Serve this tangy dip with an artful array of vegetables.

Yield Makes 3 1/2 cups

Number Of Ingredients 10

4 medium cucumbers, peeled
Coarse salt
2 cups plain whole-milk yogurt (16 ounces), preferably Greek
6 ounces feta cheese, preferably French, crumbled (1 cup)
1/2 cup finely chopped fresh mint, plus 1 sprig for garnish
1/2 cup heavy cream
5 tablespoons fresh lemon juice (about 2 lemons)
Freshly ground pepper
Napa cabbage leaves, for lining bowl (optional)
Crudites, for serving

Steps:

  • Halve cucumbers, and scoop out seeds using a melon baller or small spoon. Grate cucumbers on the large holes of a box grater. Transfer the grated cucumbers to a colander set over a bowl or in the sink. Stir in 2 teaspoons salt, and let the cucumber mixture stand 15 minutes to drain.
  • Rinse cucumbers; shake out excess liquid. Wrap in a clean kitchen towel; squeeze out as much liquid as possible.
  • Stir together cucumbers, yogurt, feta, chopped mint, cream, and lemon juice. Season with salt and pepper. If desired, transfer dip to a bowl lined with cabbage leaves. Garnish dip with mint sprig; serve with crudites.

Yield 4-6 1 1/2 cups

Number Of Ingredients 11

2 bunches fresh parsley
10 leaves fresh mint leaves
1/2 of a cucumber, seeded and cut into 1" chunks
1 - 2 large garlic cloves, skin removed
1 large bulb spring onion, white part only
1 cup walnuts
5 oz package of light feta cheese or tofu
1 - 2 tbsp olive oil
1 tbsp linseed oil (optional)
1 lime, juiced
Pepper to taste

Steps:

  • 1. Wash parsley while keeping it in a bunch. Chop off the stems just under the last leaves. 2. Wash mint and remove leaves from stems. Throw these two ingredients into a salad spinner and spin thoroughly. 3. Put the parsley, mint, cucumber, garlic and onion into a food processor. Process for 1 minute, scraping down the sides every so often. Check to see if liquid is released into the bottom of the food processor. If it is, drain this away. 4. Add the walnuts and feta (or tofu) to the above mixture and process. 5. Add the juice from half of the lime. Process. 6. Now, with the processor going, slowly pour in the oils, scraping down the sides in between each tbsp. You're looking for the consistency of a fairly thick dip. So, you might decide not to put all the oil in it. 7. Add pepper and more lime to taste. Serve with crispy veggie sticks and whole grain crackers. Voila!

1 1/2 cups feta cheese, crumbles plain or 1 1/2 cups herbed feta cheese, with mediterranean herbs
1/2 cup whole milk
1/2 cup toasted walnuts
12 sprigs oregano leaves, stripped
1 teaspoon coarse black pepper
2 (10 ounce) bags store-bought pita chips
1 roasted red pepper
kalamata olive
24 slices seedless cucumber, sliced thinly on the bias

Steps:

  • Combine the first five ingredients in the food processor and process until smooth.
  • Serve with store-bought pita chips and sliced cucumber garnished with chopped roasted red pepper and Kalamata olives.

1 cup plain Greek yogurt
1/2 cup light sour cream
1/2 cup crumbled feta cheese
1/4 cup finely chopped red onion
1 tablespoon lemon juice
1/2 teaspoon salt
2 cups coarsely shredded English cucumbers
pomegranate seeds and fresh mint leaves (to garnish)

Steps:

  • In a medium bowl, combine yogurt, sour cream, feta cheese, onion, lemon juice and salt. Chill, covered, for 2 to 8 hours.
  • Before serving, place shredded cucumber in a fine-mesh sieve. Use the back of a large spoon or a rubber spatula to press on the cucumber to remove excess liquid. Stir cucumber into yogurt mixture.
  • Garnish dip with pomegranate seeds and mint, snipped if desired.
