Winter Sweet Potato and Cranberry Casserole image

1 can(s) sweet potatoes (yams) drained (40 oz)
1 pkg fresh whole cranberries (not always available, so i use a good quality dried and reconstitute them in hot water and then drain)
1 1/4 c sugar
1 small orange sliced with skin and quartered
1/4 c orange juice
3/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c pecan pieces

Steps:

  • 1. Combine cranberries, oranges, and sweet potatoes (gently so you don't break down the sweet potatoes too much) in 2 quart casserole. Combine orange juice, spices and sugar. Pour over the top ands sprinkle with pecans. Bake at 375 uncovered about 30 minutes.
  • 2. This recipe was doubled to serve today in a 9 X 12 dish, so I cut down on the sugar to about 2 cups total.
