They are crispy on the outside and soft and gooey on the inside. They are the perfect appetizer for any occasion. The best thing about these delightful balls of yumminess is that the kids will flip over these as well as the grown-ups.

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 lb ground Italian sausage, cooked & room temperature
8 ounces Italian cheese blend
5 ounces sun-dried tomato pesto
2 cups seasoned panko breadcrumbs, divided

Steps:

  • Combine potatoes, sausage, cheese, pesto and 1/2 cup of bread crumbs in a mixing bowl. Mix thoroughly.
  • With wet hands, roll potato mixture into 1 1/2 inch balls. Place remaining bread crumbs on a large plate. Roll each potato ball in bread crumbs. Make sure they are evenly coated.
  • Place poatao balls on a large plate or pan and put in fridge for at least 30 minutes or until ready to use.
  • Meanwhile, preheat oven to 380 degrees.
  • Place potato balls on a large non-stick cookie sheet. Bake for 20 minutes and golden brown.
  • **serve with your favorite marinara sauce**.

I fix this every Christmas, one of my many adopted sons, Christopher has to have an extra making of this recip. So as you can guess I bake double-well if you saw Chris how could you turn down those puppy dog eyes!!!

3 c. biscuit mix (i use bisquick mix)
1 c. sharp cheddar cheese, shredded
2 c. sweet potatoes, cooked/mashed (not can)
2 lb. sausage (i use hot)

Steps:

  • 1. combine all ingreds., well. Roll into balls and place on greased cookie sheet.
  • 2. Bake at 350 for 20 mins., or til lightly brown.
  • 3. When I'm mixing the ingreds., I wear plastic gloves and mix with my hands. Also I use an icecream scooper to scoop ount onto pan-all come out same size.

I didnt have any bisquick mix for the sausage balls so I made them with mash potatoes!! These are really good, quick to gobble up. They are also good cold the next day or for a quick fry for breakfast.

1 lb mild Italian sausage (ground)
1 cup cheddar cheese (grated)
1/2 cup Baby Spinach (diced)
2 cups mashed potatoes (cooled)
2 garlic cloves (diced)
1/2 cup red onion (diced)
2 teaspoons fresh cilantro
2 teaspoons fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup cottage cheese

Steps:

  • Preheat oven 350°F.
  • Peel, cut, boil then mash potatoes. Let cool.
  • Once potatoes are cooled, Combine all ingredients in a bowl.
  • Shape into 1 inch balls and place in casserole dish or 9x13 pan and Bake for 35 minutes or until the sausage is cooked.
