4 boneless skinless chicken breasts, pounded thin
salt and pepper
8 medium-large fresh sage leaves
4 slices of thick cut bacon, halved
2 tablespoons extra virgin olive oil

Steps:

  • Once you have thinly pounded out your chicken breasts, cut each breast into two strips {slightly wider than your bacon slices}. Season chicken strips with salt and pepper.
  • Place 2 sage leaves onto each strip of chicken. Roll chicken strips. Roll bacon over chicken roll and secure with toothpicks. Continue until all pieces are rolled.
  • Into a frying pan add olive oil and heat over medium heat. Once oil is hot, add chicken roulades and cook, turning frequently, until bacon has brown/crisped on all sides. Reduce heat to low and continue cooking for approximately 10-15 minutes until chicken has cooked through {cooking time will depend on thickness of chicken}.

4 boneless skinless chicken breasts (filet and pound flat)
1/4 lb prosciutto, sliced super thin
1 bunch parsley, finely chopped
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese or 1/4 cup parmigiano-reggiano cheese
2 eggs
1/4 cup grated provolone cheese
1 bunch basil leaves
1 tablespoon fresh rosemary
3 garlic cloves, minced
olive oil
2 (28 ounce) cans roma tomatoes, crushed
1 tablespoon basil
1 teaspoon salt

Steps:

  • preheat oven 450 degrees F.
  • Lay chicken on flat surface season with salt and pepper.
  • place slices of ham over breasts until all is used.
  • in bowl- mix parsley, bread crumbs, cheeses, eggs, basil and rosemary.
  • layer some filling on each chicken breast on the smaller end roll up the chicken tightly and secure with butchers twine or toothpicks.
  • place in foil pouches and bake 15-20 minutes in shallow pan.
  • make sauce while roasting chicken in large pot saute garlic in olive oil for about 2 minutes.
  • add tomatoes, basil and salt let cook for about 45 minutes at a slow boil.
  • when chicken comes out quickly brown them in a little olive oil, top with sauce and serve over pasta.

Other greens such as arugula, chard, and baby kale can take the place of spinach in this dish."

16 ounces boneless skinless chicken breasts, trimmed and pounded thin into cutlets
2 tablespoons sun-dried tomatoes (dry packed)
2 cups Baby Spinach
1/4 cup parmesan cheese
1/4 cup onion, chopped
2 teaspoons olive oil, divided
1 teaspoon garlic
1/3 teaspoon red pepper flakes
1 tablespoon water
1/2 cup dry white wine

Steps:

  • Place the spinach in a large nonstick skillet with the washing water clinging to the leaves or a tablespoon or two of water if dried. Cover and cook for 2 minutes, tossing occasionally, or until wilted. Drain and press firmly with the back of a spoon or squeeze to remove excess moisture. There should be 1/2 cup spinach. Wipe out the skillet.
  • Meanwhile, in a medium nonstick skillet, combine the onion, 1 teaspoon oil, garlic, red-pepper flakes, and 1 tablespoon water. Turn the heat to medium. Cook for about 2 minutes, or until the onion sizzles. Reduce the heat to low. Cover and cook, stirring once, for about 3 minutes, or until softened. In a small bowl, combine the onion mixture, cheese, and spinach. Stir to mix. Set aside.
  • Sprinkle the tomatoes evenly on the smooth side of the cutlets.
  • Divide the spinach mixture among the cutlets. Spread to the edges of 3 sides, leaving about 1" at the narrow tip free of spinach mixture. Loosely roll up the chicken, ending with the narrow tip, and secure with wooden picks.
  • Add the remaining 1 teaspoon oil to the large skillet and set over medium heat. Place the chicken in the pan. Cook, turning, for about 10 minutes, or until golden brown on all sides. Add the broth or wine, cover, and cook over low heat for about 7 minutes. Uncover and transfer chicken to a serving platter. Cover with foil to keep warm.
  • Boil the skillet juices for about 5 minutes, or until reduced to a glaze. Diagonally slice the chicken into 1"-thick pieces. Drizzle with pan juices and serve.

Wondering how to make some chicken legs more interesting, I portioned off the thighs and decided to replace the thigh bone with a nice garlicky sausage - resulting in a kind of chicken roulade. My kids love them!

6 boneless skinless chicken thighs
6 Toulouse sausages (depending on the size of chook the thighs came from) or 6 chipolata sausages (depending on the size of chook the thighs came from)
250 g streaky bacon (6 or 12 rashers depending on how cut) or 250 g pancetta (6 or 12 rashers depending on how cut)
200 g orange duck pate

Steps:

  • Preheat oven to 180C (350F).
  • Cover a (rolled out) chicken thigh with a couple of pieces of cling film and clobber until flattened / slightly larger surface area (until the width of the chicken is about the same as the length of the sausage).
  • Take a rasher/slice of bacon/pancetta and lay out on a copping board - if using streaky bacon you may need to run the back of a knife across it to make it wider and longer. Or you may need to use 2 rashers per thigh, depending on the product.
  • Lay a boned thigh on the bacon (outside to the bacon, where the bone was, facing up).
  • Spread 1/6 of the pate into the centre half of the thigh.
  • Place a sausage across the pate and roll up tightly, ensuring that the bacon ends overlap each other over the 'join'. (You may need to secure with toothpicks).
  • Repeat for the other 5 thighs.
  • Place roulades on a tray/oven-proof dish and bake for 20-30 minutes or until browned and juices run clear.
  • Remove from the oven and leave to stand for 5-10 minutes.
  • Slice each roulade into 1cm thick slices and serve.

Another great find from Giada De Laurentiis. Juicy and scrumptious. Rouladen Italian style. There is really no need to serve potatoes or other starch with this. I just served an appetizer of mozzarella, tomato and basil to start with. Truly heavenly.

1/4 cup olive oil
2 tablespoons unsalted butter
2 cups finely chopped peeled carrots
1 cup finely chopped onion
2 garlic cloves, minced
1/2 cup grated parmesan cheese
salt & freshly ground black pepper, to taste
8 beef scallopini (Milanese cut, long and very thin)
all-purpose flour, for dredging
1/2 cup dry white wine
1 bay leaf
1 (14 1/2 ounce) can diced tomatoes in tomato puree
1/2 cup frozen peas
2 ounces thinly sliced prosciutto, coarsely chopped

Steps:

  • Sauté carrots, onion and garlic in 1 tbsp oil and 1 tbsp butter until carrots are tender. Season with salt and pepper and remove from heat. Let cool slightly, then stir in parmesan.
  • Season beef with salt and pepper. Place 2 tbsp of carrot mix in the middle of the wider end of each beef slice. Roll up slices starting at the wide end and tucking in the sides to enclose filling. Secure end with poultry laces or toothpicks.
  • Heat the remaining oil and butter over medium-high heat. Lightly dredge the beef rolls in flour. Add to pan and brown on all sides. Add the wine and scrape up the browned bits on the bottom. Carefully stir in the tomatoes and add the bay leaf. Cover and simmer until beef is cooked through about 5 to 10 minutes. Transfer the beef rolls to a plate and let rest.
  • Stir the peas and prosciutto into the sauce in the pan and simmer until the peas are heated through and sauce has slightly reduced. Season to taste.
  • Remove picks from beef rolls and drizzle the sauce over the rolls.
