1 unbaked 9-inch pie shell
2 cups cooked mashed potatoes
1/2 cup half-and-half
1 tablespoon butter
3/4 cup cream-style cottage cheese
1/2 cup sour cream
2 eggs
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
1/2 cup chopped onion
8 ounces bacon, cooked crisp, drained and crumbled

Steps:

  • Line unbaked, unpricked pastry shell with foil; fill with pie weights or dried beans. Bake at 450° for 5 minutes; remove weights and foil; bake for 5 to 7 minutes longer, until almost done. Remove from oven.
  • Reduce oven to 425°.
  • Combine mashed potatoes, half-and-half and butter, set aside.
  • In a mixing bowl, combine cottage cheese, sour cream, eggs, salt, garlic powder, cayenne pepper and black pepper; beat with electric mixer on high speed until smooth.
  • Add potato mixture; beat 1 minute longer. Stir in shredded cheese, chopped onion and bacon. Pour potato mixture into warm pastry shell.
  • Bake at 425° for 35 to 40 minutes or until golden brown.

1 kg floury potatoes, such as king edward or maris piper
2 tbsp olive oil
1 onion, finely chopped
450g leeks, finely sliced
80g bacon or pancetta, diced
30g butter, plus extra for greasing
250ml milk or single cream
1 medium free-range egg, beaten
Large handful of fresh flatleaf parsley, leaves chopped
Generous pinch of paprika
90g firm cheese, such as gruyère, grated

Steps:

  • Halve or quarter the potatoes so they're all about the same size. Put in a large pan, add cold water to cover, salt well and bring to the boil. Simmer for 20 minutes until tender.
  • Meanwhile, heat the oil in a frying pan over a low heat. Add the onion and leeks and fry for 10 minutes until soft. Add the bacon or pancetta and fry for 3-5 minutes until browned. Season to taste and set aside.
  • Preheat the oven to 190°C/fan 170°C/gas 5. Drain the potatoes well and mash coarsely, mixing in the butter and milk. Season well and add the egg. Stir to combine.
  • Stir in the leek mixture, parsley, paprika and half the cheese, then use to fill a 24cm buttered casserole. Sprinkle over the remaining cheese and bake in the preheated oven for 35-45 minutes until well browned. Serve immediately.

60 butter crackers
1 egg
3 tablespoons unsalted butter, melted
4 russet potatoes, peeled and boiled
1 tablespoon unsalted butter
1 ¼ cups sour cream, divided
½ cup milk
1 ½ teaspoons salt
1 teaspoon pepper
2 cups shredded cheddar cheese
11 strips bacon, cooked and chopped
½ cup green onion, chopped

Steps:

  • Preheat oven to 350°F (180°C).
  • Place butter crackers in a food processor and blend until they are a fine, sandy texture. Transfer to a small mixing bowl.
  • Add egg and melted butter to the crumbled crackers. Stir until crumbs become a clumpy, wet sand texture. Place the cracker mixture in the base of a 9-inch (23-inch) pie dish to create the crust.
  • Use a measuring cup to smooth the surface. Once the surface is smooth, use a fork to prick the base and sides of the crust.
  • Bake for 10 minutes. Remove from oven and let cool for 10 minutes.
  • Mash russet potatoes in a large mixing bowl. Once thoroughly mashed, add butter, ¼ cup(60 gram) sour cream, milk, salt and pepper and mix together with large spoon or spatula.
  • Spread half of the mashed potatoes over the cooled cracker crust, about ¼-inch in thickness.
  • Cover mashed potatoes with a layer of cheddar cheese, making sure to save some for the top.
  • Spread the other half of mashed potatoes over the cheese layer. Sprinkle bacon bits and remaining cheese over the top.
  • Bake for 20 minutes.
  • Serve with sour cream and green onions.

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

1 refrigerated pie crust, softened as directed on box (from 15-oz box)
2 cups water
3 tablespoons butter or 3 tablespoons margarine
1/2 teaspoon salt, if desired
1/2 teaspoon garlic powder
1/8 teaspoon white pepper
2 1/2 cups hungry jack mashed potato flakes
1/2 cup sour cream
1/4 cup bacon bits or 4 slices bacon, cooked, crumbled
1/2 cup thinly sliced green onion (about 8 medium)
1 cup shredded cheddar cheese (4 oz)
2 small tomatoes, thinly sliced
1 tablespoon olive oil
2 tablespoons thinly sliced green onions (2 medium for garnish)

Steps:

  • Heat oven to 450°F
  • Make pie crust as directed on box for One-Crust Baked Shell using 9-inch deep-dish glass pie pan or 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool while making mashed potatoes.
  • Meanwhile, in 3-quart saucepan, mix water, butter, salt, garlic powder and pepper. Heat to boiling. Remove from heat. Stir in potato flakes, 1/2 cup sour cream and the bacon bits.

This pie is supposed to have a French pedigree, but I got it from my all-American Mom and it is our family's favorite. It is wonderful served hot or at room temperature. It is most tasty prepared with real mashed potatoes, but if you need to save time, instant mashed potatoes are just fine.
