This Mango Ice Cream is deliciously creamy and can be made with or without an ice cream maker with fresh mango and coconut cream. Healthy ice cream that is better for your than any store-bought ice cream and makes the perfect frozen treat for summer. Vegan, paleo-friendly and dairy-free.

3-4 cups mango chunks (, for fresh use very ripe OR frozen)
2 tablespoons unsweetened milk of your choice (or filtererd/ bottled water) (, plus more depending on consistency preferred)
2 tablespoons maple syrup
14 ounce can of high quality organic full-fat coconut cream**
1 teaspoon vanilla extract

Steps:

  • In a high speed blender or a food processor, add the mango chunks and milk and blend into smaller chunks or until crumbly if using frozen.Add coconut cream, maple syrup and vanilla and continue blending until smooth. Add more liquid and scrape down the sides of the blender, as needed.
  • Taste for sweetness and adjust to taste depending on the sweetness of the mango. Pour into a freezer-friendly, airtight container. Transfer to freezer and freeze for 3-6 hours, or until completely frozen. OPTIONAL: To prevent ice crystals from forming, remove container from freezer every hour and use a fork or a whisk to stir mixture until smooth, then place back in the freezer.
  • Allow to thaw for 20-40 minutes before scooping.

My entire family fell in LOVE with this ice cream, I tell ya! Instead of making my own mango puree, I just bought fresh unsweetened mango puree from the baking store.

1 cup sugar
4 egg yolks
1 3/4 cups milk
1/2 cup cream
2 large mangoes
1 tablespoon lemon juice

Steps:

  • Mango Puree:
  • Peel and cut the mango into pieces. Squeeze as much flesh off as possible. Blend it in the blender or food processor along with the lemon juice. Strain the mango mix into a bowl, so that the stringy bits are eliminated from the puree. You should have about 1 1/4 cups mango puree.
  • Gelato base:.
  • Whisk egg yolks and sugar till pale and lemony.
  • In a medium/heavy saucepan, bring milk and cream to a simmer. Turn off heat and whisk half of the mixture into the yolks.
  • Return everything to the sauce pan over a very low heat and keep on stirring it till it thickens.
  • Remove from heat and strain it into a large bowl. Let it cool for 5 or 6 minutes and then mix in mango puree.
  • Refrigerate overnight.
  • 10 mins before processing in the ice cream machine, put the mango custard into the freezer and also put the ice cream dasher into the freezer. (this SHOCKS the mix so that not much air is whipped in).
  • Process in your ice cream maker.

Homemade mango ice cream is the best ever creamy frozen dessert. This tasty recipe takes a wonderful vanilla ice cream base and adds luscious fresh mango for the easiest mango ice cream.

1.5 C fresh mango (cut into chunks)
3/4 C granulated sugar (divided)
2 C heavy cream
1 C whole milk
1 tsp vanilla extract

Steps:

  • Ensure your ice cream maker will be ready to freeze the mixture in about an hour. This usually means the insert should be in the freezer the night before.
  • Peel and cut up the mangos into large chunks. Add to a blender or a Ninja capsule and add 1/4 cup of the sugar. Blend until it is a smooth puree.
  • In a medium bowl, use a hand mixer to beat cream, milk, remaining 1/2 C sugar, & vanilla and beat until combined. Next, add the pureed mango mixture and beat using the hand mixer until combined and smooth.
  • Place the bowl in the freezer for 30 minutes so the mango mixture is very cold before it goes into the ice cream insert.
  • Get your ice cream machine ready and slowly pour the chilled mango mixture into the cold insert. Let your ice cream maker do all the work.
  • Run the ice cream maker for about 15 minutes or until it is ready. It should be the consistency of soft-serve ice cream and look similar to the photo above.
  • Scoop out the fresh mango ice cream and place it into a freezer-safe container. You will need to freeze this for about 3-5 hours. It will then be ready to serve after it chills for hours.
  • When it reaches the firmness you desire, scoop it into bowls or onto ice cream cones. ENJOY!
  • If this mango ice cream does not get consumed all on the first day, it can be stored in the freezer for up to a week. Store in an air-tight container in your freezer. Remove the ice cream about 5 minutes before you want to eat it as homemade ice cream tends to be more solid and dense once frozen all the way through.

1 large orange, halved
2 large mangoes, peeled and stoned
2 tablespoons orange zest, finely grated
3 tablespoons low-fat plain yogurt
3 tablespoons low-fat creme fraiche
2 chocolate squares, grated

Steps:

  • Set your freezer to rapid freeze at least 30 minutes before required and remember to return it to its normal setting afterwards.
  • Scoop out the flesh from the oranges, leaving the skins intact. If necessary, cut a small slice off the base of each orange half so that they stand upright. Put the orange and mango flesh, orange zest, yoghurt and crème fraîche in a blender. Blend for a few minutes until smooth. Spoon the mixture into a freezeable container and freeze for 2 hours, stirring occasionally to break up the ice crystals.
  • Spoon the mixture into the orange halves. Return to the freezer and leave for at least 1 hour, or until frozen solid. Let soften in the refrigerator for at least 30 minutes before serving. Serve 2 orange halves per person sprinkled with some freshly-grated chocolate.
  • Variation: You could use pink grapefruit instead of the oranges; add 2 tablespoons of finely grated zest to the yoghurt mixture. You could simply freeze the mixture in a container and serve it in scoops after letting it soften in the refrigerator.

1 1/2 cups ripe alphonso mangoes, around 2, peeled and chopped
2 -3 tablespoons sugar
0.5 (4 ounce) can sweetened condensed milk
2 cups whole milk
1 teaspoon lemon juice

Steps:

  • Blend the mangoes with the sugar into a purée.
  • Add the condensed milk, milk, puréed mangoes, lemon juice and blend well.
  • Pour the mixture in a shallow freezer proof plastic container. Cover and freeze till slushy, for about 2 hours.
  • Pour the mixture into a deep vessel and blend using a hand mixer, or you can even use a whisk, but thats going to take lot of your time. Blend till it is smooth and creamy.
  • Transfer the blended mixture back to the plastic shallow container. Cover and freeze again till slushy and follow this step one more time and you're done.
  • Cover and freeze till it is firm. Shift it into the refrigerator 45 minutes before you serve.

This mango ice cream is made with pure mango pulp (preferably Alphonso mango pulp available in 1KG cans from shops stocking Indian imports). It's rich and smooth and just yummy. The sugar is minimal and can be replaced with a sweetener like Splenda or Equal. Please use half a can of Carnation evaporated milk, one can of condensed milk and one of Nestles pure cream. I kept getting the red x's each time so had to use the gram units!

1 kg mango pulp or 1 kg pulp from fresh mango
397 g sweetened condensed milk
170 g nestles pure cream or 170 g double cream
200 g Carnation Evaporated Milk
2 tablespoons Equal sugar substitute (sugar substitute) or 2 tablespoons Splenda granular (sugar substitute)

Steps:

  • Use a large capacity food processor. Empty the mango pulp and using pulse action mode, blend the pulp till smooth. Slowly add the sugar or substitute and blend. Add the full can of condensed milk, the evaporated milk and finally the pure cream. Use the pulse motion only.
  • Once all the ingredients are well blended check the taste. It should be just as you want it--thick, creamy and sweet, but not too sweet. If you find it too sweet, add more cream or evaporated milk.
  • Have 2 or 3 Tupperware containers ready (with airtight lids).
  • Pour the mix and seal each Tupperware with Saran wrap and then use the cover.
  • Deep freeze till set--will take more than 3 hours.
  • Get container out 10 minutes before serving.

  • Combine nectar and sugar in a small saucepan. Cook over medium heat 5 minutes or until sugar dissolves, stirring constantly. Cool.
  • Place mango cubes in a blender, and process until smooth. Press pureed mango through a fine sieve over a bowl; discard solids. Combine mango puree, cheese, and sour cream in a blender; process until smooth. Pour into a bowl; stir in nectar mixture, juice, and salt. Cover; chill completely.
  • Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon ice cream into a chilled, freezer-safe container; cover and freeze 2 hours or until almost firm.

4 tablespoons sugar
1 cup mango puree
1 cup heavy cream

Steps:

  • Beat egg whites until frothy, then gradually beat in sugar.
  • Mix the mango puree with cream, then fold in egg whites.
  • Churn and freeze by hand or with an ice-cream maker.
  • As a variation, replace the cream with yogurt (you may need a little extra sugar).
  • Another variation is to omit the egg whites; replace the mango puree with 1 pound of seeded, peeled papaya and the juice of one lime.
  • Puree with one cup sugar, blend in the cream, and churn and freeze.
