SIRLOIN STEAK WITH ROASTED POTATOES AND ASPARAGUS

1/2 cup Dijon mustard
2 tablespoons fresh lemon juice, plus wedges for serving
1 garlic clove, crushed through a press
Coarse salt and ground pepper
1 large sirloin steak (about 1 1/2 pounds and 1 inch thick), trimmed and cut into 4 equal portions
1 pound red new potatoes, halved (quartered if large)
3 tablespoons olive oil
2 pounds asparagus, trimmed

Steps:

  • Preheat oven to 450 degrees. In a small bowl, stir together mustard, lemon juice, and garlic; season with salt and pepper. Place cup mustard mixture in a resealable plastic bag. Add steaks, and rub to coat (reserve remaining mixture for serving). Let steaks marinate at room temperature 10 minutes, or refrigerate up to 1 day.
  • On a large rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper. Roast 10 minutes, then add asparagus to sheet, and toss with another tablespoon oil. Season with salt and pepper. Roast until potatoes and asparagus are tender, about 15 minutes more.
  • While vegetables are roasting, heat remaining tablespoon oil in a large skillet over high. Remove steaks from marinade, allowing excess to drip off; cook 4 to 5 minutes per side for medium-rare (if pan darkens quickly, reduce heat). Let rest 5 minutes. Serve steaks with vegetables and reserved mustard sauce; garnish with lemon wedges.

1/4 cup extra-virgin olive oil
1/4 tablespoon fine sea salt

3 pounds asparagus, trimmed and cut into chunks
2 pounds small red potatoes, halved
1/3 cup finely chopped fresh chives

Steps:

  • In a small bowl, whisk together Dijon and lemon juice.
  • Drizzle in oil while whisking constantly and then season with salt and cayenne; set dressing aside.
  • Bring a large pot of salted water to a boil.
  • Add asparagus and simmer until just tender, 2 to 3 minutes.
  • Using a slotted spoon, transfer to a large bowl of ice water to stop the cooking; drain well and transfer to a large bowl.
  • Return water to a boil, add potatoes and simmer until just tender, 15 to 20 minutes; drain well and add to bowl with asparagus.
  • Add dressing and chives, and toss to combine.
  • Transfer to a platter and serve at room temperature.

Asparagus and red pepper add a fun twist to the traditional recipe, and a spicy dressing made with mustard, balsamic vinegar, and brown sugar is the perfect bath for the potatoes to soak in.

1 pound new potatoes, scrubbed
1 pound asparagus
1/2 large red bell pepper, seeded
1/2 cup sliced red onion
5 tablespoon creole mustard, or spicy brown mustard
6 tablespoon balsamic vinegar
1 1/2 tablespoon brown sugar
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 clove garlic, pressed or finely minced
6 tablespoon olive oil
tabasco, to taste

Steps:

  • Cook the potatoes in boiling water to cover until tender. Without peeling, cut the potatoes into ¾-inch cubes and put them in a bowl. Snap off the tough bottoms of the stalks of asparagus and discard, then cook the tender tops in a shallow pan of simmering salted water until tender-crisp. Drain and shock in cold water. Slice the asparagus into 1 ½-inch pieces and add to the potatoes. Cut the pepper into sticks about the same width and length as the asparagus. Put in the bowl. Add the red onion.
  • Mix up the dressing by stirring together the mustard, vinegar, brown sugar, salt, pepper, and garlic in a small bowl. Drizzle in the oil, whisking constantly to emulsify. Add a couple of dashes of Tabasco to taste.
  • Add the dressing to the vegetables and give a good stir. Serve right away for best color in the asparagus.

8 cloves garlic, thinly sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).

  • Cook 1 pound asparagus (trimmed, peeled and cut into 1-inch pieces) in salted boiling water until crisp-tender, 2 to 3 minutes. Remove with a slotted spoon and transfer to ice water to cool; drain. Add 1 pound quartered baby potatoes to the boiling water and cook until tender, 8 to 10 minutes, then drain. 1/3 cup A.1. Original Sauce
1 beef top round steak (l-pound)
