2 prepared 8 inch pastry shells
2 onions, chopped
1 cup shredded sharp Cheddar cheese
1 egg, beaten
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cook onions in salted boiling water for 5 minutes. Drain well and stir in cheese. Mix in almost all the egg and season with salt and pepper to taste.
  • Pour mixture into pastry-lined pan, and place second sheet of pastry on top of filling. Seal edges and cut vents in top. Brush pastry with remaining egg and place in preheated oven. Bake 30 minutes. Can be served hot or cold.

1 1/4 cups finely crushed saltine crackers (36 squares)
1/4 cup butter or margarine, melted
2 tablespoons butter or margarine
2 large onions, chopped (2 cups)
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs
Chopped seeded tomato and sliced green onion, if desired

Steps:

  • Heat oven to 325°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, mix cracker crumbs and 1/4 cup melted butter; press evenly in bottom and up side of pie plate.
  • In 10-inch skillet, melt 2 tablespoons butter over medium-high heat. Cook onions in butter 5 to 6 minutes, stirring frequently, until light brown. Spread onions in crust. Sprinkle with cheese.
  • In medium bowl, beat milk, salt, pepper and eggs with fork or wire whisk until blended; pour over cheese.
  • Bake 40 to 45 minutes or until knife inserted in center comes out clean. Garnish with tomato and onion. Serve immediately.

3 cups unbleached all-purpose flour
1 1/2 sticks (3/4 cup) cold unsalted butter, cut into 1/2-inch cubes
1/2 teaspoon fine sea salt
8 to 10 tablespoons ice water
For filling and glaze
1 medium boiling potato (5 oz)
2 cups finely chopped onion (1 large)
2 tablespoons unsalted butter
3 large eggs
1/4 cup heavy cream
1 teaspoon finely chopped fresh thyme or 1/2 cup finely chopped fresh parsley
1/4 teaspoon fine sea salt
1/4 teaspoon black pepper
9 oz good-quality white Cheddar, coarsely grated (2 1/2 cups)
Special Equipment
a pastry or bench scraper; a 9-inch tart pan or pie plate

Steps:

  • Make dough:
  • Blend together flour, butter, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
  • Drizzle evenly with 8 tablespoons (1/2 cup) ice water and gently stir with a fork (or pulse in processor) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until incorporated, then test again. (Do not overwork mixture, or pastry will be tough.)
  • Turn out mixture onto a work surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute butter. Gather dough together with scraper and press into 2 balls, one slightly bigger than the other, then flatten into disks. Chill each disk, wrapped in plastic wrap, until firm, at least 1 hour.
  • Make filling and glaze while dough chills:
  • Peel potato and cut into 1/4-inch dice (3/4 cup). Steam potato in a steamer set over boiling water, covered, until just cooked through, about 3 minutes. Transfer to a plate to cool.
  • Cook onion in butter in a 10-inch heavy skillet over moderately low heat, stirring, until softened, 8 to 10 minutes. Transfer to plate to cool.
  • Whisk together 2 eggs, cream, thyme, salt, and pepper in a large bowl until combined well. Stir in potato, onion, and cheese.
  • Whisk remaining egg in a small bowl and reserve for egg glaze.
  • Assemble and bake pie:
  • Put oven rack in middle position and put a large baking sheet on it, then preheat oven to 425°F.
  • Roll out larger piece of dough into a 13-inch round on a lightly floured surface with a lightly floured rolling pin and fit into tart pan. Spoon filling evenly into pie shell and brush some of egg glaze on rim of shell.
  • Roll out smaller piece of dough into a 12-inch round in same manner, then cover pie with it. Trim edges of pie, leaving a 1/2-inch overhang, then press edges together and crimp decoratively.
  • Brush top of pie lightly with some of remaining egg glaze. Cut several steam vents in top crust with a small sharp knife.
  • Bake pie on hot baking sheet until golden brown, 35 to 40 minutes. Cool on a rack at least 15 minutes. Serve warm or at room temperature.

Cheese and onion are old friends and were made to go together. This delicious savory pie is super easy to prepare with store-bought sheets of puff pastry, and is great for brunch, or for dinner with a large tossed salad. From the "Everyday Vegetarian".

2 tablespoons olive oil
2 large onions, chopped
6 ounces grated cheddar cheese
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon prepared English mustard
2 teaspoons Worcestershire sauce
2 eggs, beaten separately
salt and pepper
2 sheets puff pastry

Steps:

  • Preheat oven to 375F (190C).
  • Line an oven tray with baking paper and set aside.
  • Heat the olive oil in a large skillet and saute the onions over medium heat for 5- 7 minutes, or until golden and soft.
  • Transfer to a bowl and allow to cool for 10 minutes, before adding the cheese, parsley, mustard and Worcestershire sauce.
  • Mix well, then add 1 beaten egg to the bowl, with salt and pepper to your taste, and mix well again.
  • Using a cake pan or dinner plate as a guide, cut each sheet of pastry into a 9 inch (23 cm) circle.
  • Lay one sheet of pastry on the prepared baking tray.
  • Dollop the cheese mixture over the pastry base, piling it higher in the middle, and leave a narrow border around the edge.
  • Lightly brush the border with some of the second beaten egg.
  • Place the remaining sheet of pastry over the filling, stretching lightly if necessary to neatly fit the bottom sheet.
  • Press and seal the edges well.
  • Brush the top with the remaining beaten egg, and cut two slits in the top to allow the steam to escape.
  • Bake in the oven for 10 minutes, before reducing the heat to 350F (180C).
  • Cook a further 20-25 minutes or until pastry is crisp and golden brown.

POTATO CHEESE AND ONION PIE

This has been a favorite of mine since I was about 14 when I first made it. Experiment with different cheeses like gruyere; and I would suggest sprinkling seasoning between the layers for more flavor. Sauteing the potatoes and the onions with some chopped garlic adds a nice touch also.

3 -5 tablespoons ice water
1 teaspoon salt

  • Add water if necessary.
  • Divide into two parts.
  • Grease a 9-inch pie pan.
  • Roll out one part of dough to fit the pan. Set aside.
  • For filling, melt 2 tablespoons butter in each of two skillets.
  • Add onion slices to one and potato slices to the other.
  • Saute each vegetable for 8 to 10 minutes or until onions are soft and potatoes are tender crisp.

Andouille Sausage Pizza Pie with Onion Confit and Fontina Cheese image

2 yellow onions
1/4 cup extra-virgin olive oil
Pinch sugar
1/2 cup Champagne vinegar
1/2 tablespoon salt
2 tablespoons white wine
4 Roma tomatoes
2 teaspoons fresh thyme leaves
3 cloves garlic, sliced thin
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
Freshly ground black pepper
1 pound pizza dough
Cornmeal
1 -ounce Fontina cheese, grated
2 tablespoons prepared Onion Confit
1 link Louisiana-style andouille sausage, cut into 1/4-inch slices
6 to 8 slices Oven-Dried Tomatoes
1 -ounce mozzarella, grated
2 teaspoons freshly chopped parsley leaves

Steps:

  • Slice the onions in 1/4-inch thick. In a heavy bottom pot, slowly simmer the onions in the olive oil over medium-high heat for a few minutes until softening. Add all the remaining onion confit ingredients. Bring to steamy simmer. Reduce heat and cover with a parchment paper lid that has a 2-inch hole in the center to allow the steam to escape but protect it so that it can cook low and slow. Press the parchment paper down to touch and cover the onion mixture. Place the covered pan into a 250 degree F oven and bake for 2 to 3 hours or until the onions have softened and the liquids have reduced to a sticky gravy that clings to the onions.
  • Slice ends off the tomatoes. Cut the tomato through into 2 to 3 slices. In a mixing bowl mix the tomatoes, thyme, garlic, olive oil, salt and pepper. Gently toss to coat the tomatoes. Place on sheet pan and cook at 250 degrees F for 2 to 3 hours until the tomatoes are concentrated and dehydrated. (The onions and the tomatoes can cook in the oven at the same time.)
  • Raise the oven temperature to 450 degrees F.
  • Stretch or roll the dough to about 10 to 12 inches. Place a piece of dough on a pizza paddle or baking sheet that is sprinkled with cornmeal. Oil the edges of the dough and top it with Fontina, 1/2 of the onion confit, the sausage slices, tomatoes and top with mozzarella. Bake until golden brown. Top with parsley and serve hot.

LANCASHIRE CHEESE-AND-ONION PIE



Lancashire Cheese-and-Onion Pie image

1 1/2 cups flour, plus more for dusting
6 tablespoons butter, divided, plus more for greasing
4 tablespoons lard
3 tablespoons ice water, plus more as needed
3 medium onions, thinly sliced
1/4 teaspoon ground white pepper
1 cup boiling water
1/2 pound Lancashire cheese, grated (Cheddar or Cantal also work)
Milk, to seal and glaze
Salt

Steps:

  • Combine the flour and a large pinch of salt in a large bowl. Add 4 tablespoons butter and the lard, and use your fingers to gently rub the fat into the flour until it has the texture of coarse bread crumbs.
  • Mix in just enough ice water to bind the mixture, about 3 tablespoons, and lightly knead the dough until well combined and smooth. When you can mold the mixture into a ball, do so. Cover with plastic wrap and refrigerate for at least 30 minutes -- or freeze for 10 -- to ease rolling.
  • Heat the oven to 350. Add 2 tablespoons butter to a large skillet over low heat. When the butter melts, add the onions, a pinch of salt and the ground white pepper; cook slowly for about 10 minutes, never browning.
  • Turn the heat to medium and slowly pour in the water. Continue to cook, stirring occasionally, until most of the liquid cooks off, about 10 minutes. Remove the onions from the pan and place them on a plate to cool
  • Grease the bottom of a 9-inch pie dish and sprinkle a countertop with flour. Unwrap the dough and divide it into two balls, one twice as big as the other. Put them on the surface and sprinkle the tops with flour. Using light pressure, roll each one from the center outward, adding more flour as needed and turning them over once or twice during the process. When the larger ball is roughly 10 inches in diameter, gently move it into the pie dish and press it firmly into the bottom and sides. Prick it all over with a fork.
  • Layer the onions and cheese on top of the dough in the dish, then carefully cover with the remaining dough -- it should be about 8 inches in diameter. Press the edges together, gently but firmly, and brush the top and edges with milk. Use a knife to make 3 small incisions in the top of the crust so steam can escape.
  • Place the pie on a baking sheet and bake until the crust is nicely browned and the insides are bubbly, 45 minutes to an hour. Cool a bit before slicing into wedges and serving.

Once you've tried this pie,you will make it all the time. It is so easy to make . There are other pies out there that are similar but the Gruyere cheese gives it a rich taste.

5 slice bacon, fried and chopped
2 large yellow onions, chopped
1 pinch salt
3/4 c ricotta cheese
1 egg yolk
1 pinch pepper
3/4 c gruyere cheese
1/4 c parmesan cheese
1 frozen pie shell or your own pie crust

Steps:

  • 1. Preheat oven to 350. Fry bacon, remove and pat with paper towels and leave fat in the pan.
  • 2. Add onions to the pan and brown. Sprinkle with salt. Once they are browned , let them cool.
  • 3. Mix ricotta, egg yolk and Gruyere in a separate dish. Spread into the pie shell. Scrap onions on top of that, ( even the little brown bits) than shake Parmesan on top. Sprinkle with pepper.
  • 4. Spread bacon evenly on top of that and bake until the pie shell has baked, approx. 30 - 40 minutes depending on your oven. ( when the pie shell has baked a golden brown, that's when I take it out)
  • 5. Enjoy all the raves!!

WELSH CHEESE, POTATO AND ONION PIE

6 medium potatoes
2 medium onions
6 to 8oz strong welsh cheese (or use a good mature cheddar cheese)
1 tsp salt
1 1/2 tsp black pepper
1 full sprig(s) fresh dill, chopped
2 Tbsp fresh chives, chopped (for garnish)

Steps:

  • 1. Preheat oven to 350°F (170°C). Butter or grease a medium-size baking dish; set aside.
  • 2. Rinse potatoes and scrub away debris. Peel if you wish. Slice potatoes very thinly, and place potato slices in a colander, and rinse in cool running water. Drain well and set aside.
  • 3. Peel and thinly slice the onions; set aside.
  • 4. Coarsely grate the cheese; set aside.
  • 5. Place a layer of onions in baking dish, then add a layer of potatoes. Season potato layer with salt, pepper, and dill (adding more or less as desired). Top with a layer of cheese. Drizzle the water down each side of the dish so you don't disturb the layers.
  • 6. Cover with lid (or you can use foil, but you'll want to butter it to prevent sticking). Place baking dish in oven, and bake for 60 minutes. Remove the lid and bake uncovered for an additional 30 to 45 minutes or until the cheese forms a crust on top and is lightly browned. Serve immediately while still hot, garnished with chopped fresh chives.

VIDALIA ONION PIE WITH BACON AND CHEESE

Vidalia onions are an exceptionally sweet variety of onion (some devotees insist they can be eaten out of hand like apples) that are grown in and around the town of Vidalia in southeastern Georgia. Other types of sweet onion - such as Walla Walla and Maui - or red onions can be used instead. Prep time does not include chilling.

1/4 teaspoon salt
1/2 cup chilled butter, cut into pieces (4 ounces)
3 tablespoons sour cream
1 -2 tablespoon water
3 slices bacon
1 lb vidalia onion, thinly sliced
3 eggs
1/2 cup milk
1/2 cup sour cream
1 tablespoon flour
1/4 teaspoon nutmeg

1 cup grated swiss cheese (about 1/4 pound)
2 tablespoons chopped parsley, for garnish

Steps:

  • MAKE THE PASTRY: In a large bowl, combine the flour and salt. With a pastry blender or two knives, cut the butter in until the mixture resembles coarse meal. Blend in the sour cream. Sprinkle on 1 tablespoon of the water and work it into the dough, adding up to 1 more tablespoon of water to form a dough that can be gathered into a ball. Pat the dough into a disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • On a lightly floured surface, roll the dough into a 12-inch circle, then fit it into a 9-inch pie pan. Trim the overhang to an even 1/2-inch all the way around. fold the overhang over and crimp the dough to form a decorative border. Prick the bottom of the crust lightly with a fork. Refrigerate the pie shell for 30 minutes.
  • Preheat the oven to 400 degrees. Line the pie shell with foil and fill with dried beans or pie weights. Bake for 8 minutes. Remove the foil and beans, and bake the pastry for 8 to 10 minutes longer, or until lightly golden. Remove the pie shell from the oven and reduce the the oven temperature to 375 degrees.
  • MAKE THE FILLING: In a large skillet, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the skillet, drain the bacon on paper towels; crumble and set aside.
  • In the bacon fat, saute the onions over medium heat until softened but not browned, about 10 minutes.
  • Meanwhile, in a medium bowl, whisk together the eggs, milk, sour cream, flour, nutmeg, and pepper.
  • Spread the onions evenly over the bottom of the pie shell. Sprinkle the reserved bacon and the cheese evenly on top. Pour the custard mixture into the pie shell and bake for 20 minutes, or until the custard has set and the top is golden brown.

CHEESE AND ONION PIE

This recipe was originally passed on to my Dad by his canteen cook at work. It was a firm family favourite with us and Mum gave me the recipe when I left home. The most important thing to do is make sure you use organic onions and extra mature cheddar, these two ingredients will give you the best flavour and make it something you want to do again and again. The method is very simple so anyone can make it.

Steps:

  • Heat the oven to 180C. Grease and flour a 9" pie dish. Rub oil over whole of the inside of the dish, bottom and sides. Roll out the pastry to fit then place in the tin. Flatten pastry into bottom and sides thoroughly. With excess pastry over the sides take a rolling pin and roll over the edge of the dish to get a lovely neat edge and remove the excess. Prick the bottom with a fork all over.
  • Peel potatoes, chop into quarters and boil until just soft. Drain and allow to dry a bit.
  • Slice the onions and add to a large mixing bowl. Add all the other ingredients and mix well. Add potatoes and mash into the mix with a knob of butter.
  • Fill the pastry case and level out. Place in the oven for at least 40 mins check the bottom of the pie if the pastry is evenly golden it is ready. If not pop back in for 5 mins at a time and keep checking until done.

Steps:

  • Filling Sauté the onions and ham with the garlic in 2 tablespoons of the butter in a skillet until tender, then let the mixture cool. Preheat the oven to 350 degrees F. 455 g shortcrust pastry
455 g waxy potatoes, very thinly sliced
1 small onion, very thinly sliced
100 g red leicester cheese or 100 g other hard cheese
salt
fresh ground black pepper
145 ml cream

Steps:

  • Preheat the oven to 180°C Roll 2 thirds of the pastry on to a lightly floured work surface and use it to line a 23cm flan dish.
  • Arrange the potatoes in a single layer over the base of the dish, then top with a layer each of the onion and cheese. Repeat until the potatoes are all used, seasoning well between each layer.
  • Pour over the cream.
  • Roll out the remaining pastry to make a lid. Lightly dampen the edges of the pie with water. Place the pastry lid on top and pinch the edges together to seal well.
  • Bake for 1 - 1 1/4 hours, until the potatoes and onions are tender. Leave for 10 minutes before serving to allow the cheese to cool slightly.

"The ubiquitous tyropitta bears little resemblance to the dizzying variety of savory and sweet cheese-based Domokou and honey pies popular throughout Greek regional cuisine. In this version, from the Cycladic island of Folegandros, the filling is flavored with onions-almost as strong a presence as the feta-and encased in a thick bread crust. Kalasouna was traditionally made on Saturdays, the same day on which bread was baked, since the shell was made from a piece of the leavened dough to which some olive oil was added. This version is slightly simpler, but as tasty." Prep time is a guess.

4 cups all-purpose flour
1 tablespoon baking powder
1 pinch salt
2/3 cup olive oil
2/3 cup water
2 cups red onions, finely chopped
3 scallions, thinly sliced (white and most of the green parts)
salt
10 1/2 ounces feta cheese, crumbled
1 1/2 cups thick sheep milk or 1 1/2 cups strained yogurt
1 1/4 cups toasted breadcrumbs
black pepper, freshly ground
2 large eggs, lightly beaten
3 -4 tablespoons milk
1 1/4 cups sesame seeds

Steps:

  • In a large bowl, mix together the flour, baking powder and salt. Add the oil and rub the ingredients between your hands until their texture is similar to breadcrumbs. Gradually add enough water to made a soft, elastic dough. Cover with plastic wrap and let rest for 2 to 3 minutes.
  • To make in a food processor, combine the dry ingredients and pulse to mix, then, with the motor running, add the liquids. (Let the dough rest in the food processor for 2 to 3 minutes).
  • Place the onions and scallions in a colander and sprinkle generously with salt. Knead with your hands for a few minutes to wilt the onions and scallions, then rinse under very warm running water. Drain well and squeeze with your hands to extract as much liquid as possible.
  • In a large bowl, combine the onions and scallions, cheese, yogurt, breadcrumbs and pepper to taste. Taste and add salt if necessary-feta is usually quite salty. Stir in the eggs.
  • Preheat the oven to 400°F Oil the bottom and sides of a 13 x 9-inch baking dish and sprinkle with 2 tablespoons of the sesame seeds.
  • Divide the dough into 3 pieces. Take 2 of the pieces and cover the other. Briefly knead together the pieces and roll the dough out on a lightly floured surface into a sheet large enough to cover the bottom and sides of the baking dish, with a 1/2 inch overhang.
  • Fit the dough into the dish and add the filling. Roll out the remaining piece of dough into a rectangle just a little larger than the dish and place it over the filling.
  • Fold the overhanging bottom crust inward. Pinch the two edges together, turn them inward and press to seal, making a neat cord around the edge of the pan. Flatten the cord with the tines of a fork, to prevent it from sticking out, because it will burn during baking. If you like, with a pastry wheel, score parallel lines on the top of the crust, crossing them to make diamond-shaped patterns on the pie, being careful not to cut through the crust.
  • Brush with the milk and sprinkle with the remaining 2 tablespoons sesame seeds.
  • Bake for 1 hour, or until the crust pulls away from the sides of the pan and is golden brown on top. Let cool before cutting. Serve warm or at room temperature.

Rustic Melted-Onion and Cheese Picnic Pie image

A delicious pie for picnics, potlucks, lunch, or as a side dish with a simple main course such as baked chicken pieces or fish. If you have a mandoline, use that for slicing the onions, but a sharp knife and a cutting board will be just fine: pour a glass of wine and sit outside so your eyes don't burn! Note that you can choose which cheese to use: for the photo's I used Camembert, which goes on the bottom, and which will melt deliciously as you cut the pie. If the pie is to be eaten cooled or cold, use feta cheese, and put it on top of the pie as its reaction to oven heat is different from soft cheeses. I made this with feta for a picnic, but if it's to be eaten fairly soon after baking, I would use Brie or Camembert. Yummy!

2 -4 tablespoons olive oil
1 3/4 lbs sweet onions (about 875 g weighed after peeling)
1 tablespoon balsamic vinegar or 1 tablespoon apple cider vinegar
1 tablespoon brown sugar
4 anchovy fillets (don't rinse)
1/2 teaspoon ground nutmeg
3 tablespoons fresh thyme or 1 tablespoon finely chopped fresh rosemary
3/4 cup fresh parsley, finely chopped and loosely measured
14 ounces puff pastry, ready-made
2 eggs, beaten
1/2 lb brie cheese or 1/2 lb feta cheese
1/2 teaspoon black pepper, freshly ground
1/2 cup dried breadcrumbs
salt (if needed)

Steps:

  • Use a glass or other ovenproof pie dish for this dish.
  • Peel and slice the onions very thinly. If you have a mandoline, use that to slice the onions.
  • Fry the onions in a pot (a pan/skillet might be too shallow). Use only a low-to-medium heat. You can put the lid on the pot. Stir occasionally, and cook the onions for 40 minutes, or until they are very soft and "melting". (Decide how much olive oil you need) Sweet onions are nicest, but red onions are also great, and will just cause more eye-watering!
  • Add the balsamic vinegar and the sugar, and stir well. Cook a little longer.
  • Please do not leave out the anchovy fillets if you dislike them. Anchovies have the unique ability to disappear into a dish and only add a subtle completely non-fishy flavour -- honestly! Chop or break up those anchovies finely, (no need to rinse them), and stir. They will dissolve and disappear into the onion mixture.
  • Sprinkle over the nutmeg, add the thyme or rosemary (or both), and the parsley, and stir into the onions. If liquid has formed at the bottom, turn heat higher, stir, and cook off the excess liquid.
  • Pull off the heat and leave.
  • While the onions are cooking, beat the eggs and roll out the pastry.
  • Roll the pastry (cold!) thinner. Use flour or cornflour on your counter or wherever you roll out the pastry, and if necessary flour your rolling pin. In South Africa shop-bought puff pastry comes in 400 g rolls, so all of it has to be defrosted: keep the cuttings for another purpose or chuck away.
  • Heat oven to 400 deg F or 200 deg Celsius.
  • Line the tart plate with the pastry, and crimp the edges neatly.
  • Paint the pastry with some of the beaten egg, concentrating on the edges. If this job is finished long before the onions are ready, put the prepared plate in the fridge to keep cool.
  • When the onions are ready, scrape them into another bowl and stir to cool them.
  • If using Brie or Camembert, cut it up into bite-sized chunks and spread on the bottom of the pastry.
  • Add the rest of the beaten eggs to the onion mixture, then spread it over the cheese. Sprinkle with the pepper and the breadcrumbs.
  • If using feta cheese, put the onion-egg mixture in first, then crumble the feta over the top, and top with pepper and breadcrumbs.
  • Bake in the preheated oven for 30 minutes. Lower the heat to 350°F/180°C after the first 15 minutes.
  • *Don't add extra salt unless the final mixture tastes too bland. The anchovies and feta are both salty. Do remember that Brie or Camembert is preferable if you can serve this pie soon after it is ready, because if these cheeses cool down completely, they can become rubbery.

Pastry for single-crust pie (9 inches)
2 tablespoons butter
3 cups sliced onions
1-1/2 cups finely chopped cooked turkey
2/3 cup crumbled blue cheese
4 large eggs, lightly beaten
1-1/4 cups 2% milk
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon coarsely ground pepper
1/8 teaspoon ground nutmeg
Minced fresh parsley

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium-low heat; cook onions until soft, 15-18 minutes, stirring occasionally. Cool slightly., Layer turkey, onions and cheese in crust. In a bowl, whisk together eggs, milk and seasonings; pour over top., Bake on a lower oven rack 10 minutes. Reduce oven setting to 350°; bake until a knife inserted near the center comes out clean, 40-50 minutes. Let stand 15 minutes before cutting. Sprinkle with parsley.
