Salmon and Couscous Salad With Cucumber-Feta Dressing image

The dressing in this 30-minute recipe is inspired by green goddess dressing and mast-o khiar, a Persian side dish of cucumbers and yogurt. Here, thick yogurt is combined with fresh herbs, tangy feta and crunchy Persian cucumbers. If you have trouble finding Persian cucumbers, they can be swapped for similarly sweet-skinned English cucumbers or peeled regular cucumbers. Flaking the salmon into the salad evenly distributes it and is a nice alternative to serving a fillet for dinner. Leftover salad can be enjoyed cold for lunch the next day, freshened up with a squeeze of lime juice and more fresh herbs.

3 (6-ounce) skin-on (or skinless) salmon fillets
2 tablespoons olive oil, plus more for drizzling
Kosher salt and black pepper
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
2 limes, 1 halved and 1 zested and juiced
1 1/2 cups pearl couscous
1 1/2 cups baby arugula
1 cup thick, full-fat yogurt, such as Greek, Skyr or labneh
1/2 cup crumbled feta
1/4 packed cup fresh flat-leaf parsley, cilantro or dill leaves and tender stems, roughly chopped
1/4 packed cup fresh mint leaves and tender stems, roughly chopped
1 Persian cucumber, diced into 1/2-inch pieces (about 3/4 cup)
2 scallions, light green and white parts sliced

Steps:

  • Heat the oven to 400 degrees. In the center of a sheet pan, place salmon skin-side down. Pat the salmon dry, then coat with 2 tablespoons olive oil. Season with salt, pepper, 1/2 teaspoon cumin and 1/2 teaspoon turmeric. Coat 1 of the lime halves in some of the olive oil in the pan, then place cut-side up in the corner.
  • Roast the salmon on the center rack until opaque on the outside and light pink in the center, about 18 minutes. Remove from the oven and let cool slightly.
  • While the salmon roasts, make the couscous: In a lidded pot over medium-high heat, toast the couscous, uncovered, stirring until fragrant, about 3 to 4 minutes. Add 3 cups water, season with salt, cover and bring to a boil. Reduce heat to maintain an active simmer, then cook until the couscous is tender and most of the liquid has been absorbed, 8 to 10 minutes. Drain the couscous in a colander, then drizzle with olive oil, tossing to coat. Stir in the arugula, letting it wilt. Leave in the sink to cool slightly while you make the dressing.
  • Prepare the dressing: In a serving bowl, combine the yogurt with 1/4 cup room temperature water and the zest and juice of 1 lime, then whisk until smooth. Add the remaining 1/2 teaspoon cumin, plus 1/4 cup feta, most of the herbs (reserving some for garnish) and the cucumber. Stir to combine, then season to taste with salt. Set aside.
  • Add the cooked couscous and arugula to the yogurt mixture, tossing to combine. Remove the salmon from the skin, then flake with a fork. Add half the salmon to the couscous, mixing it together. Place the remaining salmon on top, squeeze the roasted lime half over the dish, then garnish with the scallions, remaining feta, parsley and mint. Quarter the remaining lime half and serve it on the side.

I created this Mediterranean salad to pair with a white-blend wine from South Africa. The saltiness of the feta and the freshness of the mint and vegetables made a perfect accompaniment to the citrus and herb notes of the wine. I cut up and dressed the vegetables the night before and then the morning that I was serving the salad, I cooked up the couscous following the directions on the package then tossed it with the vegetables and feta.

1 cup water

1/2 cup water
1/3 cup uncooked whole-wheat couscous (may substitute quick-cooking couscous; see headnote)
3 scallions
1/4 cup crumbled feta cheese
3 tablespoons egg substitute (may substitute 1 large egg)
1/8 to 1/4 teaspoon freshly ground black pepper
2 teaspoons olive oil
For the salad
2 Campari or small, vine-ripened tomatoes (about 5 ounces total)
6 pitted kalamata olives
Leaves from 6 stems flat-leaf parsley
2 teaspoons red wine vinegar
1 teaspoon olive oil
1/8 to 1/4 teaspoon freshly ground black pepper
3 cups herb salad or baby mixed greens

Steps:

  • For the cakes: Bring the water to a boil in a small saucepan over high heat. Stir in the couscous; cover and remove from the heat. Let sit for 5 minutes, then uncover and fluff with a fork. Meanwhile, finely chop the white and light-green parts of the scallions. Stir into the couscous, along with the cheese, egg substitute and pepper (to taste), until well incorporated. The mixture should be moist and a bit loose. Grease a large nonstick skillet with nonstick cooking oil spray; place the skillet over medium-high heat. Add the 2 teaspoons of oil and swirl to coat the bottom of the skillet. Divide the couscous mixture into 4 equal portions; they won't hold together well, but they will firm up as they cook. 300g pack giant couscous (available from Merchant Gourmet)
5 oranges , 3 zested
zest and juice 1 lemon
3 tbsp olive oil
3 tbsp harissa
2 tsp ground cinnamon
2 tsp ground coriander
2 small red onions , halved and thinly sliced
2 x 200g packs feta cheese , crumbled into chunky pieces
small bunch mint , leaves picked and chopped
small bunch coriander , chopped
100g bag baby spinach

Steps:

  • Bring a large pan of salted water to the boil. Add the couscous and cook following pack instructions. Meanwhile, cut the peel off the oranges with a small fruit knife, then cut into segments - catching any juice in a large bowl. Set the orange segments to one side.
  • When the couscous is cooked, drain, then add to the bowl with the orange juice. Add the orange zest and lemon zest and juice, olive oil, harissa, spices, and some seasoning. Leave to cool, stirring every now and then to prevent it from sticking together. Can now be chilled for up to 24 hrs.
  • Once cooled, add the remaining ingredients, including the orange segments, to the couscous. Gently toss everything together, being careful not to break up the orange too much. Serve at room temperature. Any leftovers can be kept in the fridge for up to 2 days.

1 14-oz. can artichoke bottoms, drained, rinsed, and sliced
15 cherry tomatoes, halved

1 oz. crumbled feta (about 1/4 cup)

Steps:

  • Make the dressing: In a small bowl, combine the lemon juice, sour cream, and mint. Slowly whisk in the olive oil. Season to taste with salt and pepper. Make the couscous cakes: Put the couscous and 1 tsp. salt in a medium bowl. Add 1 cup boiling water to the couscous, cover the bowl with a pan lid or plate, and let sit for 4 to 5 minutes. Coarsely chop the garlic in a food processor. Add the parsley and pulse until finely chopped. Add the chickpeas and 1 tsp. salt and pulse until coarsely chopped. Uncover the couscous and fluff with a fork. Stir in the chickpea mixture, eggs, and lemon zest until well combined. Press the couscous mixture into a 1/4-cup measure, smooth the top, and invert the measuring cup to release the cake onto a plate. Repeat with the remaining couscous mixture to make 9 cakes. Heat 1-1/2 Tbs. of the vegetable oil in a large skillet over medium heat until shimmering hot. Add 5 of the couscous cakes to the skillet and use a spatula to lightly flatten the cakes so they’re about 3/4 inch thick. Cook, flipping once, until crisp and golden brown on both sides, 2 to 3 minutes per side. Transfer to a paper-towel-lined plate. Add the remaining 1-1/2 Tbs. vegetable oil to the skillet and cook the remaining cakes the same way. Assemble the salad: In a large bowl, toss the spinach, artichokes, and tomatoes with about three-quarters of the dressing. Season to taste with

1 cup dry couscous
1/2 cup golden raisins
2 1/2 tablespoons freshly squeezed lemon juice, more to taste
1/2 teaspoon ground cumin
1 fat garlic clove, finely chopped
1 teaspoon kosher salt, more to taste
1/2 teaspoon black pepper
6 tablespoons extra virgin olive oil
1/2 pound cooked lamb, sliced into thin strips
1 15-ounce can chickpeas, drained
1 cup cherry tomatoes, quartered
1/4 pound feta cheese, crumbled into large chunks
3 tablespoons chopped fresh mint
3 scallions, finely chopped

Steps:

  • Combine the couscous and raisins in a large bowl. Pour 1 1/4 cups boiling water over the mixture. Cover and let stand 5 minutes; fluff with a fork.
  • In a bowl, whisk together the lemon juice, cumin, garlic, salt and pepper. Whisk in the olive oil.
  • Add the lamb, chickpeas, tomatoes, feta, mint and scallions to the bowl of couscous. Pour the dressing over the mixture and toss well. Taste and add more lemon juice and salt if necessary.

Israeli Pearl Couscous Salad with Feta and Mint image

1 cup pearl Israeli couscous
1 lemon - zested
3 tablespoons freshly squeezed lemon juice
2 teaspoons dijon mustard
1 teaspoon smoked paprika
3/4 teaspoon salt
1/4 teaspoon black pepper
1 cucumber, sliced
1 pint cherry tomatoes, halved
1/2 cup crumbled feta cheese
1/4 cup lightly packed fresh mint leaves, chopped
2 cups lettuce/arugula

Steps:

  • Cook couscous per instructions, until liquid is absorbed. Fluff with a fork and set aside.
  • In the bottom of a large bowl, whisk together the lemon zest, lemon juice, olive oil, mustard, smoked paprika, salt, and pepper. Taste and add additional seasoning as desired. While the couscous is still warm, add it to the bowl and toss to coat. Place in the refrigerator for 5-10 minutes to allow the couscous to cool.
  • When read to serve, add the remaining ingredients: arugula, cucumber, tomatoes, feta, and mint. Toss to combine. Serve cold or at room temperature.

This has been our favourite Recipe for Hot Weather so far this season. It makes a full meal, and contains a nice variety of textures and flavours. We enjoy it topped with ground fresh chili paste.

1 cup couscous
boiling water
1/2 cup parsley, chopped
1 green onion, diced
1 tomatoes, diced
1/2 red pepper, diced (or yellow or orange)
1/2 cup feta, crumbled
1/4 cup almonds, whole
3 tablespoons olive oil
salt and pepper, to taste
ground fresh chili paste, to taste

Steps:

  • Boil water.
  • Pour couscous into a soup bowl. Add enough boiling water to cover couscous completely (even a bit more, depending on the type of couscous you have) and cover the bowl with a plate. Set aside for 8 minutes.
  • Chop parsley, green onion, tomato, and pepper.
  • When couscous is done (tender), scoop it into a bigger bowl and fluff it with a fork. Add chopped ingredients and mix together.
  • Add crumbled feta and whole almonds and stir to blend everything together.
  • Add olive oil and salt and pepper, and stir well once again.
  • Serve on two plates and add ground fresh chili paste as you eat, according to your taste! Enjoy!

1 cup instant couscous
1 1/2 cups crumbled feta cheese
1 1/4 cups cucumbers, diced
1 cup tomatoes, diced
3/4 cup red bell pepper, diced
1/4 cup green onion, chopped
1/4 cup fresh basil, chopped
1/3 cup white wine vinegar or 1/3 cup lemon juice
1/3 cup olive oil
1 garlic clove, minced
1/4 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon fresh ground pepper

Steps:

  • Heat broth until boiling and stir in couscous. Cover and remove from heat. Let it stand for five minutes. Transfer to a large bowl and fluff couscous with with and let cool for ten minutes.
  • Add feta, cucumber, tomato, pepper, green onion and fresh basil.
  • Prepare the dressing. Combine vinegar, oil, garlic and sugar.
  • Pour dressing over couscous and vegetables and add salt and pepper to taste.

I found this recipe in a magazine several years ago, its a big hit with my family. Its easy to prepare and delcious as well.

1 c couscous
1 1/2 c hot water
1/2 c chopped toasted walnuts or any type of nuts you perfer
1/2 c crumbled feta cheese
1/2 c seedless red or green grapes cut in half
1/4 c chopped parsley or calandro
6 Tbsp olive oil
4 Tbsp fresh lemon juice
1/4 tsp kosher salt
1/4 tsp black or white pepper
COUSCOUS SALAD WITH GRAPES & FETA CHEESE

Steps:

  • 1. Boil the water in a pot when finish boiling, set aside.
  • 2. In a large bowl, combine 1 cup couscous with hot water, stirring once to evenly distributed couscous cover & let it sit for 10 minutes or more. I sometime use Far East Plain Couscous mix following cooking directions on the box.
  • 3. Fluff couscous with a fork and add walnuts, Feta cheese, red/green grapes, chopped parsley, olive oil, lemon juice, salt & pepper mix altogether, serve hot. You can chill and served over a nice salad.
  • 4. If you or family members don't like grapes, use grape/ cherry tomatoes. Adjust salt & pepper to your liking.

1 cup fresh spinach, chopped coarsely, packed
1 cup garbanzo beans, washed

1 1/2 teaspoons dried basil leaves
1/8 teaspoon dried red pepper flakes
3 tablespoons vinaigrette, fat free

3 ounces feta cheese with dried basil and tomato, crumbled

Steps:

  • Heat water in a microwave bowl until boiling.
  • Remove from microwave and stir in couscous; cover with plastic wrap and let stand for 5 minutes.
  • Place couscous in fine mesh strainer and rinse under cold water until cooled; drain well.
  • Combine remaining ingredients, except feta, in a large bowl.
  • Add couscous to spinach mixture and stir until blended.
  • Add cheese; toss gently.
