1234 Cake image

I always fall back on this dessert recipe when I don't have a lot of time. Everyone always loves it and it doesn't last long! You can use different types of pie filling and extract flavors. Sometimes I use apple pie filling and put some cinnamon in the cake batter or I'll use cherry pie filling with almond extract.

1 c vegetable or canola oil
2 c sugar
3 c flour
4 eggs
1 tsp pure vanilla extract
1 can(s) blueberry pie filling
1/4 c confectioners' sugar

Steps:

  • 1. In a large bowl mix together sugar, vegetable oil, eggs and extract until well blended. Add flour, one cup at a time, and mix until just blended. Pour into a 13 x 9 cake pan (lightly greased). Drop heaping teasponfulls of pie filling all over top of cake. Bake in 350 oven for approximately 25 minutes or until lightly golden brown (may take longer depending on your oven). Test doneness with toothpick.
  • 2. Let cool completely. Cut into squares and dust with confectioner's sugar.
