APPLE BARLEY PUDDING image

Yield 4 servings

Number Of Ingredients 8

2 cups cooked barley
1 cup raisins
1 cup chopped apples or applesauce
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup honey
2 eggs
Juice of one lemon (3 tablespoons)

Steps:

  • Combine first 6 ingredients. Separate eggs. Whip both. Add yolks to mixture. Carefully fold in whites. Bake at 350 degrees for 30 minutes.
