A recipe from The Best 30-minute Recipe of Cook's Illustrated. If you can't find andouille, use tasso, chorizo or linguiƧa sausage. Serve with plenty of Tabasco. You can use your favorite Creole spice blend instead of Old Bay Seasoning.

1 lb extra-large shrimp, peeled and deveined
salt & fresh ground pepper
1 tablespoon vegetable oil
8 ounces andouille sausages, halved and sliced 1/4 inch thick
1 onion, minced
1 red bell pepper, cored and chopped fine
1/2 teaspoon Old Bay Seasoning
1 1/2 cups instant rice (see note for long-grain rice)
5 garlic cloves, minced
1 tablespoon tomato paste
1 3/4 cups low sodium chicken broth
2 tablespoons fresh parsley, minced

Steps:

  • Season shrimp with salt and pepper and set aside.
  • Heat oil in 12-inch skillet over medium heat until shimmering. Add andouille, onion, bell pepper, Old Bay, and 1/2 tsp salt and cook until onion is softened, about 5 minutes. Stir in rice, garlic, and tomato paste and cook until fragrant, about 30 seconds.
  • Stir in broth and bring to simmer, scraping up browned bits. Cover and cook over medium-low heat until liquid is absorbed, about 5 minutes.
  • Scatter shrimp over rice and continue to cook, covered, until rice is tender and shrimp are cooked through, about 5 minutes. Off heat, let rice sit for 2 minutes. Stir in parsley, season with salt and pepper to taste, and serve.
  • Note : If you don't have instant rice on hand or if you would like to use long-grain rice, follow this method :
  • Substitute 1 1/2 cups long-grain rice for instant rice and increase broth amount to 4 cups. Extend rice cooking time in step 3 to about 20 minutes, then add shrimp and continue with recipe as directed.

1 tablespoon olive oil
1 cup frozen bell pepper and onion stir-fry
1 cup frozen corn
1 (8-oz.) pkg. red beans and rice mix
Water
1 (12-oz.) can luncheon meat, drained, cut into 1/2-inch cubes
2 Italian plum tomatoes, chopped

Steps:

  • Heat oil in large skillet over medium heat until hot. Add bell pepper and onion stir-fry; cook and stir 2 minutes or until crisp-tender.
  • Add corn, beans and rice mix, and amount of water as directed on package of mix. Bring to a boil. Reduce heat to low; cover and simmer 10 to 15 minutes, stirring occasionally.
  • Add luncheon meat and tomatoes; stir gently to mix. Cook 3 to 5 minutes or until rice is tender, stirring occasionally. If desired, garnish with chopped fresh parsley.

2 1/2 boneless skinless chicken breasts (cut into 1-inch cubes)
salt and pepper, to taste
1/4 teaspoon creole seasoning
1 tablespoon vegetable oil (for browning meats)
5 links cooked sausage
1/4 cup yellow bell pepper, diced
1/4 cup red bell pepper, diced
1/4 cup onion, diced
1 teaspoon crushed red pepper flakes
1 1/2 teaspoons garlic powder
1 1/2 teaspoons chili powder
3 cups chicken broth
1 (14 1/2 ounce) can stewed tomatoes
1/4 cup zucchini (optional-as filler)
1/4 cup yellow squash (optional-as filler)
4 small habanero peppers

Steps:

  • Brown cubed chicken in heated oil over medium heat in skillet for ten (10) minutes.
  • Add sausage links and cook until browned.
  • Remove meat, set inside a Dutch oven.
  • Place peppers, onions, zucchini, squash, garlic powder, crushed red pepper, chili powder and Creole Seasoning in same skillet until tender.
  • Add pepper mix to meat.
  • Add rice, broth and stewed tomatoes.
  • Bring to a boil, simmer on medium heat for 30 minutes.
  • Serve with fresh lime wedges on the side, if desired.
