PEPPER CRUSTED FILET MIGNON image

Number Of Ingredients 10

4 6 - 8 ounce beef filet steaks, 2 to 3 inches thick
1/8 cup kosher salt
1 cup freshly cracked black pepper
1/4 cup unsalted butter, at room temperature
2 ounces blue cheese
4 heads roasted garlic
1/4 cup olive oil
1/4 cup fresh thyme leaves
Salt to taste
4 slices crusty bread

Steps:

  • To roast garlic: Remove some of the papery outer peel. Slice 1/4 inch off the garlic top exposing the garlic cloves Put garlic on aluminum foil and drizzle 4 tablespoons of olive oil over them. Wrap in foil and bake in a 300 degrees oven for about 1 hour or until the garlic is soft to touch For Steak: Rub steaks with the salt and pepper, use full amount Grill them over hot fire for 6 - 8 minutes on each side (medium rare) While the steaks are resting, combine the butter and blue cheese in a small bowl, mix until well combined, and set aside. Squeeze the roasted garlic pulp out of the peels into a bowl, add the olive oil, thyme,and salt and pepper to taste, mix will and set aside, Grill the bread for about 2 minutes on each side, until golden brown Spread the garlic mash on the toast, slice the steaks thin and place on top of the toast, then put a spoonful of the butter on each and serve.
