This blue cheese dip requires only 3 ingredients: blue cheese, yogurt and cream cheese. Mix together and serve with vegetable crudités and crackers. A great recipe when you're in a rush!

150g (5oz) blue cheese, crumbled
150g (5oz) cream cheese
75ml (5 tbsp) Greek yogurt

Steps:

  • Crumble the blue cheese into a mixing bowl.
  • Beat with a wooden spoon until softened.
  • Add the cream cheese and stir until well incorporated.
  • Stir in the Greek yogurt.
  • Season to taste and serve with vegetable crudites and crackers. Enjoy!

Found in the Williams Sonoma catalog. I wanted to place it here for safe keeping until I get a chance to try it. It sounds very good. Serve with potato chips or cut up veggies. Cook time is the chill time. The prep time is a guess.

4 ounces cream cheese, room temperature
1 cup sour cream
4 ounces blue cheese
2 tablespoons chives, chopped
1/2 teaspoon black pepper

Steps:

  • Beat cream cheese on medium speed of an electric mixer until soft and creamy, about 2 minutes.
  • Reduce speed to low and add the sour cream and beat until well combined.
  • Add the blue cheese and beat until lumps are gone.
  • Stir in chives and pepper.
  • Refrigerate for at least 30 minutes. Will keep for 1 week.

For raw veggies, crackers or apple slices. Sounded so different that I had to post it! I found it in the local newspaper but it is originally from "Very Blueberry" by Jennifer Trainer Thompson. Need 1 hour to chill before serving .

6 ounces blue cheese, crumbled (Maytag or Danish)
1 1/2 cups blueberries (fresh or thawed)
8 ounces cream cheese
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4-1/2 teaspoon hot chili sauce
1/2 cup green onion, green part only, finely sliced
1/2 cup walnuts, chopped

Steps:

  • Place blue cheese and blueberries in the bowl of a food processor fitted with the metal blade and blend until smooth, about 2 minutes.
  • Transfer mixture to a bowl and stir in the remaining ingredients.
  • Cover and refrigerate at least 1 hour or as long as 3 days.
