Yield 4 to 6 servings

Number Of Ingredients 24

1/4 cup chopped thawed frozen pitted sweet cherries, juices reserved
2 tablespoons low-sodium soy sauce
2 tablespoons creamy peanut butter
1 tablespoon rice vinegar (unseasoned)
3 tablespoons vegetable oil
1/2 teaspoon sesame oil
1 cup thawed frozen pitted sweet cherries, juices reserved
1/2 cup low-sodium soy sauce
1/2 cup dry white wine
1/4 cup packed light brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon freshly grated ginger
1 clove garlic
1 1/2 pounds skinless, boneless chicken breasts
Vegetable oil, for brushing
2 cups sauerkraut, drained and rinsed
1/2 12-ounce package wonton wrappers, thinly sliced
6 cups chopped romaine lettuce
1 red bell pepper, julienned
1 green bell pepper, julienned
3 scallions, julienned
2 medium carrots, julienned
1 cup snow peas, trimmed and julienned
1 cup drained sliced water chestnuts

Steps:

  • Make the dressing: Whisk the cherries, 1 tablespoon reserved cherry juice, the soy sauce, peanut butter, vinegar, vegetable oil and sesame oil in a bowl. Set aside.
  • Make the chicken: Put the cherries, 3 tablespoons reserved cherry juice, the soy sauce, white wine, brown sugar, Worcestershire sauce, ginger and garlic in a blender and puree until the cherries and garlic are finely chopped. Pour the marinade into a large resealable plastic bag. Pierce the chicken all over with a fork. Add to the bag with the marinade, seal and refrigerate at least 20 minutes or up to 8 hours. Preheat a grill to high. Brush the grates with vegetable oil. Remove the chicken from the marinade, brushing off any excess. Grill the chicken, covered, until the juices run clear, 5 to 7 minutes per side. Transfer to a cutting board and let rest 5 minutes.
  • Meanwhile, prepare the salad: Preheat the oven to 350 degrees F. Soak the sauerkraut in a bowl of ice water 10 minutes; drain, rinse and squeeze out the excess water. Arrange the wonton strips in a single layer on a baking sheet and bake until crisp, about 5 minutes. Toss the sauerkraut and romaine with half of the dressing in a bowl; divide among plates. Top with the bell peppers, scallions, carrots, snow peas and water chestnuts. Slice the chicken and serve with the salad. Top with the crispy wonton strips. Serve with more dressing on the side. Yield 4 servings

Number Of Ingredients 13

Kosher salt
1 cup frozen shelled edamame
2 oranges
1/3 cup creamy peanut butter
2 tablespoons plus 1 teaspoon low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon Sriracha
Freshly ground pepper
1/2 large head iceberg lettuce, chopped
2 cups watercress, trimmed
1 cup crunchy chow mein noodles
2 1/2 cups shredded rotisserie chicken (about 12 ounces)

Repeat with the other orange.

Toss the lettuce, watercress and half of the chow mein noodles in a large bowl. Divide among plates and drizzle with half the dressing. Top with the chicken, edamame, carrots, orange segments and remaining noodles. Season with salt and pepper and drizzle with the remaining dressing.

Asian Chicken Salad with Peanut Soy Dressing - Valuable Tips When it comes to preparing delicious, healthy meals, Asian cuisine offers a wide range of tantalizing flavors that don't have to be high in calories or fat. One of the most popular and versatile dishes is the Asian Chicken Salad. The combination of crisp vegetables, succulent chicken, and rich, tangy peanut soy dressing is hard to resist. Here are some valuable tips for making this irresistible salad. Tip 1: Pick the right ingredients The key to a great Asian Chicken Salad is to choose fresh, high-quality ingredients. Look for fresh, crisp lettuce, such as romaine, butter lettuce, or green leaf lettuce. Avoid iceberg lettuce, as it lacks the crunch and nutritional value of other greens. Choose vegetables that complement the flavors and textures of the salad. Carrots, cucumbers, red bell peppers, and bean sprouts are all excellent choices that add color and crunch. You can also add sliced scallions, chopped cilantro, and shredded cabbage for an extra boost of flavor and nutrients. For the chicken, you can use grilled, broiled, or poached chicken breasts, sliced into strips or shredded. You can also use leftover roasted chicken or a store-bought rotisserie chicken for convenience. To add some sweetness to your salad, you can also add sliced mango or papaya, diced pineapple, or even some raisins or cranberries. For the peanut soy dressing, you'll need peanut butter, soy sauce, honey, lime juice, garlic, and ginger. Make sure these ingredients are high-quality and fresh, as this will have a huge impact on the flavor of your dressing. Tip 2: Prep your ingredients Once you have your ingredients, the next step is to prep them. This involves washing and slicing the vegetables, cooking and shredding the chicken, and mixing the salad dressing. Wash your lettuce and vegetables well, and dry them thoroughly before slicing or shredding. Make sure the pieces are uniform in size to ensure even distribution of flavors and textures. Cook your chicken according to your preferred method, but make sure it is cooked through and not pink on the inside. You can marinate your chicken in some soy sauce, garlic, and ginger before cooking for extra flavor. To make the dressing, mix together the peanut butter, soy sauce, honey, lime juice, garlic, and ginger in a bowl until smooth. Taste and adjust the seasoning as needed, adding more soy sauce for saltiness or lime juice for acidity. Tip 3: Assemble the salad The key to a great Asian Chicken Salad is in the assembly. You want to create layers of texture and flavor that will make every bite a delight. Start with a bed of lettuce at the bottom of your plate or bowl. Add your sliced vegetables and chicken on top, arranging them in a visually appealing way. Drizzle some of the dressing over the top, and garnish with some chopped cilantro or scallions. For an extra crunch, you can also add some toasted sesame seeds or chopped peanuts on top. Tip 4: Dress the salad When it comes to dressing your Asian Chicken Salad, less is more. You want to coat the salad evenly with just enough dressing to bring out the flavors and textures, without drowning it in a sea of sauce. Drizzle the dressing over the top of your salad, and then toss gently to ensure even distribution. You can always add more dressing if needed, but beware of over-dressing your salad, as this can make it soggy and unappetizing. Tip 5: Serve and enjoy Once your salad is assembled and dressed, it's time to serve and enjoy. This salad is perfect as a light lunch, or as a side dish for a summer barbecue or potluck. You can also customize this salad to suit your tastes and dietary needs. For a vegetarian version, you can omit the chicken and add some tofu or edamame. For a gluten-free version, use tamari instead of soy sauce. In summary, making a delicious Asian Chicken Salad with Peanut Soy Dressing is easy if you follow these valuable tips. Choose fresh, high-quality ingredients, prep them well, assemble the salad with layers of texture and flavor, dress it lightly, and enjoy the flavors of the East in every satisfying bite.
