Steps:
- Season the chicken on both sides with salt & pepper and brush with evoo. Grill chicken until done and place one slice of goat cheese on top of each breast and grill until warm. Top with Lemon Honey Sauce. Lemon Honey Sauce 1-t butter 2 t minced garlic 2-t chopped onion 2T white wine 2T freshly squeezed lemon juice Kosher salt 1 stick unsalted butter, cold Place butter, garlic and onion in a saucepan over medium-high heat and saute` until garlic and onion are soft and transparent. Do not let garlic and onion burn. Add white wine, lemon juice salt & white pepper. Bring the mixture to a boil and set to medium and let it reduce. After the liquid has reduced, and you have about 1/4 of what you started reduce heat to low and gradually add cold butter, beating with a whisk to allow butter to blend and melt into a creamy sauce. When chicken is ready, add sun-dried tomatoes and basil to the lemon sauce and put on low heat. Spoon sauce over the chicken and serve. Serve with your favorite pasta.
