1 potato, peeled (cut into about 1/4-inch cubes)
2 tablespoons oil
1 tablespoon butter
1 large red bell pepper, seeded and chopped
6 green onions, chopped (can use more or less green onion, or use 1 large yellow onion, chopped)
1 tablespoon minced fresh garlic (or to taste)
1 pinch dried oregano
8 large eggs
3 tablespoons whipping cream (or use half and half)
salt and pepper
2 cups grated cheddar cheese (can use more or less)

Steps:

  • Cook the cubed potatoes in boiling salted water until firm-tender (about 7-8 minutes) drain.
  • Heat oil and butter in a large oven-proof skillet over medium heat.
  • Add in the red pepper and green or yellow onions with oregano; saute for about 5-6 minutes, adding the garlic the last few minutes.
  • Add in the cooked potatoes and saute for 1 minute.
  • In a bowl whisk together eggs, whipping cream, salt and pepper, then pour over veggies in the skillet; reduce heat to medium-low, cover the skillet and cook until the eggs are set around the edges (about 7-8 minutes, do not over cook!).
  • Sprinkle the top with grated cheddar cheese.
  • Set the oven to broil.
  • Place the skillet under the broiler heat (about 4-5 inches from heat) cook until the cheese is melted and very lightly browned.
  • Let the frittata sit for 1 minute, then slice into 8 wedges, or as desired.
  • Delicious!

1 tablespoon oil
2 tablespoons butter (can use more)
3 medium onions, thinly slices
8 large eggs
3/4 cup whipping cream
1 1/4 cups cooked potatoes (diced into about 1/2-inch cubes)
1/2 cup crumbled blue cheese (can use lass)
1 tablespoon fresh thyme
salt and pepper

Steps:

  • Heat the oil with butter in a large frypan over medium-low heat.
  • Add in the onion slices; saute for about 10-15 minutes or until lightly browned and caramalized, then season with salt and pepper (leave in the skillet).
  • Sprinkle the cooked potato cubes over the onions and sprinkle with black pepper.
  • In a bowl whisk the eggs and whipping cream together with salt and pepper; pour over the onions and potatoes.
  • Sprinkle with blue cheese and thyme leaves.
  • Cook covered for about 6 minutes or until almost set.
  • Place under the broiler for about 1 minute.

1 1/2 lbs baking potatoes, peeled and cut into 1/2-inch cubes
1/4 teaspoon salt
8 large eggs
1/8 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
3 ounces sliced hard salami, slices halved and then cut crosswise into thin strips
1 tablespoon butter
1/4 lb mild goat cheese, such as montrachet, crumbled

Steps:

  • In a 12-inch nonstick ovenproof frying pan or cast-iron pan, heat 1 tablespoon of the oil over moderate heat.
  • Add the potato and salt and sauté until the potato cubes are brown and just done, about 5 minutes. Remove from the pan and let cool.
  • In a large bowl, beat the eggs with the pepper and Parmesan. Stir in the salami and the potato.
  • Add the butter and the remaining 1 tablespoon oil to the pan. Melt the butter over moderate heat.

1 medium onion, thinly sliced
1 medium potato, thinly sliced
1 small zucchini, thinly sliced
1 red pepper, diced
1/4 cup white wine
4 -5 leaves fresh sage
1/2 teaspoon salt
fresh ground pepper, to taste
6 eggs, beaten
1/2 teaspoon salt

Steps:

  • Heat olive oil on medium-high in a large, oven-proof skillet.

1/4 teaspoon salt
2 cups chopped scallions
1/2 teaspoon black pepper
5 ounces goat cheese, chilled

  • Put oven rack in middle position and preheat oven to 375˚F.
  • Whisk together eggs, salt, and pepper until just combined.
