Island Pork Tenderloin image

Wow, I am so excited!!! I finally conquered the "pork tenderloin" tonight for dinner. I have tried making this several time with no success. It would always come out very tough because I would over cook it. This came out so tender, moist and delicious with the seasoned crust on the outside it was spicy too! My husband & I both...

Number Of Ingredients 10

16 oz pork tenderloin, lean
1/2 tsp salt
1/4 tsp pepper
1/2 tsp chile powder
1/2 tsp ground cumin
1/2 tsp cinnamon
2 tsp olive oil
1/4 c brown sugar, firmly packed
1/2 Tbsp fresh garlic, finely chopped
1/2 Tbsp tabasco sauce

Steps:

  • 1. Preheat oven to 350 degrees. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.
  • 2. Heat 1 TBSP oil in a 12-inch skillet over moderately high heat and brown pork turning onto all sides about 4 minutes on each.
  • 3. Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin.
  • 4. Place pork in a roasting pan and cook in the oven for 20 minutes. Afterwards remove from oven and let sit for 10 or 15 mintes.
  • 5. September 16th, 2015 --- Made this for dinner tonight and added a delicious homemade Sweet & Spicy Chili Sauce that I traded for at a Food Swap. It put this tenderloin over the top in delicious flavors!
