1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 large sweet onion, halved and sliced
2 tablespoons canola oil
3 garlic cloves, minced
2 medium tart apples, peeled and sliced
1/2 cup water
1 teaspoon salt
1 teaspoon ground coriander
1 teaspoon minced fresh gingerroot
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, drained
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh cilantro
Hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry chicken and onion in oil until onion is tender. Add garlic; cook 1 minute longer. Stir in the apples, water and seasonings. , Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until chicken is no longer pink, stirring occasionally. Stir in the tomatoes, jalapeno and cilantro; heat through. Serve with rice.

1 medium onion, chopped
2 celery ribs, chopped
1/4 cup butter, cubed
2 medium apples, sliced
2 teaspoons all-purpose flour
3/4 teaspoon curry powder
3/4 cup water
1 teaspoon chicken bouillon granules
3/4 pound uncooked medium shrimp, peeled and deveined
Hot cooked rice

Steps:

  • In a large skillet, saute the onion and celery in butter for 2 minutes. Stir in apples; saute 1-2 minutes longer or until crisp-tender. , Sprinkle with flour and curry powder. Gradually whisk in water and bouillon until smooth. Add shrimp; bring to a boil. Reduce heat; simmer for 2-3 minutes or until shrimp turn pink and sauce is thickened. Serve with rice.

Get that creamy feeling without having to reach for the heavy cream with velvety sweet potatoes offset by tart apples and fragrant curry powder.

Number Of Ingredients 15

2 1/2 pounds sweet potatoes (3 or 4)
2 tablespoons olive oil
1 medium onion, halved and sliced
Coarse salt and ground black pepper
1 red bell pepper, ribs and seeds removed, thinly sliced
2 jalapeno peppers, ribs and seeds removed, thinly sliced
3 garlic cloves, coarsely chopped
1/2 cup dry sherry (optional)
4 cups vegetable broth, homemade or canned
2 teaspoons white-wine vinegar
1 teaspoon honey
1/4 teaspoon curry powder
1 small tart apple (4 ounce) peeled, cored, and diced
1/4 cup plain yogurt
2 tablespoons chopped mint, for garnish

Steps:

  • Preheat oven to 400 degrees. Place sweet potatoes on a baking sheet and roast for 1 hour, turning once, or until potatoes are very soft. When cool enough to handle, scoop cooked potato out of the skins. Discard skins.
  • Meanwhile, in a 5-quart Dutch oven or large soup pot, heat oil over medium. Add onion, season with salt and pepper, and cook, stirring occasionally, until soft and caramelized, about 20 minutes. Add bell pepper, jalapenos, and garlic; cook for 5 minutes. Add sherry (if using), sweet potato, and broth; stir to combine. Bring to a boil, reduce to a simmer, and cook for 20 minutes, until flavors have blended.
  • Working in batches, puree soup in a blender. Combine batches in a clean pot. The soup should be thick. (If you prefer a thinner soup, add water or a little more broth.) Taste and adjust seasoning.
  • In a small saucepan over medium heat, bring vinegar, honey, and curry powder to a boil. Add apple; stir for 1 minute and remove from heat. To serve, ladle the soup into warm bowls, add a spoonful of apples, a spoonful of yogurt, and a sprinkle of mint.

olive oil (for browning chops)
salt and pepper
4 tablespoons butter
1 onion, diced
1 large apple, diced and cored
1 1/2 cups unsweetened applesauce
1 cup apple juice
1 cup beef broth
1 clove garlic, minced
2 tablespoons ground curry powder, to taste
more salt and pepper

Steps:

  • Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
  • In the same skillet, melt butter over medium heat.
  • Cook and stir onions and apples in butter until caramelized, being sure to stir up browned bits.
  • Stir in applesauce, apple juice, beef broth, garlic and curry powder.
  • Season to taste with salt and pepper; simmer on low heat until slightly thickened, continuing to stir up browned bits from pork chops.

2 garlic cloves, minced
1 tablespoon curry powder
1/2 cup mango chutney
1/4 cup currants
1/4 cup fat-free chicken broth
1/4 cup fat-free half-and-half

1 cup chopped onion

6 cups low-salt chicken broth
1 1/2 pounds parsnips, peeled, cut into 1-inch pieces
2 medium Granny Smith apples
1 cup plain whole-milk yogurt, whisked to loosen
1 cup corn oil

Steps:

  • Melt butter with olive oil in heavy large pot over medium-high heat. Add onion and sauté until translucent, about 3 minutes. Add curry powder; stir 30 seconds. Add broth and parsnips. Bring to boil. Reduce heat to medium-low; simmer uncovered until parsnips are soft, about 30 minutes. Remove from heat; cool 15 minutes. Working in batches, puree soup in blender until smooth. Return to pot. (Can be made 1 day ahead. Cover and chill.)
  • Using vegetable peeler, remove apple peel in long strips; reserve. Quarter, core, and coarsely shred apples. Stir apples and yogurt into soup.
  • Heat corn oil in medium skillet over medium-high heat. Slice reserved apple peel lengthwise into very thin strips. Fry peel in oil until golden and crisp, about 30 seconds. Transfer to paper towels to drain. Sprinkle peel with salt.
  • Warm soup over medium heat, stirring occasionally (do not boil). Season with salt. Divide soup among 6 bowls. Garnish with fried apple peel.

4 boneless skinless chicken breasts
2 teaspoons curry powder
salt & freshly ground black pepper
3 tablespoons butter
2 apples, peeled and sliced (Spy's recommended)
1/2 teaspoon sugar
1/2 cup dry white wine
1/2 cup plain yogurt or 1/2 cup whipping cream
2 tablespoons chopped mint

Steps:

  • Trim breasts of fat.
  • Season chicken with 1 tsp curry powder, salt and pepper.
  • Heat 2 tbsp butter in a skillet on medium heat.
  • Add sugar and apples.
  • Saute until apples soften- about 8 minutes.
  • Remove apples and add remaining 1 tbsp butter to pan.
  • Add chicken breasts and remaining curry powder.
  • Saute for 5 minutes on each side, or until golden.
  • Pour in wine and bring to boil.
  • Reduce liquid until only about 2 tbsps remain.
  • Reduce heat.
  • Add yogurt OR whipping cream.
  • Simmer for 2 minutes.
  • DO NOT LET THE YOGURT BOIL!
  • When sauce is thickened and chicken juices run clear, stir in the apples.
  • Sprinkle with chopped mint.
  • Serves 4.

8 ounces whole onion or 7 ounces ready-cut onion (1 2/3 cups)
4 ounces peeled carrots or 4 ounces sliced carrots
1 clove garlic
12 ounces apples
1 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon ground coriander
3 tablespoons dried cherries
1/2 cup no-salt-added chicken stock
1 tablespoon white-wine vinegar
2 tablespoons low-fat sour cream
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Wash, dry and cut chicken into one-inch cubes.
  • Heat oil to very hot in a nonstick skillet, and saute chicken over medium-high heat until chicken browns on all sides; remove from pan, and set aside.
  • Chop onion and slice carrots, if whole, and mince garlic. Saute them in the same pan until onion begins to soften.
  • Wash, core and dice apples. Add apples to onion mixture, and stir; cook for about a minute.
  • Return chicken to pan; add cumin, turmeric, ginger and coriander, and stir well for a few seconds.

2 tablespoons vegetable oil
1 -3 lb chicken, skin removed and cut into 6 pieces
1 cup onion, chopped
1 tablespoon garlic, minced
2 tablespoons curry powder
2 teaspoons turmeric
1/2 teaspoon cumin
1/2 teaspoon coriander
1 cup tart apple, diced and peeled
1 1/2 cups bananas, diced
1 1/2 cups tomatoes, diced
1 cup low-fat plain yogurt

Steps:

  • In a large saucepan, heat 1 tbsp of the oil over med high heat.
  • Add half of the chicken pieces and cook, turning once, until brown. Repeat with the remaining oil and chicken.

1 medium-size apple, peeled, cored and cut into 1/4-inch cubes

1 1/2 cups water
1 bay leaf
3/4 cup frozen peas that have been thawed under hot water

Steps:

  • Melt 1 tablespoon of the butter in a saucepan. Add the rice, onion, garlic, apple, curry powder and salt.
  • Cook briefly, stirring, but do not brown.
  • Add the water and bay leaf.
  • Bring to a boil, stirring. Cover tightly, and simmer for 17 minutes.
  • Remove from the heat. Add the peas and the remaining 1 tablespoon of butter. Fluff the rice with a fork.
