Basic Thai Stir Fry
Serves two. Can be expanded. increase vegetables if desired.
Ingredients;
Meat: Chicken, Beef, Pork , or Tofu--3/4 lb.
Slice thinly and mix with 3 tbsp soy or thai fish sauce and 1tsp sugar and set aside
Stir Fry Sauce:
2 tbsp fish sauce
1/2 tsp cornstarch
3 tbsp dry sherry
2 tbsp oyster sauce
3 Tbsp plus 1 tsp lime juice
3 cloves garlic--minced or grated
1 1/2 tsp sugar
red pepper flakes or dried broken dry red chilies
optional: 2 Tbsp cilantro leaves
Directions:
Slice and mix meat and set aside
Make Stir Fry Sauce and set aside. Stir cornstarch
Heat Wok or skillet over medium heat and swirl oil. When shimmers, add two cloves of minced garlic, ginger to pan and then add a couple of dried crumbled red pepper pods. cook two minutes to release fragrance.
Add vegetables: sliced onions, sweet red peppers, bok choy, broccoli, cabbage, or combination: YOUR CHOICE. Stir fry until softened, but still firm. Remove from pan
Add oil and heat. Add garlic, ginger, and pepper and stir fry. Add meat with marinade and stir fry until no longer pink.
Add back vegetables and stir. Add stir fry Sauce and cook two minutes to heat thru and reduce without vegetables getting mushy. Take off heat and check seasonings: If too salty ad lime juce; If not salty enough, add fish sauce; If not spicy, add red pepper flakes or cayenne.
Optional:
Add cashews
Add scallions
