This New England boiled dinner has been a popular dish among our family for a long time. When we moved to California in 1960, I'd make it often to remind us of the East Coast. We're back home now and continue to enjoy this scrumptious dish. -Natalie Cook, Scarborough, Maine

- In a large pot combine the meat, the spice bag and enough cold water to cover. Bring to a boil, reduce heat and simmer 2 hours. Add vegetables and salt and return to a simmer. Continue to simmer until fork-tender, 30 minutes to 1 hour longer.
- For the Horseradish Cream: In a small bowl combine sour cream and horseradish; season, to taste, with salt, pepper and hot sauce.
- To finish, remove corned beef to a carving board and slice against the grain. Transfer to a large, warmed, deep platter. Drain broth and reserve for soup, if desired. Arrange vegetables around meat and serve. Pass the horseradish cream for guests to help themselves.
NEW ENGLAND BOILED DINNER (CORNED BEEF & CABBAGE)

- Place corned beef in a large pot, cover with cold water.
- Bring to a simmer, simmer for 5 minutes, then remove and rinse meat, empty the water out of the pan.
- Place meat back in the pan along with the onion, garlic, the cloves, pickling spice and bay leaves.
- Cover with 12 cups cold water, or more to cover the meat.
- Bring back to a simmer, partially cover the pan, simmer for 3- 4 hours (adding more water as necessary to keep beef covered), until beef is tender, but not falling apart.
- Remove the beef from the pot, wrap in foil, and keep warm.
- Strain the cooking liquid, and add it back to the pot, discarding the onion and spices.
- Bring the liquid back to a simmer, and add the vegetables in this order-- (you should end up with all the veggies in the pot together) cabbage--give it about 4 minutes, then add turnips--give them about 5 minutes, then add carrots--give them about 3 minutes, and then add potatoes, simmering for about 10-15 more minutes.
- They should all be fork tender.
- David serves it this way--slice corned beef thinly against the grain, place in a shallow soup bowl with vegetables, and ladle about 1/2 cup stock over all, with mustard and/or horseradish on the side.
- We have it in dinner plates sliced, with our veggies on the side, and plenty of butter and salt and pepper on them.
- Also great with crusty bread, and maybe some mustard or horseradish on the side.
GRAMMIE BEA'S NEW ENGLAND BOILED DINNER
New England boiled dinner is often made with a smoked ham shoulder, and that's the way we always had it at my house growing up. The flavor is incredible and makes for a DELICIOUS meal! Some people like their vegetables firm and some like them soft and tender, so cook your veggies accordingly. The cooking time for this particular recipe is 4 hrs. for an 8 lb. ham, or 5 hrs. for a 10 lb. ham. Another way of cooking veggies is, wait until ham is cooked and removed from water, then cook your veggies in the water in the kettle to the desired doneness. Sometimes I use boneless ham and add turnip and beets, just like in the photo I posted. Yummy!!

- Place ham in a large dutch oven style kettle.
- Cover with cold water, and fill to about 2" above top of ham. Cover kettle, and bring to a boil using high heat.
- Turn down to med-high and let boil a few minutes, then drain water, and refill with water 2" above ham, and bring to a boil again over high heat. This method is used to make the ham less salty. (Or you may refrigerate ham overnight in water, and change water several times before cooking instead).
- Once water comes to a boil, turn heat down to med. to med-high making sure it keeps boiling. Keep cover on kettle while cooking.
- Add peeled onions to the kettle.
- Cook ham 1/2 hour per pound of ham.
- Add some water to the kettle, when it starts getting low.
- Peel and cut potatoes and carrots.
- Wash and core cabbage, then cut into wedges.
- Add vegetables during the last 30-40 minutes of cooking time. Serve when veggies are tender, or to your liking.

- 1. Have a large soup pan of boiling water.
- 2. Take the pork butt out of the plastic wrap and carefully remove the paper casing. Carefully place the pork butt in the boiling water and boil on low heat for about an hour.
- 3. Place the potatoes, turnips (or Rutabaga) and carrots in. When they are almost done cooking, place cabbage in. When the potatoes, turnips or rutabaga, carrots and cabbage are finished cooking take them all out of the pan. Take the pork butt out and slice it in not too thick slices. But about 1/3". Place on serving plater, place the vegetables around the pork and pour a little melted butter and chopped parsely or chopped dill on top of the vegetables. Serve hot!
- 4. Save the water to make a bean soup or chowder with.
- 5. Rose Packing Co. in Illinios sells both kinds of Smoked Pork Butt, rolled or square. I call them and spoke to Rick who is here in California. It is the exact recipe they used for making the Dainty brand my Grandmother, Mom and I used. They can have a case of it sent to their supplier here and I will pick it up next Friday. I am one happy camper!
CROCK POT NEW ENGLAND BOILED DINNER
On a chilly day this one pot meal will warm you through. I love my crock pot--being a busy mom and all, and this is a great version of the regular dish. This will take 6 to 11 hours depending on the heat setting you use.

- In a 5 to 6 quart slow cooker, combine potatoes, carrots, onion, and garlic.
- Trim the fat from the brisket and if necessary, trim the brisket to fit into the slow cooker. (Do not use the seasoning package if one comes with the brisket). Place the brisket on top of the vegetables; sprinkle with dill seed, rosemary, and 1/2 teaspoon of salt. Pour the broth over the brisket.
- Cover and cook on low setting for 11 to 12 hours or on high for 51/2 to 6 hours.
- If using low setting, turn cooker to high and add the cabbage wedges; cover and cook for 30 to 60 minutes more or until the cabbage is tender.
- Transfer meat to a cutting board and thinly slice the meat across the grain. Place meat slices on a serving platter. Using a slotted spoon, transfer the vegetables to the serving platter and serve.
NEW ENGLAND BOILED DINNER

- Place the corned beef in a kettle, add the peppercorns and cold water, cover, bring to a boil and simmer 4-5 hours or until the meat is tender, skimming occasionally. Remove meat and keep in warm place. Add the salt pork (in one piece), parsnips, carrots, rutabaga or turnips, onions and potatoes. Cook 30 minutes. Add cabbage wedges during the last 10 or 15 minutes and cook just until tender. Place the meat on platter and surround with the vegetables. Blend parsley with melted butter and spoon over vegetables. Discard salt pork, but save stock for a pot-au-feu or other stew.

- Tie the beef into individual packages with string to prevent them from falling apart.
- In a large pot, combine the beef and water and bring to the boil. reduce to a simmer and allow to cook for 10 minutes. Skim any residue that collects on the surface.
- Add the onion, celery, garlic and salt.
- Tie the thyme, bay, rosemary, black pepper and cloves into a small sachet with cheesecloth. Add this bouquet garni to the pot and allow to slowly simmer for 1 1/2 hours.
- Add at this time the carrots, leeks, turnips and parsnips and continue to slowly simmer for 20 minutes. Add the potatoes and cabbage and allow to cook for 20 minutes more before serving in bowls with a slice of cabbage, some broth and mustard and pickles.

This is traditional here in Maine. It is cooked in one pot and easy to prepare with all the root veggies mixed with the corned beef. I know people who do this with a picnic ham because they don't like corned beef. The secret (I think) to the corned beef saltiness is to discard the first water after it comes to a boil and recover it with fresh water.

- 1. You need leftover New England Boiled Dinner AKA Corned Beef and Cabbage. You can also use a New England Boiled Dinner made with smoked shoulder not corned beef. New England Boiled Dinner: Corned Beef (red not grey)OR A Smoked Shoulder turnip carrots onions cabbage potatoes a stalk or two of celery beets (red flannel... beets make everything red!)
- 2. Put everything except the corned beef on/in something you can chop on/in and not damage like a large cutting board or large square baking pan. You may need to do this in batches depending on the amount you have.... Way back when Gram & Mom had an old Spam can with the sharp edge (from when you opened the can) kicking around in the draw for this task. Because of this can they were able to use a bowl. I use the big cutting board with my dough scraper to cut the veggies. I then have to chop my corned beef on a cutting board with a knife. Make it chunky I do or fine your choice.
- 3. If you leave some fat on the corned beef you really don't need much if any butter to fry it. Fry the hash on medium (may need to turn down as you go)in a non-stick or other type fry pan till done to your liking. I cook mine until still moist but extra moisture has evaporated and hash in somewhat browned.

- 2. Add ham slices to pot, cover and simmer for one hour.

- 1. Place roast in crock pot or large pot on stove. Chop cabbage into quarters and place around roast. Chop carrots,celery,potatoes,and onions and put in pot.
- 2. Fill pot with water about two (2) inches above roast and vegetables. You may need to add more water as it cooks. Add seasoning - tastes vary so add as much or little as you prefer.
- 3. Cover pot with tight lid and let cook for 8 or 9 hours. If you are using a pot on the stove it will take only 3 to 4 hours.
- 4. Meat will have all fallen off of the bone and cabbage and onions will have separated and dish will be like stew.
