THE VERY BEST CARROT CAKE image

Number Of Ingredients 17

4 eggs
2 cups sugar
1 1/4 cups vegetable oil (I use
Wesson)
4 grated carrots
1/2 cup raisins
1 tsp. vanilla
2 tsp. cinnamon
2 tsp. allspice
2 tsp. cloves
2 tsp. nutmeg
2 tsp. baking powder
Frosting
1 package (8 ounce) cream cheese at room temperature
1 stick unsalted butter at room temperature
1 tsp. vanilla
1 box confectioner's sugar

Steps:

  • Preheat oven to 350 degrees, butter one 9" round cake pan or 8" square glass pan. If using glass, cook at 325. Beat eggs, stir in oil then gradually blend in all dry ingredients. Beat in vanilla and then fold in carrots and raisins. Bake until tester inserted in the middle of cake is dry (approximately 30 minutes). While cake is baking, cream all frosting ingredients together until smooth and creamy. Frost after cake has cooled.
