HONEY GINGER ORANGE OATMEAL DELIGHT COOKIES

Delicious, truly guilt-free cookies with the strong, tasty flavors of ginger, honey, and orange that blend like a party in your mouth! If your store does not carry fruit-based fat substitute, you can easily substitute pureed prunes, or prune baby food in an equal amount.

⅔ cup triticale flour
½ cup rolled oats
1 ⅛ cups all-purpose flour
⅓ cup whole wheat flour
1 ½ teaspoons ground ginger
½ teaspoon ground cinnamon
½ teaspoon baking soda
⅛ teaspoon salt
5 tablespoons fruit-based fat substitute
⅓ cup honey
⅓ cup granular sucrolose sweetener (such as Splenda®)
1 teaspoon vanilla extract
⅓ cup orange zest
½ cup chopped crystallized ginger
⅓ cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Place half of the oats, and half of the triticale into a blender or food processor, and grind into a fine powder. Transfer to a medium bowl, and combine with the remaining oats, triticale, all-purpose flour, whole wheat flour, ginger, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, mix together the fat substitute, honey, and sucrolose sweetener until smooth. Mix in the vanilla and orange zest. Add the dry ingredients, and mix until well blended. Finally, stir in the chopped candied ginger and cranberries. Drop by heaping teaspoonfuls onto the prepared baking sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden. Cool on baking sheets for at least 5 minutes before removing to wire racks to cool completely.

1 cup shortening
1 cup sugar
1/2 cup molasses
1/2 cup honey
2 egg yolks
4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1 tablespoon cinnamon
2 teaspoons ground cloves
2 teaspoons ground ginger
1 teaspoon ground nutmeg
For the icing:
1 cup confectioners' sugar
1 tablespoon melted butter
1 tablespoon milk
1/2 teaspoon vanilla extract
Liquid food colorings and colored sugars

Steps:

  • 1.Cream together the shortening, sugar, molasses, and honey in a bowl with an electric mixer. Add the egg yolks and mix well.
  • 2.Sift together the flour, baking soda, baking powder, salt, and spices; stir into the shortening mixture. Wrap the dough in plastic and chill well.
  • 3.Roll out dough on a lightly floured surface to 1/4-inch thickness. Cut out shapes with Christmas tree and/or other holiday cookie cutters; transfer to lightly greased baking sheets.
  • 4.Preheat oven to 350°F. Bake cookies for 8 to 10 minutes. (Do not overbake.) Let the cookies cool on the baking sheets until they are firm, then transfer to a rack to cool completely.
  • 5.Beat confectioners' sugar, butter, milk, and vanilla until smooth, adding more sugar or milk as needed. If desired, divide icing among smaller bowls and tint with different food colorings. Decorate cookies with colored icings and sugars.

2 1/4 cups Gold Medal™ all-purpose flour
1 tablespoon grated orange peel
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup butter, softened
2/3 cup sugar
1/2 cup honey
1 teaspoon orange extract
1 egg
Additional sugar

Steps:

  • In medium bowl, mix flour, orange peel, ginger, baking soda and baking powder; set aside. In large bowl, beat butter and 2/3 cup sugar with electric mixer on medium speed until creamy. Add honey, orange extract and egg; beat until blended. On low speed, gradually beat in flour mixture just until blended. Cover; refrigerate 30 minutes to 1 hour.
  • Heat oven to 350°F. Shape dough into 1-inch balls; roll in additional sugar. On ungreased cookie sheets, place balls 2 inches apart; flatten slightly with bottom of drinking glass.
  • Bake 8 to 10 minutes or until lightly browned. Remove from cookie sheets to cooling racks.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 cup finely chopped crystallized ginger
1/4 teaspoon salt
1 stick unsalted butter, softened
1/2 cup packed light brown sugar
1 large egg
1/4 cup mild honey

Steps:

  • Preheat oven to 350°F with racks in upper and lower thirds.
  • Whisk together flour, baking soda, ginger, and salt in a bowl.
  • Beat together butter and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy. Beat in egg and honey until combined. Reduce speed to low, then mix in flour mixture.
  • Drop 14 heaping tablespoons of dough 2 inches apart onto 2 ungreased baking sheets.
  • Bake, switching position of sheets halfway through baking, until golden, 10 to 14 minutes total (cookies will spread flat). Cool completely on sheets on racks.

2 1/2 cups all-purpose flour
1/2 cup minced crystallized ginger
2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup sweet creamy butter
1 cup golden brown sugar
1 large egg
1/4 cup grade a clover honey
2 -3 teaspoons peeled finely grated fresh ginger
1 teaspoon ginger powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
4 ounces bittersweet chocolate chips (large Ghirardelli 60% Cacao Bittersweet Chocolate Chips)
1/2 cup granulated sugar

Steps:

  • PLACE oven racks on top third and bottom third of oven; PREHEAT oven to 350°F and LINE two baking sheets with waxed paper.
  • WHISK step ONE ingredients in a medium bowl: 2 1/2 cups all-purpose flour, 1/2 cup crystallized ginger, 2 teaspoons baking soda, and 1/4 teaspoon salt.
  • BEAT 3/4 cup sweet cream butter in a large bowl until creamy, using an electric mixer, about 2 minutes; SLOWLY beat in 1 cup golden brown sugar on medium-high speed until fluffy, about 3 minutes.
  • ADD step FOUR ingredients: 1 large egg, 1/4 cup Grade A clover honey, 2-3 teaspoons peeled finely grated fresh ginger, 1 teaspoon ginger powder, 1 teaspoon cinnamon, and 1/2 teaspoon ground cloves; BEAT just until blended.
  • ADD flour mixture in two additions, beating on low speed until just blended between additions.
  • PLACE 1/2 cup granulated sugar into same bowl flour mixture was in previously.
  • MEASURE 1 tablespoon of dough; ROLL into a ball between palms of hands, then roll in sugar in bowl to coat evenly and thoroughly; PLACE on baking sheet and flatten just slightly; REPEAT process with remaining cookie dough; ARRANGE cookies 1 1/2 to 2 inches apart.
  • PRESS 5-6 Ghirardelli 60% Cacao Bittersweet Chocolate Chips evenly onto top surface of each cookie.
  • BAKE cookies at 350°F until surfaces crack yet are slightly soft in the center (between 13-15 minutes); COOL completely on waxed paper sheets over rack; REMOVE cookies when cooled.
  • SERVE and enjoy! STORE in a cookie jar, or in an airtight container at room temperature.
