Coconut Slice Dessert image

This dessert recipe is a variation of Vanilla Slice, a popular custard-like dessert from Australia. Many various fruit versions are easily found now, and this coconut version is a little more cake-like than custard-based, but it's quite easy to prepare and delicious.

1 c self-rising flour
1 pinch salt
3/4 c granulated sugar
1 c desiccated coconut (or unsweeeted shredded coconut)
1/2 c butter, melted
1/2 c milk
2 large eggs, beaten
1 tsp pure vanilla extract
ICING:
1 1/3 c confectioners' sugar
1 Tbsp butter, softened
2 Tbsp boiling water
1 dash(es) red or pink food coloring
1/2 c desiccated coconut (or shredded coconut)

Steps:

  • 1. Preheat oven to 350°F (180°C). Lightly butter a 9-inch square baking dish; set aside.
  • 2. In a bowl, mix together the flour, salt, sugar, coconut and melted butter. Stir in beaten eggs, milk and vanilla.
  • 3. Spread mixture into prepared baking dish, and bake for 25 to 30 minutes. Let cool slightly before icing.
  • 4. Toward the end of the baking time, prepare the icing: In a large mixing bowl, stir together the sugar and butter. Pour in just enough boiling water to make a thick paste. Add enough food coloring to tint the icing a soft pink. (The icing will harden a little if it sits too long, so it's best to frost the dessert while it's still warm as it's easier to spread.)
  • 5. Frost the cooled dessert with the icing, and sprinkle coconut on top.
