Crispy Parmesan Chickpeas image

Number Of Ingredients 8

15 ounces unsalted chickpeas
2 tablespoons olive oil
2 tablespoons Parmesan, finely grated
1/2 teaspoon garlic powder
1/2 teaspoon lemon rind, grated
1/2 teaspoon oregano, dried
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, finely ground

Steps:

  • Drain & rinse chickpeas; pat dry with paper towel.
  • Heat olive oil in large non-stick skillet over medium-heat. Add chickpeas and cook until golden brown & crispy, about 17 mins. stirring occasionally.
