb ground beef (at least 15% fat) or 1 lb ground chuck (at least 15% fat)
1 cup water
1/4 cup beef broth
1/4 teaspoon salt
4 plain hamburger buns
yellow mustard
onion, minced
dill pickle, sliced

Steps:

  • Brown beef; use potato masher to help get beef into small pieces.
  • Drain excess fat as soon as pink is gone.
  • Add 1 cup water and 1/4 cup beef broth.
  • Simmer the meat uncovered for 1 hour or until liquid is gone, stirring every 10 minutes or so.
  • When liquid is gone, put meat on a bun and top with mustard, onion and dill pickle.
  • Enjoy.

This is a very lean, tasty, juicy, loose meat sandwich filling. Made famous in the Mid American States.

4 Tbsp dried chopped onions
6 Tbsp water
2 lb lean ground chuck
2 c chicken broth (i use swanson's)
1/2 tsp salt (less if broth is salted)
1/2 tsp pepper
hamburger buns/hot dog buns for children (less messy)
mustard, to taste
2 chopped fresh onion
1 envelope of dry onion soup mix

Steps:

  • 1. Soak the dried onions in the water.
  • 2. Crumble ground beef into a hot skillet and cook over medium high heat with 1/2 of your fresh chopped onion.
  • 3. When the soaked onions have begun to soften and expand, add it and any remaining water (if any) to the beef.
  • 4. Stir frequently as the meat browns, using a wooden spoon to break the meat into small crumbles.
  • 5. When the meat has browned, drain off fat add the chicken broth, small squirt of mustard, salt and pepper and dry onion soup mix
  • 6. Cook until liquid is ALMOST gone, about 10 minutes
  • 7. Serve meat on buns with mustard, fresh chopped onions, mustard and dill pickle.
  • 8. Enjoy!

2 pounds ground beef
1 chopped onion
¾ cup ketchup
2 tablespoons brown sugar
2 tablespoons distilled white vinegar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
½ teaspoon salt
16 hamburger buns, warmed

Steps:

  • Heat a large skillet over medium-high heat and stir in the ground beef and onion. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, and salt. Bring to a simmer, then reduce heat to medium-low, cover, and simmer 20 minutes longer. Serve on warmed buns.

I can't believe that out of almost 40,000 recipes, no-one has posted a recipe for this! These are Iowa's claim to fame, sort of like a cousin to the Sloppy Joe.

1 garlic clove, minced
2 tablespoons vegetable oil
1 medium onion, chopped
1 lb ground chuck
1/2 cup tomato juice
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce
2 teaspoons seasoning salt
1/2 teaspoon Kitchen Bouquet
1/8 teaspoon cayenne pepper

Steps:

  • In a large skillet over medium heat, sauté garlic in oil until it begins to brown.
  • Add onion and sauté until soft.
  • Add meat, stirring constantly with a fork to crumble as finely as possible.
  • When meat is brown, add all remaining ingredients and simmer, uncovered, stirring occasionally until the liquid cooks out (about 15-20 minutes).
  • Spoon onto hamburger buns.

This is a very TASTY, JUICY, LOOSE MEAT sandwich filling. In reading thru this recipe you will notice the use of both fresh and dried onion.....please use the onion type specified in the recipe step you are on for maximum flavor. Although traditionally served on hamburger buns, this filling can be messy for young children trying to keep filling in. Try using hotdog rolls for the youngsters. Mustard & Onions are the seasonings of choice for this recipe. Added 11/12/2008 Maid Rite sandwiches are made across the country. One would think as a franchise all would be made and served the same way. This is not the case.... we have Maid Rites being served that are boiled or steamed, with water, chicken broth, beef broth, coke, or beer. There are those that add vinegar or sugar to the mix. Some top with mustard, onions, ketsup, and pickles......well, move over McDonalds! This is the way I made my Maid Rite sandwiches....faux or real....the name stands. As they say,,,variety is the spice of life. You can make changes to suite your tastes, share your changes here with me, I will try them all...unless we have some bazarre ingredients. Chocolate syrup will not intice me no matter how much I love chocolate.

1 lb ground beef
1 cup hot water
2 tablespoons sugar
1/2 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon Lawry's Seasoned Salt

Steps:

  • Mix Hot water, sugar, white pepper, black pepper, Lawreys and stir until sugar is disolved. Set aside.
  • Brown beef in the smallest pot that the meat will fit in (not a frying pan) and chop the meat constantly with a spatula.
  • Once meat is mostly browned, pour off the grease, return meat to pot, dump the sugar water into the meat and continue to chop the meat until the water is mostly evaporated.
  • Once almost all of the water is gone, turn heat to low and cover. Let simmer for 10mins.
  • Serve on steamed hamburger bun with mustard, pickle, chopped onion, and a slice of american cheese.

I was born and raised in Marshallton Iowa. And there is noting like a Taylors Maid-Rite. You are not going to get any closer to the TRUE recipe than this. Since the original owners have changed, so has the recipe. The Creator of the maid-rite was a butcher, so you know he is not going to use JUST HAMBURGER. The meat has to be ground FINELY. small little morsels. You DO NOT use ketchup on these sandwiches. It changes the flavor of the meat. You leave yourself out of the true taste if you do. Give this a try, You will not regret it. :)

1 (3 -5 lb) chuck roast
mustard
1 small onion
2 -3 pickles, per sandwich
1 (4 count) package hamburger buns

  • go to the meat department, pick a nice looking Chuck Roast. 3-4 lbs.
  • Go to the butcher, ask him/her to grind it FINE.
  • In a Cast iron skillet scramble up the Chuck Roast. (MUST BE A CAST IRON PAN, a regualr pan makes the meat taste boiled and loses it's flavor).
  • While the meat is cooking, chop up some onion.
  • MUSTARD ONION AND PICKLE ON THE BUN LIKE A BURGER.
  • Please Please do NOT use ketchup it changes the flavor of the meat some how.So if you want an awesome burger do NOT USE ketchup.

This is my version of the Maid-Rite Restaurant's loose meat sandwiches. I searched the internet for various versions of this recipe, I ended up combining the ideas that I found and I put this recipe together. I hope that you agree that this recipe is better than the original Maid-Rite loose meat sandwiches and that you will enjoy these sandwiches.

1 lb 85% lean ground beef
1/2 cup white onion, minced
1/2 tablespoon garlic powder
1 cup chicken broth
1/3 cup Coca-Cola
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 tablespoon spicy brown mustard
1 tablespoon prepared yellow mustard
1/4 cup dill pickle, thinly sliced
4 cheese slices (optional)
4 hamburger buns

Steps:

  • Heat a cast iron skillet over medium-low heat. Add the ground beef and the minced onions, sprinkle with garlic powder and sauté for a couple of minutes. Flip the meat mixture in the skillet and sprinkle again with more garlic powder. Break up the meat as much as you can with a spatula. Soon as the meat has lost most of its pinkness - remove from the burner.
  • In a 4 cup measuring cup, mix together the broth, Coca-Cola, vinegar, Worcestershire sauce and the brown mustard. Stir this mixture into the skillet and return the skillet to the burner. Bring to a boil, stirring often to break up the meat. Soon as the meat mixture reaches a boil, lower the heat to a simmer and continue cooking over low heat till the liquid has been absorbed, about 45 - 60 minutes. It is very important to slowly simmer the meat till all of the liquid is absorbed thus imparting all of the flavors into the meat.
  • Split the hamburger buns or sandwich rolls, smear some yellow mustard on the inside of the upper buns. Spread a couple of thin pickle slices on the lower half of the buns. Spoon equal amount of the meat mixture over the lower bun halves, top with an optional slice of cheese then place the bun top on top.

2 (15 ounce) cans low sodium chicken broth
1 large onion, diced

Steps:

  • Cook hamburger and onion together until meat is browned.
  • Drain grease.
  • Put meat onion mix in a good size saucepan.
  • Add both cans of chicken broth and a few shakes of pepper to pan.
  • Bring to a boil.
  • Turn down to medium low, stirring every 5 minutes until liquid is gone.
  • This usually takes 20-30 minutes.
  • Serve on soft hamburger buns with yellow mustard and pickle slices.
  • Note: You can also add a couple shakes of chicken bouillon powder to the pot while cooking if you like.

3 Tbsp Worcestershire sauce (Lea and Perrins)
3 Tbsp soy sauce
1/2 tsp sweet paprika
1/2 tsp salt
1/4 tsp black pepper
6 oz (1/2 of 12 oz. can) Coca-Cola
1/4 cup apple cider vinegar
1 cup Swanson's Chicken Broth
3 lb 85% lean ground beef
Hamburger buns
2 small yellow or white sweet onions, finely diced
Yellow mustard
Dill pickle slices

Steps:

  • In a crock-pot on medium, put in Worcestershire and soy sauce and cook for about 5 min.
  • Add paprika, salt and black pepper, Coke, apple cider vinegar and chicken broth. Let simmer about 10 min.
  • Add hamburger stir until all the pink in the beef is browned...will look like a sloppy-joe mixture. Lower heat to low, put the top of crock-pot on, leave vent open if it has one. Cook overnight.
  • Serve using a slotted spoon on hamburger bun with chopped onion, yellow mustard and dill pickle slices. Ketchup is optional.

10 3/4 ounces Campbell's chicken gumbo soup
1 small onion, diced
1 teaspoon brown sugar
1 teaspoon dry mustard (or 1/2 tsp. bottled mustard)
1 teaspoon flour
1/2 cup catsup
8 hamburger buns

Steps:

  • 1 Brown and drain hamburger. Add diced onions and saute until they are translucent. Add remaining ingredients. Simmer a couple of minutes. Serve loosely on buns. Top with mustard, catsup, onions, dill pickles or your own favorite topping!

1 (1 ounce) envelope dry onion soup mix
1 1/2 (10.5 ounce) cans condensed French onion soup
16 hamburger buns, split

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned, crumbling even more as it cooks. Drain off the grease. Stir in the onion soup mix and French onion soup. Cover, and simmer over low heat for about 2 hours, or you may transfer to a slow cooker for this part. Spoon over the buns like a sloppy joe.
