My mom has made this sauce ever since before I was born. My whole family and all my friends love it. I love it cause it's sweet and different from all the other spicy and tart sauces.

2 tablespoons vegetable oil
½ onion, minced
½ green bell pepper, chopped
1 pound ground beef
4 slices bacon
2 (4 ounce) jars mushrooms, drained
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons garlic powder
2 tablespoons dried oregano
½ cup white wine
¾ cup sugar
salt and pepper to taste

Steps:

  • In a skillet over medium heat, cook onion and bell pepper in oil until transparent. Add beef to onions and peppers; cook until brown. Set aside.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve drippings and crumble bacon. Combine drippings and crumbled bacon with the beef mixture.
  • Add mushrooms, tomato sauce, tomato paste, garlic powder and oregano. Pour in wine while stirring. Stir in sugar, then salt and pepper. Cook until hot.

NONA'S MARINARA SAUCE

Number Of Ingredients 9

5 cloves garlic
Coarse salt and freshly ground black pepper
1/4 cup plus 2 tablespoons extra-virgin olive oil, divided
1 large onion, diced
3 carrots, peeled and diced
2 tablespoons tomato paste
1 cup fresh basil leaves
2 tablespoons freshly picked oregano leaves
1 (28-ounce) can crushed tomatoes

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel 5 cloves garlic and place them in a square of foil. Sprinkle the cloves with salt and pepper and drizzle with 2 tablespoons olive oil. Wrap up the foil and place it directly on the oven rack. (Be sure that the foil packet is secure so no oil will leak out.) Roast the garlic until it's brown and tender, about 25 minutes. Allow to cool enough to touch and squeeze the garlic from the skins. Set aside.
  • Saute onions and carrots with the oil in a medium saucepan. Add tomato paste and stir well. This will cook off the tomato paste and give a nice orangy color. Cook for about 10 minutes. When vegetables are softened add the roasted garlic, salt, pepper, basil, oregano and stir together until incorporated. Pour in the tomatoes. Fill the empty can with water and add it to the pan. Bring to a boil then lower the heat to a simmer. Simmer for 1 hour, uncovered. Stir occasionally. Once sauce is ready carefully pour it into the food processor and puree until smooth.

This is my nonna's old standby, when I was growing up, I would live for the weekends that we went to visit her, cause she'd make this everytime...It isnt loaded with ingrediants, and thats what makes it so good. Simple, fresh Italian flavours. It will nver taste the same as hers but its close enough for me!

4 small chicken thighs, bone in
2 Italian sausages
1 tablespoon extra virgin olive oil
1 large carrot, peeled
1/2 large onion
1 clove garlic, chopped
1 bay leaf
1/4 cup dry white wine
1 (28 ounce) can crushed tomatoes, plus
1 (14 ounce) can crushed tomatoes (I actually like using the tomatoes in the tall glass container, italian brand)
salt and pepper
1 pinch ground cloves
parsley
basil (if using fresh, use lotsa basil, and add close to the end)

Steps:

  • Pre-heat oven to 350°F.
  • Put meat on a baking tray and bake, until juices run clear, about 20 minutes Process the carrot and onion together in a food processor, till smooth.
  • Fry garlic in oil in a large saucepan, add the carrot and onion and bay leaf, fry for 5 minutes.
  • Add tomatoes and wine, bring to a boil.
  • Lower heat to simmer and add the cooked meat, leaving whole.
  • Add spices.
  • Let simmer 2hrs on low.
  • Serve over pasta.
  • Top with freshly grated Parm cheese. When the sauce is ready to serve take the meat out and put on a serving dish and pass with the sauce.......the meat will be melt in your mouth good!!
