2 pounds meat (chicken, beef, pork, preferably in pieces, like chicken breasts, steaks, pork chops, or thin pork tenderloins)
4 tablespoons fresh lemon juice (from about 2-3 lemons)
1 cup soy sauce (I always use low-sodium OR 1/2 cup soy sauce and 1/2 cup pineapple juice (see note))
2 cloves garlic (finely minced)
2 tablespoons olive oil
1 tablespoon freshly grated ginger (or ginger paste or 1 teaspoon dried ginger)
1 tablespoon onion powder
1/2 teaspoon pepper

Steps:

  • Place the meat in a shallow dish or ziploc bag.
  • In a medium bowl or liquid measuring cup, whisk together the lemon juice, soy sauce, garlic, olive oil, ginger, onion powder and pepper.
  • Pour the marinade over the meat to cover. Refrigerate for 8-12 hours (or up to two days).
  • Grill the meat, discarding excess marinade, until cooked through (exact time will depend on the cut of the meat and temperature of your grill). Let the meat rest for 10-15 minutes before serving to seal in the juices.

2 pounds meat or veggies of choice
¼ cup olive oil
¼ cup brown sugar, loosely packed
2 tablespoons apple cider vinegar
2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
2 tablespoons Worcestershire sauce (see Recipe Notes, below)
3 cloves garlic, smashed
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
optional: pinch cayenne pepper
kosher salt & ground black pepper, to season

Steps:

  • Add the olive oil, brown sugar, soy sauce, Worcestershire sauce, apple cider vinegar, chili powder, paprika, & a pinch of cayenne pepper, if using, to a bowl or jar. Season with 2 teaspoons kosher salt & ground black pepper as desired. Whisk or shake to combine.
  • Pour the all-purpose marinade over your meat or veggies of choice. Marinate for at least 6 hours or up to overnight.

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

1 -2 cup sweet and spicy barbecue sauce
2 teaspoons garlic salt (to taste)
2 teaspoons onion salt (to taste)
3 tablespoons onion flakes (to taste)
2 teaspoons Lawrys seasoned garlic salt (to taste)
2 tablespoons mesquite liquid smoke (to taste)
2 tablespoons hickory liquid smoke (to taste)
2 tablespoons liquid smoke (to taste)

  • When you have the right marinade for you, place meat in 9x13 pan and marinate.
  • Marinate meat as long as you like depending on the type of meat you are using.
  • I cook my meat in the same pan with the marinade. Usually on the grill. But can be done in the oven as well.
  • Doing this makes the meat very flavorful and extremely tender.
