SPICY CURRIED SWEET POTATO SOUP
I whipped this up after finding a great deal on a huge amount of sweet potatoes at the farmers' market and ran out of things to make with them. This is a little spicy, but you can adjust to your taste. Garnish with sliced basil leaves and sour cream, if you like.

Steps:
- Combine sweet potatoes, onion, and garlic cloves, in a pot. Add chicken stock, curry paste, and curry powder; bring to a low boil over medium heat. Reduce heat, cover, and simmer until sweet potatoes are tender, about 20 minutes.
- Remove from the heat. Stir in diced tomatoes with chile peppers, basil, ginger, and 1 teaspoon salt. Puree soup with an immersion blender until smooth; you can also use a regular blender or food processor to do this.
- Bring soup to a low boil again and stir in coconut milk. Adjust salt if needed.

SPICY CURRIED SWEET POTATO SOUP (PALEO AND GF APPROVED)
I only eat paleo these days and sometimes it's hard to find recipes that are fast and easy to make. One beautiful Arizona day, I realized I was really hungry, but was also totally unwilling to head to the store. So I scraped together what ingredients I had and was pretty pleased with the end result. This is the first recipe I've ever shared here, so I hope you all enjoy it as much as I did! Garnish with some Thai basil and avocado pieces (maybe even a little bacon) and enjoy the heck out of this thing!

Steps:
- Combine sweet potatoes and beef broth in a pot; cook over medium-high heat until tender, 5 to 10 minutes. Mash sweet potatoes into the broth using a potato masher.
- Mix coconut milk, shallot, maple syrup, curry powder, sea salt, chili powder, and paprika into sweet potato mixture; cook and stir until heated through, 5 to 10 minutes. Reduce heat to low and blend soup with a hand blender until smooth.
