PARMESAN-ROASTED TOMATOES
A delicious vegetable side dish that goes with pretty much anything.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place tomatoes in a bowl and toss gently with olive oil and season with salt and pepper. Arrange on a baking sheet and top each tomato half with Parmesan cheese.
- Bake in the preheated oven until Parmesan cheese is melted and slightly browned, 15 to 20 minutes.

PAN ROASTED TOMATOES
I always roast my tomatoes in a skillet or on a flat griddle. There are oven methods of roasting, but I don't have enough experience to post that method.

Steps:
- 1. Slice tomatoes fairly think.
- 2. Turn heat to med high temp.
- 3. Lightly oil NON STICK surface of skillet or flat griddle. Lay tomato slices in a single layer and allow to cook for about 7 min, or longer for more caramelization. Once they start looking tender I use a fork and slide it under the slice to flip.
- 4. Once I flip I remove from or turn off heat.
- 5. NOTE: The longer you leave them on the first side cooking, the more caramelized they will get, but the softer they get too, that's why you want somewhat thick slices, they will hold up better.
BALSAMIC ROASTED TOMATOES
Steps:
- Preheat oven to 400 degrees F. Line a baking sheet with foil.
- Place tomato slices on baking sheet. Brush with balsamic dressing and sprinkle Parmesan over tops. Top with chopped basil. Roast for 15 minutes. Serve hot.
