Baked Potato with Shallot Corn Butter image

4 large idaho potatoes scrubbed
1 c corn kernels
8 oz soft butter
1 shallot chopped
1 tsp lime juice
3 Tbsp chives chopped
salt and pepper

Steps:

  • 1. Preheat oven 400 degrees. Prick the potatoes with a fork. Bake the potatoes until a fork goes in easily Remove from oven and cut down the middle. Season with salt and pepper
  • 2. Cook the corn kernels in boiling water for about 3 minutes. Drain.
  • 3. Place the shallots, butter, lime juice, half of the corn kernels and chives in a food processor. Process until well mixed. Stir in the other half of the corn and put on top of potatoes
