Things don't get much easier than preparing this pleasantly dressed fruit salad from Linda Stateler of Ottumwa, Iowa. Crunchy apples and nuts contrast nicely with juicy grapes and chewy raisins.

1 large red apple, chopped
1/2 cup halved seedless red grapes
1/2 cup whipped topping
1/4 cup raisins
1/4 cup mayonnaise
3 tablespoons coarsely chopped walnuts

  • In a large bowl, combine all the ingredients. Chill until serving.

A delicious and refreshing summertime salad! A lime Jell-o salad, made creamy by lemon pudding. Can use one can of lemon pudding instead of the prepared lemon instant pudding. Posted in response to a request. Servings and times are estimates.

1 (6 ounce) box lime Jell-O gelatin (or 2 3-oz boxes)
2 cups boiling water
1 1/4 cups cold water
1 (3 ounce) box instant lemon pudding
2 cups milk
2 cups diced apples, unpeeled for color
1/2 cup chopped walnuts

Steps:

  • Dissolve lime Jell-O in the 2 cups boiling water.
  • Stir in the 1 1/4 cups cold water; Chill until almost set; 1 to 1 1/2 hours.
  • In large bowl, prepare the lemon pudding with the milk, according to package directions; Let set in refrigerator for 5 minutes.
  • Combine the prepared pudding and the partially set Jell-O and blend; Beat with electric mixer on medium speed for 2 minutes.
  • Fold in the diced apples and walnuts; Pour into a 9x13-inch glass baking dish or large serving bowl or mold; Chill until set.
  • Serve as is, or with a dollop of Cool Whip or mayonnaise on top of each serving.

This Waldorf salad is different; it has pears in it. This is new to me and the dish is delish. It's more of a dessert than a sandwich spread. These are the salads I love to snack on.

Number Of Ingredients 10

3 large apples, unpeeled and cut into large chunks (Red Delicious works well)
3 large firm ripe pears, peeled and cut into large chunks (Bartlett is good)
1 tablespoon lemon juice
4 medium celery ribs, cut crosswise into thin slices
1/3 cup whipping cream
1/3 cup mayonnaise
1/2 teaspoon salt
3 medium bananas, cut into thin slices
lettuce leaf, for serving
1 cup walnuts, toasted and coarsely chopped

Steps:

  • In a large bowl, toss apples and pears with lemon juice. Add celery, cream, mayo, and salt; toss to coat.
  • If not serving right away, cover and refrigerate up to 6 hours.
  • To serve, gently stir bananas into fruit mixture. Arrange lettuce leaves on a large platter or line a pretty bowl. Spoon salad onto lettuce and sprinkle with nuts.
  • If desired, place one lettuce leaf on each individual plate and spoon salad onto lettuce leaf and garnish with nuts.

4 cups packed finely chopped raw kale (MUST use lacinato kale also known as dinosaur kale(it's long, dark green, with a pebbly texture)
1 large red apple, chopped (like Honeycrisp)
1 cup thinly sliced celery (if you choose to use it then cut down on the amount of apple you use) (optional)
1/4 cup walnuts, toasted and chopped (toast walnuts in a 350 degree oven for 6-8 minutes(and watch them carefully(they go from done to bur)
2 tablespoons raisins
2 tablespoons dried cranberries
1/2 chopped honeycrisp apple
1/4 cup walnuts, toasted and chopped (toast walnuts in a 350 degree oven for 6-8 minutes-and watch them carefully)
2 tablespoons raisins
2 tablespoons Dijon mustard
1 tablespoon red wine vinegar
2 tablespoons fresh lemon juice
1/8 teaspoon sea salt

Steps:

  • Salad:.
  • Mix all the salad ingredients together.
  • Dressing:.
  • Put the 1/2 cup chopped apple in a blender along with remaining 1/4 cup walnuts, remaining 2 tablespoons raisins, mustard, lemon juice, vinegar and salt. Purée until well combined and slightly thick, adding water if needed to thin. Pour dressing over kale salad and toss to combin.

4t Orange Juice

Steps:

  • Rip/cut the kale into bite-sized pieces and place in a large bowl. Add the celery, apples, raisins and walnuts. In a small bowl, combine and whisk the dressing ingredients; increase quantities to taste. Pour over salad, and toss to distribute. Refrigerate until ready to eat.

Pour in dressing and mix well. 2. Line salad plates with lettuce leaves adn spoon salad onto lettuce. Sprinkle with walnuts.
