Steps:
- Brown cubed chicken in heated oil over medium heat in skillet for ten (10) minutes.
- Add sausage links and cook until browned.
- Remove meat, set inside a Dutch oven.
- Place peppers, onions, zucchini, squash, garlic powder, crushed red pepper, chili powder and Creole Seasoning in same skillet until tender.
- Add pepper mix to meat.
- Add rice, broth and stewed tomatoes.
- Bring to a boil, simmer on medium heat for 30 minutes.
- Serve with fresh lime wedges on the side, if desired.
SPICY JAMBALAYA
Steps:
- In a boiler, add bay leaves, diced ham and water. Let boil for 1 hour. In another pan, heat oil. Add diced chicken, onions and celery. Saute until tender then add peppers, onions and diced tomatoes. Add tomato paste, chopped parsley, crushed garlic, dried thyme, cayenne pepper, Worcestershire sauce, and smoked sausage. Add cooked rice to jambalaya and salt to taste.
NICK'S JAMBALAYA RECIPE BY TASTY
Here's what you need: oil, boneless, skinless chicken thighs, paprika, black pepper, garlic powder, cajun seasoning, cayenne, salt, andouille sausages, sweet onion, celery, green pepper, jalapeño, garlic, chicken stock, crushed tomato, rice, bay leaves, shrimp

Steps:
- Heat 1 tablespoon of oil in a 6-quart Dutch oven over medium- high heat. Add the chicken, paprika, black pepper, garlic powder, Cajun seasoning, cayenne, and salt. Stir to coat.
- Once chicken is fully cooked, about 5 minutes, add the sausages and cook for 3 minutes.
- Remove the chicken and sausage from the pot and set aside.
- Using the same pot, add 1 tablespoon of oil to the pot. Add the onion, celery, green pepper, jalapeño, garlic, and 1 teaspoon of salt. Cook until vegetables are soft and tender, scraping any brown bits on the bottom of the pot, about 8-10 minutes.
- Add chicken stock, crushed tomatoes, cooked rice, and bay leaves. Stir well and add the chicken and sausage back into the pot. Bring to a simmer.
- Put the lid on and continue simmering for 10 minutes.
- Stir in the shrimp. Put the lid back on and cook for 5 minutes, or until shrimp are cooked through.

SKILLET JAMBALAYA
A recipe from The Best 30-minute Recipe of Cook's Illustrated. If you can't find andouille, use tasso, chorizo or linguiça sausage. Serve with plenty of Tabasco. You can use your favorite Creole spice blend instead of Old Bay Seasoning.

Steps:
- Season shrimp with salt and pepper and set aside.
- Heat oil in 12-inch skillet over medium heat until shimmering. Add andouille, onion, bell pepper, Old Bay, and 1/2 tsp salt and cook until onion is softened, about 5 minutes. Stir in rice, garlic, and tomato paste and cook until fragrant, about 30 seconds.
- Stir in broth and bring to simmer, scraping up browned bits. Cover and cook over medium-low heat until liquid is absorbed, about 5 minutes.
- Scatter shrimp over rice and continue to cook, covered, until rice is tender and shrimp are cooked through, about 5 minutes. Off heat, let rice sit for 2 minutes. Stir in parsley, season with salt and pepper to taste, and serve.
- Note : If you don't have instant rice on hand or if you would like to use long-grain rice, follow this method :
- Substitute 1 1/2 cups long-grain rice for instant rice and increase broth amount to 4 cups. Extend rice cooking time in step 3 to about 20 minutes, then add shrimp and continue with recipe as directed.

SPICY BLACK BEAN JAMBALAYA
Started out as a soup, but with the addition of rice makes a nice jambalaya. For the rice I use Uncle Ben's ready to serve brown rice, which eliminates the rice cooking process.

Steps:
- In a large skillet heat olive oil over medium high heat.
- Add onions, bell peppers and spices and saute until soft.
- Add garlic and saute until you can smell the aroma.
- Add jalapenos if desired, salsa, hot sauce, black beans, water, and rice and mix well. Turn heat up to high and let come to a boil.
- Once it comes to a boil, turn the heat down to medium, cover, and let simmer for 8 - 10 minutes.
- Garnish with shredded cheese if desired.
