SPINACH-FETA PIZZA SLAB PIE

Spinach-Feta Pizza Slab Pie image

Made from store-bought pizza dough, this savory pie filled with fresh spinach, mozzarella, and feta is a cinch to put together.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 1h5m

Number Of Ingredients 10

2 bunches spinach (1 pound, 6 ounces), tough stems trimmed, washed, with water still clinging to leaves
Extra-virgin olive oil, for brushing
Unbleached all-purpose flour, for dusting
1 pound store-bought pizza dough, divided in half
8 ounces low-moisture mozzarella, such as Polly-O, thinly sliced
2 ounces feta, crumbled (1/3 cup)
Kosher salt
Pinch of red-pepper flakes
1 large egg, beaten
1 tablespoon sesame seeds

Steps:

  • Place spinach in a large pot over high heat; cover. Steam until just collapsed, about 3 minutes; transfer to a colander. When cool enough to handle, squeeze out excess water; roughly chop.
  • Preheat oven to 425 degrees, with a rack in lower third. Brush a 9 1/2-by-13-inch rimmed baking sheet with oil. On a lightly floured work surface, roll out and stretch one piece of dough into a thin 10-by-13-inch rectangle. (If dough is springing back, let stand 5 minutes.) Transfer to prepared baking sheet. Arrange mozzarella over dough, leaving a 1-inch border. Top with spinach and sprinkle with feta. Season with salt and red-pepper flakes. Roll out and stretch remaining portion of dough into a 10-by-14-inch rectangle. Drape over filling. Pinch edges to seal; slash a few vents in top. Brush with egg wash; sprinkle with sesame seeds.
  • Bake until golden brown all over and filling is bubbling through vents, 40 to 45 minutes. (Check color of bottom crust by lifting corner with a spatula.) Immediately slide pie off sheet onto a wire rack. Let cool completely. Before serving, cut into squares.

FETA, SPINACH AND CHICKEN SAUSAGE PIZZA

Feta, Spinach and Chicken Sausage Pizza image

I found spinach, garlic, and feta chicken sausage at the store and thought it would be great on a pizza. I also had canned san marzano tomatoes so I decided to make my own marinara. You can substitute pre-made marinara to make it even easy. I also used whole wheat crust to make it healthier.

Provided by Ewalla

Categories     Chicken

Time 40m

Yield 1 pizza

Number Of Ingredients 13

6 links chicken sausage
3 -4 tablespoons balsamic vinegar
1/2 cup chicken stock
2 tablespoons extra virgin olive oil
1 (28 ounce) can san marzano tomatoes
oregano
2 garlic cloves, minced
salt and pepper
1 teaspoon tomato paste (optional)
1 (8 ounce) package frozen spinach, defrosted
1/4-1/2 cup crumbled feta
4 slices provolone cheese
1 store-bought whole wheat pizza crust

Steps:

  • Preheat oven to 400 degrees.
  • Poke a few holes in the sausage and place in a medium sauce pan over medium high heat and come about half way up the sausage with the EVOO, balsamic, and chicken stock. Occasionally turn the sausages and cook until the liquid has reduced into a glaze. Slice the sausage and return the to pan to coat in the glaze.
  • Meanwhile, sautee garlic in a little EVOO on medium low heat for about 1 minute. Make sure it doesn't turn brown. Add tomatoes, oregano, salt, and pepper to taste. You may need to add about a 1 tsp of tomato paste if the sauce is too thin. Let the sauce simmer until ready to use.
  • Drizzle a little EVOO on the crust then spread the mariana. Top with chicken sausage, spinach, feta, and provolone. Bake about 10-12 minutes until the cheese is melted.

SPINACH FETA TOMATO PIZZA

This was a result of craving pizza but not having the 'traditional' ingredients on hand. I'd like to think this is a bit healthier than most pizzas. I listed the avocado as optional because some people can't imagine that on pizza, but it's really good.

THIN CRUST SPINACH AND FETA WHOLE WHEAT PIZZA

THIN CRUST SPINACH AND FETA WHOLE WHEAT PIZZA image

Categories     Leafy Green     Bake     Vegetarian     High Fiber

Yield Makes 3-4 servings, can be doubled for two pizzas

Number Of Ingredients 18

CRUST
1 1/2 c. stoneground whole wheat flour
2/3 c. oat bran
1 T. active dry yeast
2 t. kosher salt
1 1/2 T. olive oil
1 T. molasses
about 1 c. warm water
TOPPING
4 oz. baby spinach (about 4 cups loosely packed)
3-4 ripe tomatoes, seeded and diced
2 cloves garlic, minced
1 T. olive oil
3 oz. crumbled feta cheese
2 T. grated romano cheese
2 T. chopped kalamata olives
1/4 t. freshly ground pepper
pinch freshly grated nutmeg (optional)

Steps:

  • Prepare dough: Mix molasses and yeast into warm water (110-120°) and rest for 10 minutes to proof (alternately- skip this step and mix all ingredients together at once). Put dry ingredients in bowl of stand mixer and add and mix in wet ingredients with paddle attachment until combined. Change to dough hook and knead for 10 minutes on low to medium speed. (Alternately, mix all ingredients with spoon in large bowl, then knead by hand for 10 minutes). Let dough rest until doubled, about 45 minutes. While dough is rising, preheat oven to 475° with pizza stone on lowest rack position possible. Topping (mix and lest rest while dough is rising) Roughly chop spinach and add to large mixing bowl. Add remaining ingredients and mix well. Let rest and "marinate" while dough is rising. Pizza: Flour your counter surface, pull out dough onto surface and press into shape to match your pizza stone (round or rectangular) until dough is about 1/8 - 1/4" thick (do not punch down dough). Use fingertips to press out dough, keeping air bubbles in dough for a light crust. Sprinkle cornmeal or flour on pizza peel (or rimless baking sheet) and place dough on peel. Brush 2 t. olive oil on dough (optional). Bake in oven for about 3-4 minutes until partially cooked. Remove from oven and spread topping on dough, getting close to edges. Place back in oven and finish cooking (about 7-10 minutes). Remove from oven and let cool slightly on a rack (to keep crust from getting soggy). Cut into desired slices and enjoy!

SHRIMP, FETA AND SPINACH PIZZA RECIPE - (4.5/5)

Shrimp, Feta and Spinach Pizza Recipe - (4.5/5) image

Provided by á-32699

Number Of Ingredients 11

For the Pizza Sauce:
1 pizza crust ( I used Boboli's)
1 lb frozen shrimp, thawed, shelled and chopped
1/2 bag of fresh baby spinach
1/2 cup Feta cheese, crumbled
1/2 cup shredded Mozarella cheese
1/4 cup of diced onion
1 5.3 oz container of plain Oikos Greek yogurt
2 TB mayo
1 tsp Sriracha or hot pepper sauce
2 tsp Old Bay seasonings

Steps:

  • Procedure for the Sauce: In a small bowl, combine the yogurt, mayo, Sriracha, and Old Bay and set aside. For the Pizza Assembly: 1. Preheat oven according to pizza crust directions to pre-bake ( I did 450 and used this throughout the baking process). I pre-baked the crust for about 4 minutes. 2. In a small bowl, combine the above pizza sauce ingredients and stir until smooth. 3. Saute shrimp in skillet with about 2 TB olive oil and diced onion for about 2-3 minutes on medium heat until shrimp have just turned pink. You don't want to cook the shrimp too much since they will be going in the oven for a few extra minutes. Set the shrimp and onion mixture aside. 4. When crust has been pre-baked, spread the pizza sauce over crust. Top the sauce with sauteed shrimp, onions and spinach leaves. 4. Top the shrimp and spinach with Feta and Mozarella and bake at 450 for about 8-10 minutes, or until pizza is hot and cheese is melted.
