I made a this tart for Father's Day 2 years ago and it was a humungous hit! Deliciously different. Based on a recipe from the Union Square Cafe Cookbook.

1/2 cup butter, at room temperature
1/4 cup sugar
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour
3 large bananas, thinly sliced
1 tablespoon butter, melted
1 tablespoon sugar
1 cup macadamia nuts, lightly toasted
1 cup heavy whipping cream
1 cup sugar
1 tablespoon freshly squeezed lemon juice
1/4 cup butter
vanilla ice cream or coconut ice cream, to serve on the side

Steps:

  • Preheat oven to 450F.
  • For the Crust: In a large bowl, beat butter and sugar, with an electric mixer, until blended.
  • Beat in yolk, vanilla, and salt.
  • Add flour and beat until moist clumps form.
  • Press dough into bottom of 9 inch tart pan with removable bottom.
  • Pierce with fork and refrigerate for 1 hour.
  • Bake crust until golden (about 15 minutes).
  • Cool.
  • For the Banana Topping: Reduce oven temperature to 375F.
  • Overlap banana slices on crust, covering completely.
  • Brush melted butter over banana slices and sprinkle with sugar.
  • Bake until just warmed through (4 minutes).
  • Drizzle with some caramel sauce (recipe follows).
  • Sprinkle with macadamia nuts.
  • Serve with ice cream and pass extra caramel sauce around.
  • For Caramel Sauce: In a heavy saucepan, heat the cream over medium low heat until bubbles form, along the edges of the pan.
  • Keep warm.
  • In a heavy saucepan, combine the sugar and lemon juice until well mixed.
  • Cover the pot and place it over medium high heat until the sugar melts and bubbles, about 4 minutes.
  • Remove the cover and occasionally swirl the pan or stir the mixture until the syrup is a golden amber color, 5 to 8 minutes.
  • While cooking, brush the sides of the pan with a wet brush just above the bubbling sugar to keep crystals from forming.
  • Stirring constantly, slowly pour in the warm cream.
  • Bring to a boil, continuing to stir constantly.
  • Cook until slightly thickened, about 3-4 minutes.
  • Remove the sauce from the heat, add the butter, and stir until the butter melts and the sauce is smooth.
  • Serve immediately or cool to room temperature, then cover tightly and refrigerate for up to two weeks; reheat in a pan of simmering water or a microwave.

1 ¼ cups all-purpose flour
1 tablespoon sugar
¼ teaspoon freshly grated nutmeg
⅛ teaspoon salt
½ cup butter
2 tablespoons ice water, plus more as needed
4 small bananas, cut diagonally into 1/2-inch slices
1 cup pecan halves
2 eggs, lightly beaten
½ cup sugar
3 tablespoons butter, melted
1 teaspoon vanilla
1 teaspoon Caramel-flavor ice cream topping
1 tablespoon Vanilla ice cream
Reynolds Wrap® Aluminum Foil

Steps:

  • In a large bowl stir together flour, the 1 tablespoon sugar, nutmeg, and salt. Using a pastry blender, cut in the 1/2 cup butter until mixture resembles coarse crumbs. Stir in the ice water, 1 tablespoon at a time, just until dough starts to form. Knead gently for four to five strokes. Cover and chill for at least 1 hour or until dough is easy to handle.
  • On a lightly floured surface roll dough into a 12-inch circle. Transfer pastry to a 10-inch tart pan. Press pastry into fluted side of pan trim pastry even with rim. Freeze for 20 minutes.
  • Preheat oven to 400 degrees F. Prick bottom and side of pastry with a fork. Line pastry with double thickness of Reynolds Wrap® Aluminum Foil. Place on a baking sheet. Bake about 15 minutes or until pastry is set. Remove the aluminum foil. Bake about 10 minutes more or until pastry is light golden brown. Cool on a wire rack. Reduce oven temperature to 350 degrees F.
  • Place sliced banana in baked pastry shell. Top with pecans. In a small bowl combine eggs, the 1/2 cup sugar, melted butter, and vanilla. Carefully pour over banana and pecans.
  • Bake about 30 minutes or until filling is set and slightly puffed. Cool on a wire rack for 30 minutes. If desired, drizzle with caramel topping and serve with ice cream.

500 g puff pastry
4 ounces butter
2 tablespoons demerara sugar
6 bananas, sliced

Steps:

  • Have a round tart tin ready.
  • Roll out the puff pastry until it is slightly larger than the tin. Set aside.
  • Melt butter and pour into the base of tin.
  • Sprinkle the butter with the demerara sugar.
  • Place the banana slices in to look nicely arranged around the whole base of the tin.
  • Now place the puff pastry on top of the banana mixture, tucking in the excess around the sides; you want the fruit to be sealed.
  • Bake in a medium to hot oven for 12 minutes.
  • To serve, turn upside down on a serving plate so that the banana and toffee sauce is now showing.
  • Serve hot with ice cream.

3/4 cup plus 2 tablespoons sprouted flour (see tips, below)
1 tablespoon maple syrup
2 tablespoons plus 1 teaspoon extra virgin olive oil
Seeds from 1/2 vanilla bean
Pinch of Celtic sea salt
3 heaping teaspoons raw cashews, soaked for 8 hours in filtered water
1/4 cup plus 1 teaspoon Cashew Milk
2 tablespoons raw dark honey
2 tablespoons Cashew Milk
2 tablespoons maple syrup
4 tablespoons Cashew Milk
8 tablespoons Chocolate Fudge-Almond
28 banana slices
4 tablespoons Honey Walnuts , broken

Steps:

  • To make the tart shells: Combine all the ingredients in a bowl and stir to mix well. Place 2 tablespoons of the mixture in the bottom of each of 4 ring molds each 2 inches in diameter. Pack the mixture firmly into the molds. (You will have more dough than you need for 4 molds. Because the tiny tart shells are fragile and time-consuming to make, it is a good idea to line additional ring molds with the remaining dough in case of breakage.) Place the molds on a nonstick drying sheet on a dehydrator shelf and dehydrate at 105°F for 3 hours. Remove the tart shells from the drying sheet and dehydrate directly on the shelf for about 10 hours longer, or until just dry.
  • To make the Caramel Sauce: Drain the cashews, pat them dry, and then measure them. You should have 1/4 cup; discard any excess. In a high-speed blender, combine the cashews, Cashew Milk, honey, Date Paste, and maple syrup and process until smooth. Strain the purée through a fine-mesh sieve. Set aside 4 tablespoons for the tarts; reserve the remainder for another use.
  • Spoon 1 tablespoon of the Mexican Chocolate Sauce in a circle on each plate. Put a tart shell on top of the sauce. Spread 2 tablespoons of the Chocolate Fudge-Almond on the tart shell. Arrange 7 banana slices on top. Drizzle 1 tablespoon Caramel Sauce over the bananas and on the plate. Sprinkle with the Honey Walnuts.

1 box(es) digestive cookies (400gr, 14oz) or graham crackers
1 stick(s) butter, unsalted
3-6 - ripe bananas (depending on the size)
1 can(s) sweetened condensed milk (14 oz)
2 tablespoon(s) powder gelatin, unflavored
2 cup(s) whipping cream
1 1/2 tablespoon(s) sugar
1 teaspoon(s) vanilla extract

Steps:

  • Preparing the Caramel: -Immerse closed can in a pot of water and bring to a boil. -Leave on a simmer or light boil for 3 hours, topping up with water as needed. Be careful, the can should be covered with water at all times or it could explode. -Carefully, take out the can from the boiling water and put it aside to cool completely. -You can do this ahead of time, and put the can in the refrigerator or even in the cupboard, it stays for months.
  • -Place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until well combined. -Spread the crust mix on the bottom of a spring form tin or a pie plate. -Use the back of a metal spoon to firmly press the biscuit mixture over the base and side of each tin. -Place in the fridge until required.
  • -Peel and thinly slice bananas, and arrange over the crust. *(I personally like my pie base to be filled with bananas, they are not an accessory here!) -Dissolve the powder gelatin in a 1/4 cup of hot water, then pour it over the caramel, mix well. *(Originally the banoffee pie does not require gelatin, but I don't like a runny pie, that's why I added the gelatin so that when you cut your pie it holds better. You can definitely do without it) -Pour the caramel mixture over the bananas. Chill. *(Some people like to pour the caramel directly over the crust, when chilled top it with bananas)
  • -Whip up the cream with the sugar and vanilla until stiff peaks. -Spread the whipped cream over the chilled pie. Decorate with chocolate shavings, cocoa powder, caramel sauce, nuts etc.
