Barbecue Banana Peel Burger image

Banana bread? Check. But have you thought of making something with the peels which usually end up in the bin?

1 Banana Peel (approx. 62g)
1 Tbsp Olive Oil
1/2 Tsp Paprika Powder
3/4 Tsp Mustard Sauce
1/4 Tsp Cumin Powder
1/4 Tsp Onion Powder
1/4 Tsp Red Chili Powder (Optional)
Pinch of Salt
1.5 Tbsp Barbecue Sauce
1 Banana Peel (approx. 62g)

1/4 Cup Purple Cabbage
1/4 Cup Carrot
1/4 Cup Green Bell Pepper
1/4 Cup Mayonnaise
1/4 Tsp Salt

1.5 Tbsp Barbecue Sauce
1/4 Cup Purple Cabbage
1/4 Cup Carrot
1/4 Cup Green Bell Pepper
1/4 Cup Mayonnaise
1/4 Tsp Salt
1/4 Tsp Black Pepper
2 Tbsp Mayonnaise
4 Garlic Cloves
2 Chipotle Peppers or Dried Red Chilies (add little bit of the water used for soaking chilies)
2 Tbsp Cream
1/4 Tsp Paprika powder
1/8 Tsp Cumin Powder
1/4 Tsp Dried Oregano
1 Lemon Juice
Salt to Taste
1/4 Tsp Black Pepper

Steps:

  • Julienne the carrot, cabbage and bell pepper and mix into mayonnaise, adding in the necessary seasonings. Keep in the refrigerator.
  • Wash the banana and pat the peel dry.
  • Take a spoon and scrape out the white part on the inside of the banana.
  • Now using a fork, shred the peels until they look like long strands of noodles!
  • Add in the ingredients for the banana peel, excluding the salt and barbecue sauce to marinate the peel and mix well.
  • In a pan, add some olive oil and put in the peel which should be cooked for about 1:30 minutes after which you add in the barbecue sauce and salt to taste.
  • The peel should be cooked perfectly in about 2:30- 2:45 minutes and then remove from the gas. Cooking it for too long will make the peel mushy so remove when you feel its done, you could taste in between!
  • For the chipotle crema, add all ingredients into a blender and blend to form a sauce.
  • Take a burger bun, add in the chipotle sauce, some lettuce, banana peel and the veggie slaw. Enjoy!
