- Helpful equipment: Potato ricer (easy way to remove excess moisture) or cheesecloth or tea towel Box grater or food processor with a shredding blade Wash potaotes (I don't peel them, unless you are using Russets) and grate Squeeze out as much moisture as you can (to avoid gummy potatoes). Add grated onion (if using) Add olive oil, pepper and go easy on adding salt (you can always add more). Toss to combine. Heat a skillet, with about 2-3 tsp olive oil on medium heat until it is rippling and just starting to smoke. Add the pat of unsalted butter (for flavor). Evenly distribute the potatoes and allow to cook until golden brown. Press down with a large spatula (I use a bacon press to weight it down). Flip over and continue to cook until golden brown. Total cooking time is approximately 20 minutes. If desired, crack 4 eggs on top and cover. Allow to cook for 3-4 minutes longer and serve. Otherwise, you can cook eggs separately and serve.
SAVORY FRENCH TOAST WITH SWISS CHARD AND EGGS

- Preheat the oven to 200˚ F. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the onion, tomatoes and chard stems and cook until the vegetables are softened, about 5 minutes. Add the chard leaves and cook, stirring, until wilted, about 3 minutes; season with salt and pepper. Transfer to an ovenproof dish and keep warm in the oven. Wipe out the skillet and return to the stovetop.
- Whisk 3 eggs, the milk, sage, 1 teaspoon pepper and 1/2 teaspoon salt in a baking dish. Lay the bread in the dish, flipping the slices once or twice to fully soak. Heat 1 tablespoon olive oil in the skillet over medium heat. Carefully lift the bread from the egg mixture, letting the excess drip off. Cook in the skillet until golden, about 3 minutes per side. Transfer to a baking sheet, top each with a slice of cheese and melt in the oven.
- Wipe out the skillet and heat the remaining 1 tablespoon olive oil over medium-high heat. Crack in the remaining 4 eggs and cook until the whites are set, about 5 minutes. Divide the French toast among plates. Top each with the vegetables and a fried egg; season with salt and pepper. Drizzle with the hot honey.

- Preheat broiler.
- Whisk eggs, milk, salt and pepper together in a medium bowl until well blended. Reserve 2 tablespoons of green onions and stir the rest into egg mixture.
- Spray a 12 inch ovenproof skillet with cooking spray. Heat over medium-low heat until hot.
- Add egg mixture. Cover and cook for 14 minutes or until almost set.
- Arrange Canadian bacon in pinwheel on top of egg mixture. Sprinkle with cheese.
- Broil for 2 minutes or until cheese is bubbly.
- Top off with 2 tablespoons of green onions. Cut and serve!

- Preheat oven to 350 degrees.
- Sprinkle cheese over the bottom of a well buttered 11x7" baking dish.
- Break eggs over cheese (yolks should be intact) so they are evenly spaced throughout the pan.
- Mix cream, mustard, salt and cayenne and pour evenly over the pan.
- Dot with butter.
- Bake for 15 minutes or longer, as needed.

- Scrub the potatoes and place them, with their skins still on, in a large pan filled with cold, salted water. Bring to a boil and cook for about 10 minutes (they should become slightly more tender but remain firm), then drain and allow them to cool for at least 30 minutes.
- Peel the potatoes, then coarsely grate them into a bowl with a hand grater, adding plenty of seasoning and the minced cloves of garlic. Make sure the garlic and seasoning are evenly distributed.
- Melt the butter and olive oil in a large, non-stick frying pan. When the pan is hot, add the potato. Cook for five minutes over fairly high heat. When the underside begins to turn golden, flip the mixture over (it won't stick together at this stage), then, using a metal slice, divide it into four roughly circular "cakes," about an inch deep, in the pan.
- Press each "cake" down slightly with the slice and cook for a further five minutes on high heat, then flip them over (the potato should now be sticking together) and turn down the heat to low-medium. Cook gently for another 10 minutes on each side, checking occasionally to make sure that the potato does not burn.
- About five minutes before your rösti is ready, heat some salted water in a saucepan with the vinegar, for poaching the eggs. The temperature is right when there are little bubbles slowly rising to the surface; the water should not be boiling vigorously. Break the eggs into the water and cook on low to medium heat for 4-5 minutes for a soft-poached egg.
- Divide the rösti between two plates. Drain the eggs using a slotted spoon, rinse under a little cold water, then drain once more, and place an egg on each rösti. Season with salt and freshly ground pepper and serve.

I created this when I was trying to come up with ideas for high-protein breakfast meals. I made it in an individual-sized serving, but I'm sure it could easily be multiplied to serve more than one person.

- Heat butter or olive oil in a medium skillet over medium-high heat.
- While skillet is heating, beat eggs and milk together until foamy.
- When skillet is hot, pour eggs into skillet and scramble until just beginning to set.
- Add cheese to eggs and continue cooking eggs to desired doneness.
- After the eggs are done, put them on a plate and continue to stir until the cheese is completely melted.
- Serve immediately.

PRETENDER EGGS BENEDICT WITH ASPARAGUS, BACON, HAM, AND SWISS CHEESE
I made this for my husband one morning and he couldn't stop raving! This is a wonderful "cheat" that makes for a terrific presentation.

- You will need to have something to cook the eggs in the microwave in that make them a perfect size for the muffins. I bought mine at Wally World. They are plastic, and open up on a hinge.
- Split muffins and toast to your liking, butter them.
- Put one slice of Swiss on each muffin, break the bacon in 3 pieces, put on Swiss, put one slice of ham on top of the bacon.
- Spray the container you are going to cook your eggs in with non stick spray.
- Put one egg in each container, and whip, add 1 teaspoon cream to each egg and whip. Put 3 cut spears of asparagus on top, salt and pepper
- Put each egg in microwave and cook 1 minute.
- Meanwhile make Hollandaise to package directions using the 1 cup milk and 1/4 cup butter.
- Place each egg on each muffin, and cover with Hollandaise.
SWISS EGGS
Steps:
- Melt butter in shallow casserole dish (7-9" corning works well). Line dish with the cheese. Break eggs over cheese. Add salt and pepper to cream and pour over eggs. Sprinkle parmesan over all and bake at 350 for 10 minutes. Broil briefly to brown the cheese topping.
