Number Of Ingredients 8

1/2 c cornmeal
1/2 c boiling water
1 c buttermilk
1/2 tsp salt
2 eggs, well beaten
2 Tbsp melted butter
1/4 tsp baking soda
1 tsp baking powder

Steps:

  • 1. In a casserole dish, melt butter.
  • 2. Scald meal with boiling water.
  • 3. Add beaten eggs and buttermilk combined with baking soda, salt, & baking powder. Beat 1 min.
  • 4. Pour in melted butter.
  • 5. Pour mixture into hot casserole dish & bake at 375 for 20-25 minutes, until brown. Serve immediately.

2 cups milk
2 eggs, beaten
1 tbsp. lard
1 tbsp. butter
1 tsp. sugar
1 cup cornmeal
1 tbsp. flour, sifted
2 tsp. baking powder
1 tsp. salt

Steps:

  • Combine and sift cornmeal, flour, baking powder, salt and sugar. Stir in eggs and milk. Melt lard and butter in a baking dish and pour in batter. Cook 45 minutes in a 350 degree oven.
