DOUBLE CORIANDER CHILI image

Number Of Ingredients 16

2 to 3 tablespoons extra-virgin olive oil
2 large onions, chopped
8 large cloves garlic, minced
1 green bell pepper, diced
3/4 to 1 pound extra-lean ground beef
2 teaspoons ground coriander
1 teaspoon ground cumin
1 1/2 cups tomato sauce
1 cup beef or chicken broth or water
1 teaspoon salt
Freshly ground pepper to taste
1 can (15 ounces), white beans, drained
1 1/2 cups frozen lima beans, thawed
1/3 cup chopped cilantro
Ground red pepper
Pitted black or green olives, optional

Steps:

  • 1 Heat oil in a heavy skillet over medium heat. Add onions; cook, stirring, over medium heat, until tender and golden, about 8 minutes. Add garlic; cook 30 seconds. Spoon half of the mixture into a bowl. 2 Add green pepper, beef, coriander and cumin to skillet; cook, stirring often, over medium-low heat, until meat changes color, 7 minutes. Add tomato sauce, broth, salt and pepper. Heat to a simmer. Cover; cook over low heat until meat is cooked through, 10 minutes. 3 Add white beans and lima beans. Add a little water if chili is too thick. Cover; cook over low heat until stew is thick and well flavored, 10 minutes. Add reserved onion-garlic mixture, 3 tablespoons of the cilantro and red pepper to taste. Cover; heat through. Adjust seasoning. Serve topped with remaining cilantro and the olives.
