This is wonderful for feeding a big crowd, and since the slow cooker does most of the work, you get to spend time with your friends! Use as much or as little of the BBQ sauce as you like, as some people like their BBQ dry and neat, while others like a big sloppy sandwich with a lot of sauce. Here's a tip: Save the cooking broth: you can add a little back to the pulled pork to thin the sauce if necessary, and it makes a great broth for soup!

1 -2 large sweet onion
1 pork loin roast (3-5 pounds)
10 ounces condensed French onion soup or 10 ounces beef consomme, undiluted
2 (18 ounce) bottles barbecue sauce

Steps:

  • Slice the onion and put in the bottom of a large slow cooker.
  • Season the pork roast liberally with salt and pepper and then place it on top of the onion slices.
  • Pour the undiluted soup over the roast and cover.
  • Cook on low for 8 to 10 hours.
  • Remove the roast and strain the onions from the cooking liquid. Pour the liquid from the slow cooker.
  • Using forks, pull the pork apart into shreds and return the pork and cooked onions to the slow cooker.
  • Pour your favorite barbeque sauce into cooker and mix thoroughly but gently until well combined. Start with one bottle of sauce and add more to your liking.
  • Cook on low for 30 minutes or until warmed through.
  • Serve on buns with your favorite condiments.

1 tablespoon paprika
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon packed brown sugar
1 boneless pork shoulder roast (2 1/2 to 3 lb)
1/4 cup water
1 cup barbecue sauce

Steps:

  • In small bowl, stir together paprika, salt, garlic powder and brown sugar.
  • Spray 5- to 6-quart slow cooker with cooking spray. Rub paprika mixture on pork to cover completely. Place pork in slow cooker. Pour water around pork.
  • Cover; cook on Low heat setting 7 to 8 hours or High heat setting 3 to 4 hours, until extremely tender.
  • Transfer pork to cutting board. Let rest until cool enough to handle. Use 2 forks to shred pork.
  • Discard liquid in slow cooker. Wipe out slow cooker. Spray slow cooker with cooking spray. Return shredded pork to slow cooker; stir in barbecue sauce until well mixed. Cover; cook on High heat setting 10 to 15 minutes or until hot.

3 tablespoons paprika
1 ½ tablespoons garlic powder (such as McCormick® California Style)
1 ½ tablespoons ground black pepper
1 ½ teaspoons salt

1 teaspoon vegetable oil
1 (4 pound) pork shoulder roast
1 cup barbeque sauce
½ cup apple cider vinegar
½ cup chicken broth
¼ cup light brown sugar
1 tablespoon prepared yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 extra large onion, chopped
2 large cloves garlic, crushed
1 ½ teaspoons dried thyme
8 hamburger buns, split
2 tablespoons butter, or as needed

Steps:

  • Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.
  • Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices.
  • Spread the inside of both halves of hamburger buns with butter. Toast the buns, butter side down, in a skillet over medium heat until golden brown. Spoon pork into the toasted buns.

I was having company and couldn't decide what to make for lunch - then I remembered I had a Mesquite Pork Loin in the freezer. Usually I put a rub on my pork loin before making pulled pork, but hoped it would work without extra spices, etc. And it did! Just have to remember to start it early enough!

1 1/2 pound(s) mesquite seasoned pork loin (approximate size)
12 ounce(s) beer, favorite
1 onion, coarsely chopped
barbecue sauce, sliced pickles, coleslaw, buns, to serve (optional)

Steps:

  • Chop onions and cover bottom of crock pot with them.
  • Unwrap pork roast, place on top of onions. Pour beer over all. Close crock pot and set on Low. Cook overnight or about 8 hours.
  • Remove pork to platter, use forks to shred. Drain liquid from crock pot, reserve about 2 cups. Return pork to pot, mix with cooked onions. Season to taste. Keep set to Warm until ready to serve.
  • Optional: Serve on bun. Top with a squirt of favorite BBQ sauce, pickles, coleslaw - as desired!
