MEXICAN CHOCOLATE-BANANA MUFFINS



Mexican Chocolate-Banana Muffins image

1 1/2 cups all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 cups mashed bananas (about 2 big bananas)
1 large egg
8 tablespoons (1 stick) unsalted butter, melted
1/4 cup whole milk
1 (3.5-ounce) disc Mexican chocolate, chopped
Special equipment: 1 (12-cup) nonstick muffin tin with 12 paper cupcake liners

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the flour, sugar, baking powder and salt.
  • In a separate mixing bowl, combine the mashed bananas, egg, melted butter and milk until incorporated.
  • Stir the banana mixture into the dry ingredients just until blended (but do not over-mix as it could result in a tough muffin). Stir in the chopped Mexican chocolate.
  • Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  • Bake the muffins until the tops are pale golden and a tester inserted into the center comes out with some melted chocolate attached but no crumbs, about 30 minutes.
  • Transfer the muffins to rack to cool for 15 minutes. Then remove from the muffin tins.

MEXICAN CHOCOLATE BREAD PUDDING

1 tablespoon unsalted butter, for greasing
5 cups (1-inch) bread cubes, preferably 1 day old (from about 3 bolillo rolls or 3/4 of a loaf of French bread)
2 3/4 cups whole milk
2 (3.1-ounce) discs Mexican chocolate,* chopped (recommended: Ibarra)
1 cup granulated sugar
2 whole eggs
3 large egg yolks
1/3 cup raisins
1 tablespoon ground cinnamon
Powdered sugar, for dusting

Steps:

  • Butter an 8 by 8 by 2-inch glass baking dish. Set aside.
  • Place the bread cubes in the prepared baking dish. Bring the milk to a simmer in a large heavy saucepan. Remove from the heat. Add the chocolate and whisk until melted and smooth.
  • Using an electric hand mixer, beat the sugar, eggs, and egg yolks in a medium bowl until blended. Gradually whisk the chocolate mixture into the egg mixture. Add the raisins and cinnamon. Pour the custard over the bread. Let the mixture stand for 1 hour (some custard will not be absorbed). Can be prepared and refrigerated for up to 2 hours ahead.
  • Preheat the oven to 350 degrees F.
  • Bake until just set and the center moves slightly when the dish is shaken, about 45 minutes. Dust with powdered sugar and serve warm or at room temperature.

CINNAMON-SUGAR CRISPS ("BUNUELOS")

1/2 cup sugar
1 teaspoon ground cinnamon
6 (8-inch) flour tortillas, whole or cut into shapes

Steps:

  • On a plate, mix the sugar and cinnamon. In a medium, heavy-bottomed saucepan, add enough oil to come halfway up the sides of the pan. Heat over medium-high heat until a deep frying thermometer, inserted in the oil, reaches 350 degrees F. (If you do not have a thermometer, test the oil with a piece of tortilla, which should sizzle when it touches the oil and should brown in about 2 to 3 minutes.) One by one, fry tortillas until golden brown. With a slotted spoon, transfer the crisps to paper towels to drain. While still warm, transfer to cinnamon-sugar mixture, turn to coat and serve.

TEQUILA AND MEXICAN CHOCOLATE MOUSSE



Tequila and Mexican Chocolate Mousse image

6 1/2 ounces Ibarra chocolate, chopped fine
2 tablespoons milk
11/2 ounces butter, at room temperature
2 eggs, seperated
1 tablespoons Tequila Herradura Reposado
1/2 cup heavy cream
4 prepared phyllo cups
1 pomegranate, half seeded and half juiced, sweetened

Steps:

  • Melt chocolate over a double boiler with milk and butter. Cool until lukewarm and add yolks one by one. Stir in tequila. Beat cream to soft peaks and fold into chocolate mixture. Beat egg whites to stiff peaks and fold into chocolate mixture. Spoon into phyllo cups and sauce plate with pomegranate juice. Garnish with seeds.
