DEEP FRIED ZUCCHINI WITH CREAMY GARLIC DIP
Yummy! Just like at a restaurant! Who would have thought that just adding garlic to ranch dressing would be what makes this dish!!! I plan on using the ranch dip for other things as well.

Steps:
- Heat oil to approx 350.
- Coat zucchini slices with flour.
- Dip in egg.
- Coat both sides with bread crumbs and carefully place in oil.
- Repeat with all zucchini slices -- do not crowd the pan.
- Drain on paper towels and serve warm with garlic dip.
- For the Garlic Dip:.
- Combine all ingredients with a whisk till well blended.
- Store in fridge till ready to serve.
- Try and make well in advance of the zucchini as the longer it sits the better it tastes.
- Good refrigerated for up to 3 weeks.

- Add all the ingredients to a small saucepan. Stir the ingredients over medium heat and cook until all the ingredients have dissolved and are well blended. Remove from heat and allow to cool to room temperature. Remove contents of cavity of the turkey, clean with cold water and pat dry. Inject turkey with marinade.
DEEP-FRIED BOCCONCINI WITH SPICY TOMATO AND GARLIC CHUTNEY

- For the bocconcini: Drain the bocconcini and pat dry with paper towels. Put on a paper towel-lined plate and allow to dry in the refrigerator for 2 hours. Put the flour in a medium bowl and season with salt and pepper, to taste. Put the eggs in a second medium bowl and the bread crumbs in a third medium bowl. Coat the bocconcini in flour and then dip into the eggs. Roll the bocconcini in the bread crumbs until coated. Dip the coated bocconcini, again, in the eggs and then coat with bread crumbs. Freeze the breaded bocconcini for 20 minutes.
- For the chutney: In a blender, combine the garlic, ginger, 1/4 teaspoon salt, vinegar, sugar, olive oil, cumin and pepper. Blend until smooth. Pour into a medium, heavy-bottomed saucepan and add the tomatoes. Bring the mixture to a boil over high heat, then reduce the heat and simmer, stirring occasionally, until most of the liquid has evaporated and the mixture is thick, about 45 to 55 minutes. Using the back of a wooden spoon, gently break up the tomatoes as they begin to soften during cooking. Season with salt, to taste. Let the chutney cool to room temperature, about 35 minutes. Place in a serving bowl.
- In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 1 to 2 minutes.) In batches, fry the bocconcini until golden brown, about 15 to 20 seconds. Drain on paper towels.
- Arrange the bocconcini on a platter and serve the chutney alongside as an accompaniment.
DEEP-FRIED GARLIC CLOVES AND GREEN OLIVES

- Put garlic cloves in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer 1 minute. Drain and repeat with fresh water. Drain and repeat once more, simmering about 5 minutes or until soft, testing often. Gently lift garlic cloves out of pan and drain on paper towels until cool. Meanwhile, place olives on paper towels to drain.
- When ready to cook, mix flour, salt and pepper on a plate. In a bowl, beat eggs. Spread bread crumbs on another plate. In a heavy pot, heat 3 inches of oil to 375 degrees: when hot enough, a chunk of bread will fry in 30 seconds.
- Working in batches, roll garlic cloves and olives in seasoned flour, then in beaten eggs, then in bread crumbs. Repeat process and drop into oil. Cook until golden brown, about 2 minutes. Drain on paper towels and sprinkle lightly with salt. Let oil come back to 375 degrees between batches. Serve immediately.

Steps:
- Separate bulbs and peel garlic.
- Drop cloves into boiling water and when boiling resumes, blanch for about 3-4 minutes. The longer the cloves cook the milder their flavor, but don't overcook or they will be mushy.
- Drain and pour cold water over to cool.
- Meanwhile, prepare batter by combining biscuit mix, egg, beer, parsley and salt.
- Heat vegetable oil in deep pot or fry cooker.
- Dip each cooked clove of garlic into batter and fry until golden brown in color.
- Remove from oil and drain on paper towel.
- Serve Hot.

ROASTED GARLIC AND FETA STUFFED DEEP FRIED OLIVES
These savory bites of olives stuffed with feta and roasted garlic are always a hit at parties. The crunchy panko bread crumbs add the right amount of texture to this party friendly finger food. You'll be amazed at how the olives stay crunchy even after they've cooled down!

- Preheat oven to 400 degrees.
- Remove olives from the can, line a pan with papertowl, and place the olives on the pan. Dry each olive, make sure they are as dry as they can be. Then set aside.
- Cut the top quarter off the top of the head of the garlic bulb. Place it in a pie pan and drizzle the top with the olive oil. Sprinkle with 1 tsp salt and pepper. Cover them with foil and bake until the garlic is roasted and soft, about 30 minutes.
- Meanwhile, place panko bread crumbs in a shallow bowl and heat oil in a deep fryer or large saucepan to 350 degrees.
- Once the garlic is done roasting, squeeze the the roasted garlic bulbs out and mix with feta in a food processor until smooth.
- Using a pastry bag fitted with a plain large round tip, fill each olive with the garlic and feta mixture.
- Place a toothpick width-wise through each olive. Dip each filled olive into the wet batter, then into the panko bread crumbs, and set aside until all olives are covered in the panko.
- Deep fry each olive for about 3-5 min until the olives turn a nice golden color. Remove from oil, sprinke with salt immediately, then set aside to cool for 5 min, then serve.

DEEP FRIED CALAMARI WITH GARLIC AND LEMON MAYONNAISE

- 1. For the mayonnaise, mix all the ingredients together and set aside. 2. For the calamari, place enough oil in a wok, large saucepan or deep-fat fryer to come halfway up the pan. Place over a medium heat. If you're using a deep-fat fryer or have a thermometer, heat the oil to 180C/350F. If not, to check the oil is at the right temperature, drop a 2-3cm/¾-1¼in cube of bread into the hot oil. It should become golden and crispy in 1 minute. 3. While the oil is heating, place the flour, cayenne, paprika and salt in a large sandwich bag. Drop in the squid and shake around to coat evenly. This may need to be done in two batches, depending on the size of the bag. 4. Dip the floured squid into the beaten egg and then carefully drop into the hot oil. Fry for 2-3 minutes until golden. Remove from the oil and briefly drain on kitchen paper before serving with the garlic and lemon mayonnaise.
