RANCH CUCUMBER SALAD

A NICE SIDE DISH! Family Favorite. There are many ways to prepare cucumbers, but this is my quick and easy favorite recipe!

Number Of Ingredients 6

2 cucumbers, thinly sliced
1/2 onion, sliced
1/2 cup ranch dressing
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dill (optional)

Steps:

  • After slicing cucumbers, add salt and pepper. Add onions, dressing and dill.
  • Marinate for at least 30 minutes before serving.
  • Enjoy!

Number Of Ingredients 12

1 medium cucumber, peeled, halved lengthwise, seeded and grated on large holes of box grater
1 tablespoon shallot, finely chopped (or green onion)
3/4 cup light sour cream
1/4 cup low-fat buttermilk
1/4 cup mayonnaise
1 -3 tablespoon fresh lemon juice
1 1/4 teaspoons salt
1/2-1 teaspoon sugar (optional)
1 pinch cayenne pepper
1 -3 tablespoon flat leaf parsley, finely chopped
2 -3 tablespoons fresh scallions, finely chopped (or chives)
1/2-1 tablespoon fresh dill (or 1/2 tsp. dried) (optional)

Steps:

  • Stir together cucumber, shallot, sour cream, buttermilk, mayonnaise, lemon juice, salt, sugar, cayenne, parsley, scallions and dill, if using, in a bowl. Add additional salt and cayenne if needed.
  • The dressing can be refrigerated in an airtight container for up to 3 days. Enjoy!

Ranch Cucumber, Tomato and Onion Salad image

So easy, so good. My newest summertime addiction. My SIL Jeni actually gave me the idea for this, so I want to make sure she gets credit! I'm sure this isn't a completely original recipe though, lol. I can usually only wait about 1/2 hour for the salad to meld together, but it has lasted a whole 24 hours in the fridge before I devoured the leftovers!

10 -12 cherry tomatoes
1 large cucumber
1/2 small onion
salt
pepper
5 tablespoons light ranch salad dressing

Steps:

  • Slice the cucumbers and put in a bowl. Sprinkle with a little salt.
  • Halve or quarter the tomatoes depending on the size of the tomatoes and how big you like the pieces. Mix with the cucumbers.
  • Thinly slice the onion. I prefer it sliced, but I'm sure you could do a chopped onion instead. Mix with cucumbers and tomatoes.
  • Add salt and pepper to taste.
  • Mix with ranch dressing. Let sit for at least 30 minutes.

Wonderful side dish to have at your family cookouts! Quick and easy, and the flavors really transform your garden cucumbers. You can also add grape or cherry tomatoes for enhancement. Keep in the refrigerator until ready to serve.

4 large cucumbers, sliced
salt and ground black pepper to taste
½ cup half-and-half
½ cup sour cream
½ cup mayonnaise
5 large green onions, thinly sliced
1 (1 ounce) package ranch dressing mix (such as Lipton® Recipe Secrets®)
1 ½ tablespoons white sugar
1 tablespoon dried dill weed
1 teaspoon celery salt
2 teaspoons lime juice

Steps:

  • Arrange cucumber slices in a large bowl, generously seasoning each layer of cucumber with salt and pepper. Cover bowl with plastic wrap and refrigerate for 3 hours.
  • Drain liquid from cucumbers. Gently press cucumber slices with paper towel to absorb any remaining liquid.
  • Stir half-and-half, sour cream, mayonnaise, green onions, ranch dressing mix, sugar, dill, celery salt, and lime juice together in a small bowl; pour over cucumber slices and gently stir to coat.
