Does 'zaar really need _another_ Brownie recipe? Probably not but this is a wonderful old recipe from the Edith Hansen cook book. It gives a chewy, dense brownie with an old fashioned flavor. Be careful to not overbake it. The original recipe calls for "part lard if desired" which I have left in as part of the recipe's charm but I always use margarine. Frosting these is gilding the lilly so I don't.

2 cups white sugar
3/4 cup butter (part lard if desired)
1 cup flour
1/2 teaspoon salt
4 eggs, beaten
1 teaspoon vanilla
2 chocolate squares or 1/2 cup cocoa
1/2 cup walnuts, chopped

Steps:

  • Cream shortening and sugar well.
  • If chocolate squares are used, melt and add to creamed mixture. If cocoa is used, sift together with the flour and the salt.
  • To creamed mixture, add beaten eggs, vanilla, flour, salt and nuts with some of the flour shaken over them.
  • Bake in a greased and floured 9 x 13" pan in a 350°F oven until it shrinks from the edges of the pan (about 25 to 30 minutes).
  • Let cool and cut into squares.

1 cup white sugar
¼ teaspoon salt
½ cup all-purpose flour

Steps:

  • Preheat oven to 300 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Melt the butter or margarine over low heat. Pour into large mixing bowl and stir in carob powder, sugar, salt, flour, and vanilla. Mix in egg whites and walnuts. Spread the dough evenly into the baking pan.
  • Bake for 30 minutes. Let cool in pan for 10-15 minutes before cutting.

Know the secret to gooey brownies? Don't overcook them, and dot through caramel or chocolates filled with liquid caramel or ganache to help add moisture

150g butter
75g light soft brown sugar
150g plain chocolate, broken into pieces
1 tbsp golden syrup
3 eggs
125g golden caster sugar
1 tsp vanilla extract
150g plain flour
½ tsp baking powder
3 tbsp cocoa powder, plus more to dust
4-6 tbsp dulce de leche, caramel or chocolate hazelnut spread

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a 20cm square cake tin with baking parchment. Melt together the butter, brown sugar, chocolate and golden syrup gently on a low heat until it is smooth. Remove the pan from the heat.
  • Whisk together the eggs and caster sugar in a large bowl until light and fluffy - this will take a few minutes and is worth doing properly. Add the vanilla extract, then sift over the flour, baking powder and cocoa powder and add the chocolate mixture. Fold everything together quickly and scoop half of the mixture into the tin. Dot over scoops of caramel or chocolate hazelnut spread and then scoop the rest of the brownie mixture over the top. Add more scoops of caramel or chocolate spread, if you like, and bake for 30 mins. The top of the mixture should now be set and slightly cracked looking, but the mixture underneath will still have a slight wobble.
  • Remove from the oven and allow to cool completely before cutting into squares. Dust the tops with cocoa or icing sugar, if you like, or if serving as a dessert drizzle with more caramel. Will keep for 3 days in an airtight container.
