Steps:
- Mix zucchini, celery, onion, and mushrooms in a microwave-safe dish. Cover dish with plastic wrap.
- Cook on High until vegetables are steamed and slightly tender, about 6 minutes.
- Pull plastic wrap away from dish, stir vegetables, sprinkle Cheddar cheese over the vegetables, and replace the plastic to seal tightly. Let dish sit until the cheese melts, 2 to 3 minutes. Stir vegetables to coat evenly with melted cheese.

Steps:
- Trim ends and slice zucchini in half length-wise.
- Place skin-side up on a microwave-safe plate and microwave for 2 minutes.
- Remove from microwave and turn zucchini over. With a knife, make small cuts into the inside of zucchini.
- Spread butter over zucchini, and then salt and pepper to taste. Microwave for 1 more minute. You could also add other toppings at this point!
- Enjoy :).
MICROWAVE-STEAMED ZUCCHINI
My daughter and I love zucchini this way. So easy....no chopping, dicing, etc. Give it a try, and use one zucchini, or as many as you need. I use non-fat spray, so extremely diet-friendly. Parmesan cheese or bacon bits are good additions.

- Slice zucchini lenth-wise, not cutting all the way to the bottom.
- Open slightly and spray interior with butter.
- Sprinkle interior with salt and pepper.
- Wrap in plastic wrap and place in microwave. Microwave for 5 minutes on high power.
- Let stand for two minutes, remove, and cut in wedges.
- Voila.
MICROWAVE CHICKEN, ZUCCHINI AND STUFFING CASSEROLE
I turn to this recipe whenever I have an excess of zucchini and it never fails to make my hubby happy when it's on the menu. I tweaked the original recipe to cut down on fat and time. You could also add shredded carrot and substitute any kind of stuffing mix. Enjoy!

- Combine zucchini, bell pepper and onion in 3-quart microwaveable casserole. Cover and cook on Full Power for 13 to 16 minutes, until crisp-tender. The vegetables may give off quite a bit of liquid; this is fine. Do not drain them.
- Add the soup, sour cream, chicken and black pepper to the vegetables, carefully stirring to blend without breaking up the zucchini.
- Next, fold in the stuffing mix and any flavor packet it may come with. (Some brands have the herbs/spices already mixed in.) Cover the casserole and heat on Full Power for an additional 7 to 10 minutes. The stuffing should absorb the moisture from the cooked vegetables and the soup and sour cream.

- In a large mixing bowl, blend eggs with sugar. Add oil and zucchini, stirring to blend well. Stir in remaining ingredients. Pour into a 12-cup microwave bundt pan, or use two 6-cup ring pans for the microwave.
- Microwave on High for 8-10 minutes, rotating a quarter turn halfway through cooking. (If using the 6-cup ring pans, microwave about 4-6 minutes each, rotating halfway through cooking.) Bread looks dry and begins to pull away from side when cooked. Cool 10 minutes in the pan. Invert bread onto serving plate.

- Combine zucchine, parmesan and tomato sauce in a 2 quart casserole.
- Cover with plastic and cook on high 10 to 15 minutes or until zucchini is tender.
- Stir once or twice.

- (I made this ahead and kept warm in a 200 degree oven then added the cheese before serving).

PAM'S MICROWAVE ZUCCHINI BAKE
Easy Peasy Summer squash bake that doesn't heat up the kitchen. It can be broiled for a few minutes to brown the top, but not necessary.

- 1. Cut squash into quarter sized rounds and place in a 2 to 3 qt microwaveable casserole. Season with salt and pepper and top with small bits of butter. Cook in microwave on high for 4 minutes.
- 2. Remove casserole from microwave. In a medium bowl, beat eggs and stir in cheese. Pour over squash and top with fried onion rings. Cook at 60% power for 8 to 12 minutes.
- 3. Note: If you wish, you can add a small can of diced tomatoes (drained) to the squash mixture also.
