5 lb sierra gold, red or russett potatoes, peeled and diced
1 1/2 c chicken broth, low salt (can use water or half water, half broth)
1 c butter, cut into chunks
1 Tbsp salt
1 1/4 Tbsp garlic powder
3 1/4 tsp ground black pepper
1 1/3 c milk, slightly warmed
2 Tbsp sour cream

Steps:

  • 1. Place the potatoes, water, chicken broth and butter into a 4-5 quart slow cooker. Season with salt, garlic powder, and pepper. Cover, and cook High for 4 - 4 1/2 hours until potatoes are fork tender.
  • 2. Do not remove the excess water from slow cooker. This adds to the creamy texture. Mash potatoes with a masher or electric beater, adding the desired amount of warm milk and the sour cream to achieve a creamy consistency.
  • 3. May serve immediately or Keep warm on low until serving up to 2 hours. Just keep the lid on it. Stir before serving.

5-6 large potatoes, peeled and cut into 1 inch cubes
1/2 large onion, finely diced
6 oz velveeta cheese, cubed
1 Tbsp butter, sliced
1 can(s) cream of chicken soup
1 c chicken broth
3/4 c sour cream
1/4 tsp garlic powder
1/4 tsp seasoned salt
1/8 tsp pepper

Steps:

  • 1. Spray crock pot with cooking spray. Put potatoes, onion, cheese, and butter in crock pot.
  • 2. In a small bowl mix soup, broth, sour cream and seasonings. Pour over potatoes.
  • 3. Cover and cook on LOW for 6-8 hours or until potatoes are tender. After an hour of cooking (or when cheese is melted) lift lid and stir thoroughly.

7 cups cubed red potatoes, uncooked
8 ounces small curd cottage cheese
1/2 cup sour cream
1/2 cup Velveeta cheese, cubed
1 tablespoon dried onion flakes
2 garlic cloves, minced
1/2 teaspoon salt
paprika, for garnish
minced chives, for garnish

Steps:

  • Place cubed potatoes in crock pot.
  • In a food processor or blender, puree the cottage cheese and sour cream until smooth.
  • Combine Velveeta, onion, garlic and salt with cottage cheese/sour cream blend, mix well.
  • Pour over potatoes and mix well.
  • Cover and cook on low for 5-6 hours or until potatoes are tender.
  • Stir before serving and garnish with paprika and chives.

5 lb yukon gold potatoes
3/4 c butter
1 pkg cream cheese, softened
1/2 c half & half
1/2 tsp lawry's seasoned salt
1/2 tsp fresh ground black pepper

Steps:

  • 1. Peel and cut potatoes into like sized pieces. Place in large pot of boiling water .
  • 2. Cook until potatoes allow a fork to slide into, but are still firm enough to hold their shape. (Approx. 20-30 min. depending on size of pieces.)
  • 3. Drain potatoes, place back into pan. Use a wire potato masher, not a mixer! Mash potatoes over low heat until they release all their steam. Do not add other ingredients until this has happened.
  • 4. After some serious mashing, add butter and cream cheese. Add half and half, starting with 1/2 cup (add a little more if needed).
  • 5. Mash 'em up. I like mine with little chucks of potato. Add seasoning salt and pepper.
  • 6. You can place potatoes in a casserole dish and warm in oven & dot with more butter before serving, or refrigerate them over night. Remove from 'fridge a few hours before meal time, place in slow cooker / crock pot to reheat. Add more butter to serve!

2 lbs potatoes (about 6 medium)
1 cup water
1/2 teaspoon cream of tartar
1/4 teaspoon pepper
3 tablespoons butter
1 small onion, thinly sliced
10 ounces cream of mushroom soup
1/4 cup flour
1 teaspoon salt
4 slices American cheese

Steps:

  • Peel and thinly slice potatoes and place in a medium mixing bowl.
  • In a Pyrex measuring cup, mix together water and cream of tartar. Pour mixture over potatoes; drain but don't rinse.
  • The cream of tartar keeps the potatoes from turning brown during cooking. You can use this method for any crock pot recipe that calls for potatoes.
  • Place half of potatoes in bottom of crock pot with half of the flour and sliced onion. Sprinkle half of the flour on top. Salt and pepper to taste.
  • Add remaining potatoes, onion and flour. Dollop butter over top of potatoes.
  • Spoon undiluted soup over top next.
  • Cook on Low for 6 to 8 hours and on High for 3 to 4.
  • Thirty minutes before serving add cheese by breaking it into small pieces; blend it.
  • I have doubled this recipe for my Rival 5 quart slow cooker and it turns out great.
