ISLAND PORK TENDERLOIN SALAD
Steps:
- Prepare pork:
- Preheat oven to 350°F.
- Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat pork with spice rub.
- Heat oil in an ovenproof 12-inch heavy skillet over moderately high heat until just beginning to smoke, then brown pork, turning, about 4 minutes total. Leave pork in skillet.
- Make glaze and roast pork:
- Stir together brown sugar, garlic, and Tabasco and pat onto top of each tenderloin. Roast in middle of oven until thermometer inserted diagonally in center of each tenderloin registers 140°F, about 20 minutes. Let pork stand in skillet at room temperature 10 minutes. (Temperature will rise to about 155°F while standing.)
- Make vinaigrette while pork roasts:
- Whisk together juices, mustard, curry powder, salt, and pepper, then add oil in a stream, whisking until emulsified.
- Prepare salad ingredients while pork stands:
- Cut peel, including white pith, from oranges with a sharp knife, then cut oranges crosswise into 1/4-inch-thick slices. Toss spinach, cabbage, bell pepper, and raisins in a large bowl with about 1/4 cup vinaigrette. Halve, pit, and peel avocados, then cut diagonally into 1/4-inch-thick slices.
- Assemble salad:
- Cut pork at a 45-degree angle into 1/2-inch-thick slices. Line a large platter with dressed salad and arrange sliced pork, oranges, and avocados in rows on top. Drizzle some vinaigrette over avocados and oranges. Pour any juices from skillet over pork.

This is the most awesome pork tenderlion ever!! It is from Bon Appetit and is a very poplular "internet recipe"...(I can't believe no one has posted it here yet!) Posting this for ZWT II, Jamaica! The whole recipe includes the pork and salad, which is a lovely salad, but after making it the first time, I usually just make the pork and skip the salad.

ISLAND PORK TENDERLOIN WITH MANGO SALSA

- Trim fat and membrane from tenderloin. Slice and make spears from garlic. Make cuts in meat and insert garlic evenly. Rub mustard all over meat. Sprinkle herbs and salt and pepper over tenderloin. Turn and coat the meat evenly. Tie tenderloin with kitchen string. Refrigerate until 30 minutes until grilling. Make Salsa. Blend sugar and vinegar together over medium heat until sugar has melted. Remove from heat. Add Mango, jalapeno, green onion and cilantro. Stir and refrigerate. Can be made a day ahead. Grill meat over hot coals/grill browning outside. Grill until inside is medium...about 20 minutes. Slice thinly and serve with salsa. The warm seasoned meat and cool tropical salsa is excellent for a summer evening.

KICKED UP ISLAND PORK TENDERLOIN
Steps:
- Mix all the rube ingredients together and rub generously ove the two pork tenderloins. Place in a ziplock bag and leave in the refrigerator for 1-24 hrs. In a mini food processor chop the garlic (about 4-5 cloves)then add the tobasco and bourbon then brown sugar and set aside in a bowl. Make the vinaigrette. In a mini foodprocessor chop the shallot first then add all ingredients on at a time with the final being the olive oil. Set aside and assemble the salad. Add the dressing to the salad, toss and let sit while you make the pork. Then sear the pork that should be at room temperature (for at least 20 min) in a cast iron skillet. Next smear the glaze on top of the pork in the skillet and place the pork on the oven for 18-20 minutes at 350 degrees. Arrange the salad on a serving platter and slice the pork thinly 1/4-1/2 inch slices on top of the salad for a pretty presentaion or serve on individual plates.
